Perfect Spinach Salad (No, Really) image

This classy spinach salad is a salad to impress! Smoky pecans and a creamy balsamic vinaigrette make the best counterpoint to this green.

2 hard boiled eggs or 1 large crisp tart apple
1/2 cup whole pecans*
1 tablespoon soy sauce (or tamari or coconut aminos)
1 1/2 tablespoons maple syrup or sugar
1 teaspoon smoked paprika
2 pinches kosher salt or flaky sea salt
1 recipe Best Balsamic Vinaigrette
6 cups baby spinach leaves or chopped standard spinach
1 shallot
1/2 cup feta cheese crumbles (optional)

Steps:

  • Make the hard boiled eggs, if using (or make them in advance). Chop them into bite-sized pieces.
  • Add the pecans, soy sauce, maple syrup and smoked paprika to a small non-stick skillet over medium heat. When it just starts to bubble, reduce the heat to low but still slowly bubbling. Simmer 6 to 8 minutes, stirring occasionally. In the last minute when the liquid is mostly evaporated, stir continuously until it is totally cooked out and the nuts start clumping together. Immediately remove from the heat and transfer the pecans to a sheet of parchment paper in a single layer. Sprinkle with 2 pinches kosher salt and allow to cool to room temperature, about 5 minutes.
  • Make the Balsamic Vinaigrette.
  • Thinly slice the shallot. If using apple instead of hard boiled egg, thinly slice the apple.
  • Place the spinach on plates or in bowls. Top with hard boiled eggs or apple slices, smoky pecans, sliced shallot, and feta cheese crumbles.

8 ounces bacon
3/4 cup olive oil
1/4 cup red wine vinegar
Pinch salt and pepper
Pinch salt and pepper
1 clove garlic, minced
1 pound leaf spinach, tough stems removed
8 ounces mushrooms, thinly sliced

Steps:

  • In a medium skillet, cook the bacon over medium-high heat until just crisp. Drain on paper towels and crumble when cool enough to handle. Set aside.
  • In a small bowl, whisk together the oil, vinegar, salt, pepper and garlic.
  • Wash the spinach leaves very well and spin dry. Tear the leaves into small pieces and place in a medium salad bowl. Add the mushrooms and bacon, and toss to combine. Pour 2/3 cup of the dressing over the salad (reserve the rest for another use) and toss again. Serve immediately.

2 large eggs
12 slices crusty peasant bread
2 large garlic cloves, halved
EVOO (extra-virgin olive oil) for liberal drizzling, plus 2 tablespoons
1/2 cup grated Parmigiano-Reggiano cheese
1/4 pound thick-cut pancetta, diced
1/2 pound cremini mushrooms, sliced 1/4 inch thick or quartered
Salt and pepper
1/3 cup Marsala or dry sherry
1/2 pound farm spinach (available in bundles rather than bags in produce section), washed, dried, and chopped
1/2 small red onion, chopped
Juice of 1 lemon
Freshly grated nutmeg

Steps:

  • Preheat the oven to 400°F.
  • Place the eggs in a small pan, cover with water, and bring to a boil. Cover the pan, turn off the heat, and let stand for 10 minutes. Run the eggs under cold water, crack them, and return them to the cold water for a few minutes to loosen the shells, then peel and chop the eggs.
  • While the eggs come to a boil, arrange the bread on a baking sheet and toast in the oven for 8 to 10 minutes until golden. Remove from the oven and rub the toast with cut garlic, drizzle with EVOO, and sprinkle with the cheese. Return to the oven for 1 to 2 minutes to set the cheese into the toast.
  • While the bread toasts, heat a skillet over medium-high heat with the 2 tablespoons of EVOO. Add the pancetta to the hot oil, crisp for 3 minutes or so, then add the mushrooms and cook for 8 to 10 minutes, until tender. Season with salt and pepper and deglaze the pan with the Marsala or sherry.
  • While the mushrooms cook, combine the spinach with red onions and dress with the lemon juice, a liberal drizzle of EVOO, salt, pepper, and nutmeg.
  • To serve, arrange the toasts on a platter and top with the mushrooms, then the spinach, and garnish with the chopped eggs.

