MUSHROOM-SPINACH MATZOH KUGEL IN MUFFIN PANS



Mushroom-Spinach Matzoh Kugel in Muffin Pans image

Individual kugels are baked in muffin tins for easy serving on a buffet. This can be made vegetarian by substituting vegetable broth for the chicken. I started making these several years ago to bring to a Passover seder with friends and family, and have improved on the recipe over the years. All of the slicing and chopping can be done in the food processor, and the recipe goes together fast. Can be made ahead and reheated. I've never tried freezing them, but that would probably work, too.

1/2 cup olive oil
1 lb button mushroom, sliced thin in food processor
3 celery ribs, chopped
1 medium onion, chopped
3/4 cup water
3 large eggs
2 (10 1/2 ounce) cans condensed chicken broth or 2 (10 1/2 ounce) cans vegetable broth, undiluted
7 matzohs, broken by hand into small pieces
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 pinch dried thyme
2 (10 ounce) boxes frozen chopped spinach, thawed and drained

Steps:

  • Preheat oven to 375°F Lightly grease or spray muffin pans for 24 regular-size muffins.
  • Heat olive oil in wide skillet over medium-high to high heat. Saute mushrooms, celery and onion until liquid from vegetables renders and then evaporates so that mushrooms brown slightly, about 10 minutes. Stir the water into the vegetables in the pan to release any browned bits. Remove from heat and set aside.
  • In a large mixing bowl, lightly beat eggs with chicken broth. Stir in matzoh pieces and seasonings, then stir in spinach and mix well. Add mushroom mixture and stir well to combine.
  • Spoon into prepared muffin pans, filling level with top of cups.
  • Bake 25 minutes, till golden brown. Run a knife around the sides of each kugel to loosen, remove from pans and serve immediately or cool on wire racks, wrap and store for reheating later.

KALE, SPINACH, AND MUSHROOM KUGEL

3 tablespoons olive oil
2 ounces fine egg noodles
3 ounces chopped onion (about 3/4 cup chopped or 1 small onion)
3 ounces kale (stems removed and shredded or cut into thin strips)
3 ounces fresh spinach (chopped)
8 ounces mushrooms (sliced)
1 egg
1/4 cup ricotta cheese
1/4 cup sour cream
1 cup milk
1/2 teaspoon dried dill
1 teaspoon salt
Freshly ground pepper
1/2 cup panko ( (Japanese-style crunchy breadcrumbs))
1 tablespoon (softened unsalted butter)
1 tablespoon softened goat cheese (about 3/8 ounce)

Steps:

  • Oil a small pan (6-8 inch square) with 2-inch high sides with 1 tablespoon of the oil. Add the noodles in an even layer and set aside.
  • Preheat the oven to 350 degrees F.
  • Heat the second tablespoon of oil in a large pan. Sauté the chopped onions on medium-low heat for 3-4 minutes until they begin to turn transparent/golden. Add the kale and continue to sauté, stirring occasionally for about 6 more minutes. Add the chopped spinach for an additional 2 minutes until it is thoroughly wilted and mixed into the kale and onions. Spread the mixture on top of the noodles in the casserole dish and set aside.
  • Add the third tablespoon of oil to the pan, raise the heat to high and cook the sliced mushrooms for 3-4 minutes, turning them to cook on both sides until they are browned. Add them as the third layer of the casserole.
  • In a bowl, mix the egg, ricotta and sour cream. Add the milk, dill, salt, and pepper, stir the mixture and pour it over the casserole. Poke a few holes with a spatula or fork to make sure that the liquid can get through to the noodles. Let the casserole sit for 5 minutes.
  • While the casserole is resting, mix the panko, butter and goat cheese. After the resting period, spread the topping over the casserole.
  • Bake the kugel for 45 minutes, until the topping is slightly browned. Let it rest for a few minutes before cutting pieces with a knife or spatula.

MATZO KUGEL

My grandmother was known for being an amazing lady. She was also known for her Matzo Kugel and her Noodle Kugel. No matter the occasion, Passover, Rosh HaShana, Yom Kippur, or even Thanksgiving, this is what she was always asked to bring. It does not need to be a Jewish Holiday to enjoy this savory stuffing like casserole--nor do you need to be Jewish. This is so delicious year round and very, very easy.

