2 bags fresh spinach (10 oz each)
6 garlic cloves (minced)
1/2 tsp red pepper flakes
2 tbsp olive oil
Salt to taste

Steps:

  • Heat the oil in a large non-stick frying pan over medium-high heat.
  • Add garlic and red pepper flakes and cook for 1 minute.
  • Add spinach leaves and cook, stirring every 10 seconds, until the spinach is completely wilted (approximately 3 minutes).
  • Sprinkle with salt to taste.

2 lbs baby spinach leaves, washed
½ cup heavy cream
2 oz butter (½ stick)
¼ cup grated Parmesan cheese
Kosher salt and freshly ground black pepper, to taste

Steps:

  • In a large, heavy-bottomed pot (such as an enameled Dutch oven ), heat the spinach leaves over medium-high heat. You can add a small amount of water to the pot before adding the spinach, but the leaves will steam in their own liquid as they cook. Stir with a wooden spoon to keep everything moving.
  • As you cook it, the spinach will soften and turn a bright green color while reducing in volume quite dramatically. This might take 5 to 6 minutes or a bit longer.
  • Plunge the cooked spinach leaves into a large bowl of ice water. This will stop the spinach from cooking and lock in that bright green color.
  • Drain the ice water and squeeze the excess water from the spinach. Squeezing by hand, a handful at a time is the best way to do this. You can transfer each squeezed handful directly into the bowl of your food processor since the next step will be puréeing it.
  • Meanwhile, heat the cream over medium heat. Let the cream reduce slightly while you're squeezing the spinach.
  • Purée the spinach in a food processor until it's completely smooth.
  • Return the puréed spinach to the pot and add the butter, cream, and cheese. Cook over medium heat, stirring continuously until it's hot.
  • Season to taste with Kosher salt and a generous amount of freshly ground black pepper. Serve right away.

2 tablespoons good olive oil

Steps:

  • Rinse the spinach well in cold water to make sure it's very clean. Spin it dry in a salad spinner, leaving just a little water clinging to the leaves.
  • In a very large pot or Dutch oven, heat the olive oil and saute the garlic over medium heat for about 1 minute, but not until it's browned. Add all the spinach, the salt, and pepper to the pot, toss it with the garlic and oil, cover the pot, and cook it for 2 minutes. Uncover the pot, turn the heat on high, and cook the spinach for another minute, stirring with a wooden spoon, until all the spinach is wilted. Using a slotted spoon, lift the spinach to a serving bowl and top with the butter, a squeeze of lemon, and a sprinkling of sea or kosher salt. Serve hot.

1 cup spinach, washed and dried
1/2 cup fresh breadcrumb
1/2 cup cold water
1 cup walnuts
1/2 cup olive oil
3 garlic cloves, minced
1 teaspoon lemon juice
extra virgin olive oil, for drizzling
lemon wedge
crusty bread

Steps:

  • Blanch spinach. Drain immediately and squeeze out any excess moisture.
  • Soak breadcrumbs in the cold water, then squeeze out excess moisture. Discard water.
  • Bake walnuts for 5-7 minutes, until they are golden. Chop 2 tbsp of the walnuts and reserve for garnish.
  • Place spinach, breadcrumbs, walnuts, oil, garlic, lemon juice in blender and blend to obtain a smooth paste. Season with salt and pepper.

1kg fresh spinach , or 500g frozen leaf spinach
3 tbsp olive oil
3 tbsp pine nut
2 garlic cloves , finely chopped or crushed

Steps:

  • Wash the spinach thoroughly and cram into a large pan. Pour over a little boiling water, cover tightly and cook for 2-3 mins, until the leaves have wilted.
  • Tip into a colander and drain well. Use the side of a small plate to press the spinach down to extract the last of the water. If using frozen, defrost in the microwave and drain.
  • Meanwhile heat the oil, add the pine nuts and fry until golden. Add the garlic and fry briefly, then stir in the spinach and stir until heated through. Season and serve in a warm side dish.

You can use bagged baby spinach or stemmed and washed bunch spinach for this simple omelet with Mediterranean flavors.

2 ounces baby spinach or stemmed, washed bunch spinach (2 cups, tightly packed)
1 large or 2 small garlic cloves, minced or puréed
Salt and freshly ground pepper
2 eggs
2 to 3 teaspoons low-fat milk
2 teaspoons extra virgin olive oil
2 teaspoons freshly grated Parmesan

Steps:

  • Wash the spinach and wilt in a frying pan over medium-high heat. The water remaining on the spinach leaves after washing will be sufficient. Drain, allow to cool and squeeze out excess water. Chop medium-fine and toss with half the garlic and salt and pepper to taste.
  • Break the eggs into another bowl and beat with a fork or a whisk until they are frothy. Whisk in the remaining garlic, salt and pepper to taste and 2 to 3 teaspoons milk.
  • Heat an 8-inch nonstick omelet pan over medium-high heat. Add 2 teaspoons olive oil. Hold your hand an inch or two above the pan, and when it feels hot, pour the eggs into the middle of the pan, scraping every last bit into the pan with a rubber spatula. Swirl the pan to distribute the eggs evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the omelet with the spatula in your other hand, to let the eggs run underneath during the first few minutes of cooking.
  • As soon as the eggs are set on the bottom, sprinkle the spinach over the middle of the egg pancake and top with the Parmesan, then jerk the pan quickly away from you then back toward you so that the omelet folds over on itself. If you don't like your omelet runny in the middle (I do), jerk the pan again so that the omelet folds over once more. Cook for a minute or two longer. Tilt the pan and roll the omelet out onto a plate.
