SPINACH IN CREAMY FETA SAUCE

Greek flavor with a Southern twist. I love Southern-style creamed spinach, but I also love the combination of spinach and feta found in Greek cookery. This recipe pulls it all together. You could really dress this up by topping with buttered breadcrumbs and baking until the top is crunchy.

Number Of Ingredients 6

10 ounces frozen spinach, thawed and squeezed dry
2 tablespoons butter
2 tablespoons flour
1 1/4 cups milk, warmed (not skim)
1/4-1/2 cup feta, crumbled (1/4 cup gives a nice subtle flavor)
salt and pepper

Steps:

  • Have prepared spinach ready next to stove. Melt the butter in a wide saucepan. Whisk in the flour and cook, stirring constantly (don't let it brown).
  • Add warmed milk slowly, whisking at the same time. Boil until sauce thickens, then lower heat. Continue whisking and add feta, cook 2-3 minutes over low heat.
  • Stir in spinach until thoroughly coated with sauce and heated through. Season with salt and pepper, to taste. Serve immediately.

1 cup water
2 teaspoons butter
3 cups flour
1 teaspoon sugar
2 teaspoons instant minced onion
1 teaspoon salt
1 1/4 teaspoons instant yeast
1 cup crumbled feta
1 cup chopped fresh spinach leaves

Steps:

  • Place all ingredients into the bread machine bowl except the yeast, cheese and spinach.
  • Place yeast in yeast hopper, and with 10 minutes left in the last kneading cycle add spinach and cheese.
  • Walk away!

1 tablespoon olive oil or avocado oil
1 pound fresh spinach, trimmed
1/2 cup chopped shallots
1 tablespoon minced garlic
1/2 teaspoon salt
1/4 teaspoon pepper
1 package (17.3 ounces) frozen puff pastry, thawed
1/2 cup crumbled feta cheese
1/2 cup whole-milk ricotta cheese
1 large egg, beaten
1 tablespoon everything seasoning blend

Steps:

  • Preheat oven to 400°. In a large skillet, heat oil over medium-high heat. Add spinach, shallots, and garlic; cook and stir until wilted, 2-3 minutes. Remove from the heat; strain off any excess water. Stir in salt and pepper, set aside to cool to room temperature., On a lightly floured surface, unfold puff pastry. Cut each sheet into 4 squares. In a small bowl, combine feta and ricotta; stir in spinach mixture. Spoon cheese mixture diagonally over half of each square to within 1/2 in. of edges. Brush pastry edges with egg. Fold one corner over filling to the opposite corner, forming a triangle; press edges with a fork to seal. Place on parchment-lined baking sheets. Brush remaining egg over pastries; sprinkle with seasoning blend. Bake until golden brown, 25-30 minutes.

This is great for breakfast, lunch, and dinner, either hot, warm, or cold! This reminds me of spanakopita, a Greek spinach pastry.

1 tablespoon butter
1 pound fresh spinach
12 eggs
salt and freshly ground black pepper to taste
1 pinch cayenne pepper
6 slices bacon, chopped
½ onion, diced
1 pinch salt
3 ounces crumbled feta cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat butter in a large oven-safe skillet over high heat. Toss spinach in hot butter until wilted, about 30 seconds. Drain spinach well and squeeze it as dry as possible. Transfer to a cutting board and chop.
  • Beat eggs in a bowl with salt, black pepper, and cayenne pepper until thoroughly combined.
  • Place bacon in the same skillet used to cook spinach and cook over medium-high heat, stirring occasionally, until bacon has rendered its fat and is almost crisp, 5 to 8 minutes. Use a paper towel held in a tongs to remove excess bacon grease. Reduce heat to medium; saute onion with bacon and a pinch of salt until onion is translucent, about 5 more minutes.
  • Saute chopped spinach with bacon and onion until spinach is hot; pour in eggs. Use a wooden spoon to distribute spinach evenly throughout the eggs. Sprinkle feta cheese over mixture.
  • Bake in the preheated oven until eggs are set, 10 to 15 minutes. Top may still be a little wet.
  • Turn on oven's broiler. Broil pie until top is lightly golden brown, 2 to 3 minutes.
