1 cup chicken broth
1 package (6 ounces) fresh baby spinach, chopped
1/2 teaspoon onion powder
1/8 teaspoon pepper
4 teaspoons all-purpose flour
1 can (5 ounces) evaporated milk
1 cup shredded cheddar cheese

Steps:

  • In a small saucepan, combine the broth, spinach, onion powder and pepper. Bring to a boil. Combine flour and milk until smooth; gradually add to soup. Return to a boil. Reduce heat; cook and stir for 2 minutes or until thickened. Stir in cheese until melted.

1/2 pound bacon
1/2 white onion, diced
4 russet potatoes, chopped
4 cups heavy cream
Salt and pepper
2 cups grated cheddar cheese
1 teaspoon all-purpose flour
3 large rolls, split
Wilted Spinach Salad, recipe follows
5 slices bacon
3 tablespoons red wine vinegar
1 tablespoon sugar
1 bunch fresh spinach, washed, stems removed
1 tomato, chopped

Steps:

  • In a large pot, cook the bacon until it is browned and crispy. Remove the bacon strips and crumble, leaving the drippings in the pot.
  • Cook the onion and potatoes in the bacon drippings until they are tender, approximately 15 minutes. Stir in the cream, salt, and pepper. Dredge the cheese in flour and slowly add the cheese to the pot until it is melted. Add the crumbled bacon to the pot and stir everything together until it reaches your desired consistency.
  • Serve in a hollowed out bread roll.
  • In a medium sized pan, cook the bacon until it is browned and crispy. Remove the bacon strips from the pan, leaving only the drippings. Slowly add the vinegar to the pan, whisking constantly. Popeye's favorite soup! Good hot or cold. Soup also freezes well. Soup should not be pureed or frozen with bacon. Reserve bacon until serving time so it will remain crisp. It is equally as good to serve this soup without pureeing, just add a splash of dry vermouth and lemon juice to each portion just before serving.

6 tablespoons margarine
2 cups chopped onion
1 cup all-purpose flour
12 cups chicken broth
4 cups milk
8 ounces blue cheese, crumbled
2 (10 ounce) packages frozen chopped spinach
1 cup heavy cream
salt to taste
ground cayenne pepper to taste
1 pound bacon

Steps:

  • In a large pot over medium heat, combine the butter or margarine and the onions. Saute for about 3 minutes. Add flour and stir well until mixed. Add broth, raise heat to high and bring to a boil. Whisk mixture to keep flour from clumping.
  • Add milk, reduce heat to medium and simmer for about 5 minutes. Add the blue cheese and stir until blended, then add the spinach and cook 3 more minutes. Add the cream, bring just to a boil, turn off heat and stir well. Add salt and cayenne pepper to taste.
  • Allow to cool and puree in a food processor or blender a little at a time. Ladle into individual bowls and sprinkle with the bacon. (Note: to serve cold, omit the bacon and add a little freshly squeezed lemon juice.)

1 large onion, chopped
4 garlic cloves, minced
1 tablespoon olive oil
6 cups chicken broth
8 ounces uncooked linguine
1 package (10 ounces) frozen chopped spinach, thawed and well drained
2 cups cubed cooked chicken
6 cups whole milk
3 cups shredded Swiss cheese
3 cups shredded brick or Monterey Jack cheese

Steps:

  • In a soup kettle or Dutch oven, saute onion and garlic in oil until tender. Add broth; bring to a boil. Add linguine and cook for 8-10 minutes or until tender. Reduce heat. Add spinach and chicken; heat through but do not boil. Stir in milk; heat through. Add cheeses and stir just until melted. Serve immediately.

3 tablespoons butter
1 cup finely chopped onions
6 tablespoons flour
6 cups chicken broth
2 cups milk
1/4 pound blue cheese, crumbled
1/2 pound fresh spinach
1/2 cup heavy cream
Salt to taste, if desired
Freshly ground pepper to taste
1/2 pound fresh shrimp, shelled and deveined

Steps:

  • Heat the butter in a kettle or saucepan and add the onions. Cook, stirring, about three minutes.
  • Sprinkle the mixture with the flour and stir. Add the chicken broth and bring to the boil. Add the milk and cook about five minutes.
  • Add the cheese and cook, stirring, until melted.
  • Meanwhile, pick over the spinach and remove and discard any tough stems and blemished leaves. Rinse and drain the spinach well. Coarsely chop the spinach and add it to the soup. Cook, stirring, about five minutes. Add the cream, salt and pepper and bring to the boil.
  • Meanwhile, cut the shrimp into small pieces. There should be about one cup. Add the shrimp to the soup and bring to the boil again. Serve.

  • 1. Heat a Dutch oven over medium heat. Add oil to pan; swirl to coat. Add pancetta; cook 1 minute or until pancetta begins to brown, stirring occasionally. 50 g butter
1 bunch spinach, washed and stalks removed
1 liter chicken stock
5 g garlic
1 pinch ground nutmeg
1 pinch origanum
50 g flour
salt
ground pepper
100 g feta cheese
100 ml cream (optional) or 100 ml plain low-fat yogurt (optional)

Steps:

  • Roughly chop the spinach.
  • Warm the chicken stock.
  • Melt the butter in a large saucepan and add the garlic.
  • Add the spinach and gently fry with a lid on for 5 minutes.
  • Remove the lid, add the flour and mix well.
  • Add the chicken stock stirring at all times.
  • Add the origanum and nutmeg.
  • Simmer for 45 minutes.
  • Add the feta cheese, salt and pepper.
  • After Feta has melted, stir in cream or low fat yoghurt (optional).
  • Liquidize soup for a smooth creamy finish. Serve with a twirl of cream.

12 oz thinly sliced fully cooked
smoked kielbasa
1/2 cup diced onion
4 cloves garlic ,minced
1 1/2 teaspoons choped fresh thyme or

Scant 1/2 teaspoon red pepper flakes
5 cans chicken broth (low salt) 14 oz
each
1 can diced tmatoes with liquid (I
use fire roasted) 14.5 oz
1 can (15 oz) white cannellini beans,
rinsed and drained
1 pkg. 9oz fresh cheese tortellini
1/2 bunch fresh spinach, rinsed,
dried, tough stems removed
Grated Parmesan cheese , for serving

Steps:

  • Heat the olive oil in a large Dutch oven over medium-high heat. Add the kielbasa, garlic, onion, thyme, and red pepper flakes and saute until browned, about 12 minutes. ( I threw the garlic in after about 8 minutes of cooking.. didn't want it to burn.) Add the broth and tomatoes and bring to a boil . Reduce heat to low and simmer for 15 minutes. Add the beans and tortellini to the soup. Simmer until the pasta is just tender to the bite, about 10 minutes. Stir the spinach into the soup and turn off the heat; let stand for about 2 minutes. Ladle the soup into bowls and sprinkle with Parmesan cheese before serving. ** Please note , add tortellini at another time if you aren't going to eat this all right away. It will become mushy if stored and absorbs some of the soup. I recommend boiling it as needed al dente, then throwing it in the soup for a couple of minutes.
