SPINACH, BEAN & PASTA SOUP



Spinach, Bean & Pasta Soup image

This is absolutely heaven. I made it without the sausage, and it was delicious. This is a definite make-again recipe. Recipe courtesy of Spilling the Beans.

canola oil (for cooking) or olive oil (for cooking)
1 mild Italian sausage or 1 chorizo sausage
1 onion, chopped
3 garlic cloves, crushed
2 cups water
1c pasta (fusilli or other small pasta)
14 ounces tomato sauce or 14 ounces diced tomatoes
3 cups chicken stock or 3 cups vegetable stock
1 teaspoon dried oregano or 1 teaspoon basil
salt
pepper
3 cups spinach (torn or coarsely chopped)
2 cups white beans (rinsed and drained) or 2 cups kidney beans (rinsed and drained)
parmesan cheese, freshly grated for serving

Steps:

  • In a large saucepan set over medium heat, heat a drizzle of oil and saute the sausage, breaking it up with a spoon, until it's no longer pink.
  • Add the onion and garlic and cook for 2 to 3 minutes, until soft.
  • Add the water, pasta, tomato sauce, stock, oregano, and salt and pepper.
  • Bring to a boil, reduce the heat, and simmer for about 15 minutes, until the pasta is tender.
  • Add the spinach and beans and cook the soup for another 3 to 5 minutes.
  • If it seems too thick, thin it with a little extra stock, tomato juice, or water.
  • Ladle into bowls and top each serving with Parmesan while it's still hot.

This is a very tasty and easy vegetarian pasta dish. It takes minimal time to prepare and has amazing flavor! It's also great served with brown rice!

1 (16 ounce) package whole wheat rotini pasta
1 ½ cups vegetable broth
2 ½ cups chopped fresh spinach
½ cup chopped red onion
1 clove garlic, chopped
½ teaspoon cayenne pepper
salt and pepper to taste
1 (15 ounce) can black beans, drained and rinsed
1 cup frozen chopped broccoli
1 cup diced tomatoes
2 ounces freshly grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add rotini, and cook for 8 to 10 minutes, or until al dente; drain.
  • In a large saucepan over medium heat, bring the vegetable broth to a boil. Reduce heat, and mix in spinach, onion, garlic, cayenne pepper, salt, and pepper. Stir in the black beans and broccoli. Continue to cook and stir 5 to 10 minutes.
  • Stir the tomatoes into the saucepan, and continue cooking 10 minutes, or until all vegetables are tender. Serve over the cooked pasta. Garnish with Parmesan cheese.

1 ½ teaspoons extra-virgin olive oil
1 pound bulk sausage
2 teaspoons minced garlic
2 (14.5 ounce) cans fire-roasted diced tomatoes
1 (15.5 ounce) can navy beans, drained
3 ½ cups beef stock
3 ½ cups chicken stock
1 teaspoon dried basil
1 teaspoon dried oregano
1 pinch red pepper flakes, or more to taste
1 ½ cups frozen chopped spinach
1 cup ditalini pasta

Steps:

  • Heat olive oil in a stock pot over medium-high heat; cook and stir sausage and garlic in the hot oil until sausage is crumbly and evenly browned, about 10 minutes. Drain and discard any excess grease.
  • Mix tomatoes, navy beans, beef stock, chicken stock, basil, oregano, and red pepper flakes into sausage mixture; bring to a boil. Add spinach and ditalini pasta and simmer until pasta is tender but firm to the bite, about 10 minutes.

2 cups elbow macaroni (8oz)
1 cup thinly sliced onion
1 tablespoon minced garlic
1 tablespoon olive oil
1 tablespoon water
6 cups fresh spinach leaves
3 tomatoes, seeded & chopped
1 (15 ounce) can cannellini beans, rinsed & drained
1/3 cup grated parmesan cheese

Steps:

  • Cook pasta until just tender.
  • Ladle 1 cup of pasta cooking liquid into bowl and reserve.
  • Drain pasta.
  • Saute onion& garlic in oil, then add 1 T water to skillet& cook over medium heat until onion is golden and tender, stirring often.
  • Add 1 c reserved pasta cooking liquid, spinach& tomatoes to skillet.
  • Cover& cook until spinach wilts, about 3 minutes.
  • Add cannellini beans& pasta.
  • Cover& cook until heated, about 2 minutes.
  • Stir in cheese& season with salt& pepper.

1 cup uncooked small pasta
2 celery ribs, thinly sliced
2 medium carrots, thinly sliced
1 medium onion, chopped
1 tablespoon olive oil
1 garlic clove, minced
2 cups water
1 can (14-1/2 ounces) diced tomatoes, undrained
1-1/4 cups reduced-sodium chicken broth or vegetable broth
1 teaspoon dried basil
1/2 teaspoon dried rosemary, crushed
1/4 teaspoon salt
1/8 teaspoon pepper
1 can (15 ounces) cannellini beans, rinsed and drained
2 cups shredded fresh spinach
1/4 cup shredded Parmesan cheese, optional

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large nonstick saucepan, saute the celery, carrots and onion in oil for 5 minutes. Add garlic; cook 1 minute longer. Stir in the water, tomatoes, broth, basil, rosemary, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 10 minutes or until carrots are tender. , Drain pasta; stir into vegetable mixture. Add the beans; heat through. Stir in spinach; cook until spinach is wilted, about 2 minutes. Sprinkle with Parmesan cheese if desired.
