SPINACH-BACON SAUTé
This is how I usually make poke weed, but obviously poke isn't readily available year round, so had a whole bunch of spinach leftover this week that I didn't use, so I decided to cook it like this. It was so good!

Steps:
- melt bacon grease in large skillet over medium high heat. Add onions and garlic, saute until onions are very soft.
- Add spinach to pan. Saute until wilted.
- Add egg and scramble with spinach. Sprinkling cornmeal until all is used up.
- When egg is cooked, remove from heat and stir in crumbled bacon if desired.
- Salt & pepper to taste.

Steps:
- Cook and stir bacon in large skillet on medium heat until crisp; drain. Wipe skillet with paper towel.
- Add dressing and onions to skillet; cook 5 min., stirring frequently.
- Stir in tomatoes. Add spinach; cook 8 to 10 min. or just until spinach starts to wilt. Stir in bacon. Serve topped with cheese.