Grilled Leg of Lamb-- Spinach and Stilton Salad with Garlic Croutons-- Chilled Melon Soup with Prosciutto image

2 legs lamb, boned
3/4 cup plus 3 tablespoons olive oil, divided
4 garlic cloves, chopped and divided
1 teaspoon each curry powder, dried fine herbs, dried rosemary
1/4 cup pastis or pernod
1 loaf fresh baked bread
1 tomato, cubed
4 cups baby spinach
3 tablespoons Stilton cheese
1/8 cup balsamic vinegar
1/2 cantaloupe
1/2 cup apple juice
1/2 cup each mango, orange, peach
4 basil leaves
3 thin slices prosciutto

Steps:

  • Cut leg of lamb in loin sections then marinate with 1/2 cup olive oil, 3 gloves garlic, curry powder, dried herbs and rosemary. Marinate for 30 minutes or overnight if possible. Then grill the loins for 15 to 20 minutes turning just once. Carefully flambe with pastis.
  • Cut bread into 1-inch cubes and toss with remainder of garlic and 3 tablespoons of olive oil then season with salt and pepper. Toast croutons for about 15 minutes in a preheated 350 degree oven turning 2 to 3 times for even browning. Then toss croutons with spinach, Stilton, tomatoes, remaining olive oil and balsamic vinegar, season with salt and pepper.
  • In a food processor, puree cantaloupe, apple juice, mango, orange and peach. Season with salt and pepper and garnish with basil and prosciutto.

Steps:

  • To prepare salad, combine juice, molasses, olive oil, salt, and pepper in a small bowl, stirring with a whisk. Combine Croutons, juice mixture, spinach, onion, and oranges; toss well to coat. Serve immediately.
  • Preheat oven to 400 degrees.
  • To prepare croutons, combine first 3 ingredients in a small bowl. Place won ton strips and vegetable oil in a large zip-top plastic bag; seal and toss to coat. Open bag. Sprinkle with cumin mixture; seal and toss to coat.
  • Place won ton strips in a single layer on 2 baking sheets. Bake at 400 degrees for 8 minutes or until crisp; turn strips once. Cool.

1 tablespoon white wine vinegar
1 teaspoon honey
3 -4 tablespoons olive oil
1 cup fresh Baby Spinach
1/4 cup crouton
1 hard-boiled egg, peeled, halved, and chopped
2 slices bacon, cut into 1/2 inch strips
1 tablespoon butter
salt and pepper

Steps:

  • In a medium bowl, whisk the honey, mustard and vinegar with a pinch of salt and a few grinds of pepper. Then slowly pour in the olive oil while whisking vigorously. Set dressing aside.
  • In a large saute pan, cook the bacon over medium-low heat until it is cooked through. The bacon should remain pink when cooked and not become crispy browned. Remove from heat.
  • Add the egg, butter and croutons to the pan with the bacon and cook over high heat, stirring often. When the butter is melted and the mixture is heated through, remove from heat.
  • Toss spinach in dressing and gently pour into bowl. Dump hot mixture onto the dressed spinach and serve immediately.

2 tablespoons fresh herbs, chopped (such as chives, parsley, and dill)

Steps:

a 7-inch pita pocket, halved crosswise and separated to form 4 semicircles
2 1/2 ounces (about 1/3 cup) soft milk goat cheese such as Montrachet
1/4 cup walnuts, minced
1 tablespoon white-wine vinegar
2 teaspoons Dijon-style mustard
6 tablespoons olive oil (preferably extra-virgin)
3/4 pound spinach (about 1 bunch), coarse stems discarded and the leaves washed well and spun dry
1 pint cherry tomatoes, quartered

Steps:

  • Make the croutons:
  • Preheat the oven to 350°F. Spread the rough sides of the pita evenly with the goat cheese, season them with salt and pepper, and sprinkle the walnuts evenly over the cheese, pressing them in gently. Cut the pita into 1-inch pieces and bake the croutons, on a baking sheet in the middle of the oven for 15 to 25 minutes, or until they are golden.
  • In a large salad bowl whisk together the vinegar, the mustard, and salt and pepper to taste, add the oil in a stream, whisking, and whisk the dressing until it is emulsified. Add the spinach, the tomatoes, and the croutons, and toss the salad well.
