Steps:
- Preheat oven to 350 degrees. In a medium saucepan, cook bacon over medium, stirring occasionally, until browned and crisp, 10 minutes. Drain bacon on paper towels. Discard all but 1 tablespoon fat from pan. Add onion to pan, season with salt and pepper, and cook, stirring occasionally, until tender, 8 minutes. Add flour and cook 30 seconds. Add spinach, milk, sour cream, and cream cheese. Cook, stirring, until cream cheese melts, 2 minutes. Stir in bacon and 1/4 cup Parmesan.
- Transfer mixture to a 1 1/2-quart baking dish and top with 1/4 cup Parmesan. Bake until bubbling, 14 minutes. Heat broiler and broil until top browns, 3 minutes. Let sit 5 minutes. Serve dip warm with crostini or pita chips.

- Heat the olive oil in the 2.5-quart saucepan over medium-high heat. Add the rosemary sprigs and fry until fragrant and the leaves are crisp, 1 minute. Using tongs, remove the rosemary and transfer to paper towels to drain. If any leaves are left behind in the oil, remove with a slotted spoon and transfer to the paper towels as well.
- Return the pan with the oil to medium heat. Add the onions and cook, stirring occasionally, until soft and caramelized, 20-25 minutes.
- Add the garlic and cook for 1 minute, until fragrant.
- Stir in the spinach and cook for 2 minutes to evaporate any excess moisture. Add the cream cheese and cook, stirring, until completely melted and incorporated into the onions and spinach.
- Remove the pan from the heat and stir in the sour cream, mayonnaise, lemon zest, salt, pepper, and lemon juice. Let cool to room temperature or cover with plastic wrap and refrigerate for up to 2 days.
- Remove the rosemary leaves from the stems over a cutting board. Crush with your fingers or finely chop with a knife.
- Transfer the dip to a serving dish and smooth the top. Sprinkle with the fried rosemary and serve with pita chips, toasted bread, or crudités.

- Heat oil in a large skillet over medium heat. Add onion, and cook until softened, about 8 minutes. Reduce heat to medium-low, add garlic, and cook, stirring occasionally, until onion and garlic are very soft and golden, about 20 minutes. Add spinach, and cook, tossing often, until wilted, about 4 minutes. Let cool slightly.
- Puree mixture in a food processor until smooth. Add watercress, avocado, yogurt, lemon zest and juice, hot sauce, and salt, and season with pepper. Puree until smooth. Transfer to a bowl, cover, and refrigerate for at least 1 hour (or up to 3 days). Stir the dip, and serve with crudites.

CREAMY DREAMY SPINACH, ONION, AND BACON DIP
From my favorite gal of all time!! Dip may made up to 2 days ahead of time, covered and refrigerated. Let stand 20 minutes before baking as directed. (These are Paula's directions, but I had to bake for a few minutes more, as well as place under the broiler for a few minutes to get the top browned). Prep time does not include thawing time for spinach and onions.

- Melt the butter in a large skillet over medium heat and add the oil. Stir in the onions and sprinkle liberally with salt and pepper. Reduce the heat to medium-low and cook the onions, stirring occasionally, until caramelized, 30 minutes. Remove from the heat and cool.
- Combine the mayonnaise, sour cream, cream cheese and cayenne in a mixing bowl and mix vigorously until smooth. Add the onions and thawed and drained spinach and mix well. Taste and adjust the seasoning with salt and pepper as necessary.

- In a skillet, heat a tablespoon of oil and saute garlic and spinach until spinach is wilted.
- In a bowl, beat the cream cheese until smooth. Add cooked spinach, artichoke hearts, mozzarella, salt, and pepper.
- Peel and slice the onion into ½ inch (1 cm) rings, and detach the rings from each other.
- On a wax paper-lined tray, lay out onion rings and fill each with dip mixture. Place tray in freezer until solid (about one hour).
- Preheat oil in a pot over medium heat to 350˚F (180˚C).
- Place the flour, eggs, and breadcrumbs into three separate bowls.
- Dip a ring into the flour, shaking off excess, then dip it into the egg, the bread crumbs, then back into the eggs, and one last time into the breadcrumbs.
- Repeat with the remaining rings.
- Fry the rings for 5-6 minutes, until deep golden brown.
- Drain on a paper towel.

- I made this in our food processor but you could also hand mix it if you wanted. It will just take a bit more effort. First, combine all your Dip Trinity - cream/neufchâtel cheeses, mayo, and sour cream. Blend until completely creamed together, then incorporate the onion soup mix. Meanwhile, heat up a tablespoon of oil in a skilled and let your onions brown up and caramelize on low heat for about 20 minutes. When you have about 10 minutes to go, fry up your bacon in another skillet. You want it crispy and crunchable, not soggy, but you also don't want to burn it. Add the red pepper flakes, lemon, and as much black pepper to the creamy mixture and give it a few pulses. You can add more later to your tasting. Once that's all pulsed (or hand mixed) together and there are no lumps, throw in your caramelized onions, bacon (just crumble it by hand while you drop it in), spinach, and cheese. You don't want to totally liquefy this all together, you want some texture and chunks. After you've lightly pulsed it together, dip your favorite cracker or bread in there for a taste test, if you want more pepper, or lemon, onion soup mix, go for it. Serve alongside your favorite chips or crackers, topped with a bit of shredded cheese and a sprinkle of paprika.

- Heat nonstick or cast iron pan over medium-high heat for 1 minute.
- Spray pan with cooking spray and heat for another minute.
- Add onion and saute until carmelized, 5-10 minutes, stirring often.
- Add garlic and saute 1 minute.
- Add spinach and cook for 2 minutes or until wilted.
- Remove from heat and let cool for 2-3 minutes.
- Preheat oven to 350°F
- Put artichokes and spinach-onion mixture in a food processor fitted with a standard cutting blade.
- Chop for 1 minute.
- Add cream cheese, sour cream, and yogurt and whirl for 2 minutes.
- Add Parmesan, chives, pepper, Cajun seasoning, and salt.
- Chop for another 2-3 minutes or until vegetables are finely minced and entire mixture is well-blended.
- Place dip in 4 qt ceramic baking dish.
- Bake for 20 minutes or until top is lightly browned.

The yogurt really works well in this recipe, but it does add a different texture to similar recipes that have sour cream and cream cheese. But I seriously doubt anyone is going to know any difference as this turned out really great. Prep time includes thawing time, which I did halfway, hence the cooking of the spinach and the chill time.

- Cook frozen spinach until done, about 5 minutes. Let cool completely.
- Melt butter or margarine in a frying pan. Add chopped onion and saute on medium low for about 5-7 minutes. Add the 1/4 tsp salt while sauteing. (This can be done while spinach is cooking. This way you will save cooking time.) Cool completely.
- Combine both to a medium bowl and add yogurt, mayonnaise, basil parsley, and garlic powder. Combine well. At this point add salt and pepper for taste. (you don't need to add too much salt as salt was added to the onions. I used another 1/4 tsp of salt at this point).
- Let chill for at least 30 minutes before serving in order to let the flavours blend.

- Thaw and squeeze dry a 10oz package of spinach.
- Shred and squeeze dry two onions.
- Soften the three 8oz packages of cream cheese by bringing up to room temperature.
- Shred the parmesan and asiago cheeses.
- Combine all of the above ingredients with one half cup of mayonnaise.
- Bake at 350 degrees for 20-30 minutes, until lightly browned on top and bubbly in the middle.
