1 (16 ounce) jar salsa
1 (10 ounce) package frozen chopped spinach, thawed and drained
2 cups shredded Monterey Jack cheese
1 (8 ounce) package cream cheese, diced and softened
1 cup evaporated milk
1 (2.25 ounce) can chopped black olives, drained
1 tablespoon red wine vinegar
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium baking dish, mix together salsa, chopped spinach, Monterey Jack cheese, cream cheese, evaporated milk, black olives, red wine vinegar, salt and pepper.
  • Bake mixture in the preheated oven 12 to 15 minutes, or until bubbly.

This spinach dip is a huge hit at parties! It has become one of our favorite appetizers to serve guests when we entertain. Prepare ahead, but serve warm from the oven with fresh bread, crackers, chips, pita, etc.

1 (14 ounce) can artichoke hearts, drained and chopped
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 cup mayonnaise
1 cup grated Parmesan cheese
2 ½ cups shredded Monterey Jack cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 1 quart baking dish.
  • In a medium bowl, mix together artichoke hearts, spinach, mayonnaise, Parmesan cheese and 2 cups Monterey Jack cheese. Transfer mixture to the prepared baking dish, and sprinkle with remaining 1/2 cup of Monterey Jack cheese.
  • Bake in the center of the preheated oven until the cheese is melted, about 15 minutes.

We love this warm, creamy, cheesy dip year round. Always the first to go at our football parties. You can adjust the level of heat by adjusting the amount of jalapeno you use. We're fine at 2 tablespoons. But, if you're daring and like it devilishly hot, you may go up to 4 tablespoons, but have some Margaritas ready!

1 cup chopped onion
2 tablespoons cooking oil
3 medium tomatoes, peeled, seeded and chopped- divided
2-4 tablespoons fresh jalapeno peppers, chopped
1 10 oz. package frozen spinach, thawed and squeezed very dry
2 1/2 cups monterey jack cheese, divided
8 oz. cream cheese cut into 1/2 inch cubes
1 cup half and half
1/2 cup sliced black olives
1 tablespoon red wine vinegar
1/4 tsp. each salt & pepper
tortilla chips or assorted fresh vegetables

Steps:

  • 1. Preheat oven to 400 degrees. In a 10" skillet, cook onion in oil until tender. Add 2/3 of the chopped tomatoes and all of the jalapeno peppers; cook 2 minutes more. Transfer mixture to large bowl. Stir in spinach, 2 cups Monterey Jack cheese, cream cheese, half and half, olives, vinegar, salt and pepper. Mix well.
  • 2. Spoon into a 1 1/2-2 qt. baking dish. Bake about 35 minutes or until hot and bubbly. Top with remaining Monterey Jack cheese, chopped fresh tomato and freshly chopped cilantro or parsley.
  • 3. Serve with tortilla chips and/or fresh veggies to dip. (I like to serve a platter with red, yellow, orange and green peppers along with tortilla chips.)

SPINACH MONTEREY JACK DIP

We love this dip and make it all of the time because it is so simple and tastes great. I can usually have this from refrigerator to table within 10 minutes. You might want to start with less garlic and adjust according to your taste. We love garlic.

1 (10 ounce) package frozen chopped spinach
8 ounces cream cheese
8 ounces monterey jack pepper cheese, shredded
2 -3 tablespoons minced garlic

Steps:

  • Prepare spinach according to package directions. I usually cook it in the microwave about 3-4 minutes. Drain or blot with paper towels to absorb some of the excess water.
  • Add monterey jack cheese, cream cheese and garlic. Continue cooking until cheese is melted.
  • Serve with Fritos Scoops.