1 cup onion, chopped
1 cup celery, finely diced
6 tablespoons chicken fat (or margarine or butter)
6 matzos, broken in little pieces
1 teaspoon salt
1/4 teaspoon pepper

2 eggs, slightly beaten
1 (10 ounce) can condensed chicken broth
1 1/4 cups hot water

Steps:

  • Sauté onions and celery in fat until onions are tender. Add to broken Matzo's.
  • Combine remaining ingredients and add to matzo mixture. It will be a bit runny.
  • Pour into well greased 1 1/2-quart baking dish and bake at 350°F for 30-35 minutes until firm.

2 lbs frozen chopped spinach, thawed and drained
3/4 cup margarine
2 cups onions, chopped
1 cup celery, chopped
1 cup mushroom, sliced

1/2 teaspoon pepper
olive oil (cooking spray)

Steps:

  • Preheat oven to 350 degrees.

This may not be a traditional kugel, but it's absolutely delicious. I baked this in a 9x13 dish and enjoyed a big slice. The mushrooms add a meaty texture. Spinach and carrots add a freshness to the casserole. Next time I may make these into appetizer-size balls as Helaine suggests. I bet they'd be tasty that way too.

1 lb mushroom, washed and coarsely chopped
4 Tbsp oil, olive preferrably
40 oz spinach, frozen chopped, defrosted and squeezed/drained well
8 carrots, peeled and grated
8 eggs, lightly beaten
1 tsp salt, or to taste
1 1/4 Tbsp dry chicken soup mix
1 1/2 tsp pepper, or to taste
1 c cracker or matzo meal

Steps:

  • 1. Preheat oven to 350.
  • 2. Grease or spray with Pam baking pan (suitable for cutting kugel into squares when done).
  • 3. Saute onions and mushrooms in skillet.
  • 4. Pour into a very large bowl and add all other ingredients mixing well after each.
  • 5. Spread mixture into pan and bake about 45 minutes.
  • 6. Can be frozen or made days ahead, kept in fridge and reheated. Can add more bread crumbs/enought to form into balls and either baked or stuffed into lightly sauteed mushrooms for delicious, savory appetizers.

4 matzo sheets
3 eggs, beaten
½ teaspoon salt
½ cup sugar
¼ cup vegetable oil
1 teaspoon ground cinnamon, or to taste
2 apples - peeled, cored and cubed
½ cup raisins

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking dish. Break the matzo sheets into pieces, and soak in a bowl of water until soft. Drain in a colander, mashing to squeeze the water out.
  • In a separate bowl, mix together the eggs, salt, sugar, oil and cinnamon. Add the soaked matzo, and mix well. Fold in the apples and raisins. Spoon into the prepared baking dish, and spread evenly.
  • Bake for 45 minutes in the preheated oven, until nicely browned and apples are tender.

6 eggs, beaten
8 ounces butter, melted
1 (16 ounce) container sour cream
2 (1 ounce) envelopes dry onion soup mix
1 teaspoon black pepper
4 (10 ounce) boxes frozen chopped spinach, thawed and drained

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Fill a large pot with lightly salted water; bring to a rolling boil over high heat. Stir in the egg noodles, and return to a boil. Cook the pasta until cooked through, but is still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
  • Combine the eggs, melted butter, sour cream, soup mix, and pepper in a large bowl. Stir in the cooked noodles, and drained spinach. Spoon into prepared baking dish.

1 cup hot water
1/4 cup vegetable oil
3 cups diced onions
2/3 cup grated carrot

1 lb baby portabella mushrooms or 1 lb cremini mushroom

1 (8 ounce) package sliced fresh mushrooms
2 cups coarsely grated carrots
2 medium onions, diced
2 stalks celery, diced
1 medium red bell pepper, diced
1 (10 ounce) package frozen chopped spinach, thawed and drained
6 ounces matzo farfel
½ cup toasted pine nuts
1 ½ teaspoons salt
1 pinch freshly ground black pepper
5 large eggs, beaten
1 pinch ground paprika

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Heat oil in a large, nonstick skillet over medium heat. Add mushrooms, carrots, onions, celery, and bell pepper; saute until softened, 3 to 5 minutes. Stir in spinach.
  • Place farfel in a strainer and pour about 4 cups boiling water over it to moisten. Add farfel to the vegetables along with pine nuts, salt, and pepper. Remove from the heat and let cool, about 10 minutes.
