2 teaspoons olive oil
3 garlic cloves, minced
3 cans (15 ounces each) cannellini beans, rinsed and drained, divided
1/4 teaspoon pepper
1 carton (32 ounces) vegetable or reduced-sodium chicken broth
4 cups chopped fresh spinach (about 3 ounces)
1/4 cup thinly sliced fresh basil
Shredded Parmesan cheese, optional

Steps:

  • In a large saucepan, heat oil over medium heat. Add garlic; cook and stir until tender, 30-45 seconds. Stir in 2 cans of beans, pepper and broth., Puree mixture using an immersion blender. Or puree in a blender and return to pan. Stir in remaining can of beans; bring to a boil. Reduce heat; simmer, covered, 15 minutes, stirring occasionally., Stir in spinach and basil; cook, uncovered, until spinach is wilted, 2-4 minutes. If desired, serve with cheese.

1 cup dried white beans
water to cover
3 tablespoons olive oil
1 onion, chopped
2 carrots, cut into matchsticks
½ pound fresh spinach
5 cups chicken broth
2 teaspoons minced garlic
1 bay leaf
3 tablespoons chopped fresh parsley
1 ½ teaspoons salt
½ teaspoon ground black pepper

Steps:

  • Place white beans into a large container and cover with water; let soak 8 hours to overnight.
  • Drain beans, reserving 2 cups soaking water.
  • Heat oil in a large pot over medium heat. Add onion and carrots; cook and stir until tender, about 6 minutes. Stir in spinach; cook until wilted, about 2 minutes. Add beans, reserved soaking water, broth, garlic, and bay leaf. Simmer, covered, until beans are tender, about 1 hour.
  • Discard bay leaf. Pour half the soup into a blender. Cover and hold lid down with a potholder; puree until smooth. Stir pureed soup back into the pot. Season with parsley, salt, and black pepper.

3 cups baby spinach
½ cup chopped carrot
3 tablespoons olive oil
1 shallot, finely chopped
3 cloves garlic, minced
2 cups chicken stock
1 (15 ounce) can white beans, drained

½ teaspoon salt
¼ teaspoon ground black pepper
2 tablespoons lemon juice

Steps:

  • Combine baby spinach and carrot in a food processor; pulse until finely chopped.
  • Heat oil in a large pot over medium heat. Cook and stir shallot and garlic in the hot oil until fragrant, 2 to 3 minutes. Stir in spinach and carrot mixture, chicken stock, white beans, oregano, thyme, salt, and pepper. Bring to a boil, stirring occasionally. The spinach is bagged and is found in the produce department.

1 lb turkey or 1 lb pork Italian sausage, castings removed
1 1/2 cups chopped onions
1 1/2 cups diced carrots
1 celery, with leaves chopped

1/4 teaspoon dry crushed red pepper

  • Heat oil in heavy large Dutch oven over medium-high heat.
  • Add sausages (remove the castings) and saute until beginning to brown, breaking into small pieces, about 5 minutes.
  • Add onions, carrots, celery, garlic, basil,rosemary, red pepper and sage. Saute until vegetables begin to soften, about 10 minutes.
  • Add broth, tomatoes with juice and beans. Bring to a boil.
  • Reduce heat and simmer until vegetables are tender and flavors blend, about 15 minutes.
  • Just before serving bring to a simmer and stir in the spinach to wilt.
  • Ladle hot soup into pre-heated bowls.

1 (14 ounce) turkey kielbasa, cut into 2 inch pieces on angle
1 sweet onion, finely chopped
2 garlic cloves, minced

Steps:

  • Add oil to large saucepan over medium heat. Stir in onion, celery, and carrot and sauté for 6 to 8 minutes or until begin to soften. Stir in bay leaves and sauté 1 minute. Add chicken broth and water and bring to boil. Reduce heat and stir in chicken and beans. Simmer gently 3 to 4 minutes or until chicken is tender. Stir in spinach and remove from heat. 4-6 cups chicken broth (I like to use Kitchen Basics)
2 15 ounce cans of cannelli beans (or any white bean),drained and rinsed
6 garlic cloves,3 minced, 3 smashed (for bean pot)
1 teaspoon rosemary fresh or dried
1 bay leaf
2-3 tablespoons of olive oil
1 medium onion, diced
2 medium carrots, diced
3 celery stalks, diced
1 fennel bulb (no stalks) diced
1 generous teaspoon of vegetable or chicken concentrate (Better Than Broth or bouillon cube)
1 pound of sweet sausage without the casing or skin, crumbled into small pieces
1 generous teaspoon of red chile flakes
1 cup white wine
2 tablespoons of tomato paste. (Freeze leftover in plastic zip bag.)
2 sprigs of fresh thyme
1/2 cup minced fresh parsley
10 ounces of baby spinach thinly sliced
Preheat oven 325 degrees and set the oven rack in the middle. Have a dutch oven ready on the side, or a oven safe stock pot with lid. I use a clay dutch oven.
*If using canned beans see note at bottom

Steps:

  • If you have soaked beans over night, drain the pot and refill with cold water, 2 inches above beans. Bring the pot to a simmer and skim off any foam that bubbles to top. Turn down heat to a low simmer and add bay leaf, 1 tablespoon tomato paste, 1 cup of chicken stock, 3 smashed garlic cloves, 2 sprigs of thyme, and 1/2 teaspoon sea salt. It should simmer on low for 1 hour, stirring occasionally so that beans will not stick to bottom. Add more stock if needed. In a saute pan, heat oil and saute the onions, carrots, celery, and fennel until are soft about ten minutes. Careful not to brown. Add the garlic and cook for 1 more minute. Add the vegetables to the bean pot and stir. If you have a stick blender, carefully immerse into the pot, and blend by pulsing 6-7 times. You don't want it completely blended, only by half. If you don't have a stick blender, use a regular blender. Carefully place 1/2 bean vegetable mix into blender and pulse. In a skillet sauté sausage with red chile peppers, breaking it into little pieces, until lightly browned. Add the wine and 2 remaining tablespoons tomato paste and vegetable concentrate or bullion . Simmer until reduced and thickened. Add all the bean and vegetable mix into the dutch oven, along with the sausage and parsley. Adjust taste for salt and fresh pepper. Cover and bake for 2 hours on 325. Remove lid, and swirl in spinach. Cool 5 minutes before serving. *If using canned beans, drain and rinse with cold water. Place in pot with 1 cup of cold water). Bring to a low simmer and add bay leaf, 1 tablespoon tomato paste, 1 cup of chicken stock, 3 smashed garlic cloves, 2 sprigs of thyme, and 1/2 teaspoon sea salt (omit if beans are not low sodium). Simmer low for only 5-10 minutes. Set aside and proceed with the recipe.

8 shiitake mushrooms, stemmed and sliced
1 tablespoon canola oil
1 large onion, sliced into thin rings
½ cup dry white wine
2 teaspoons dried rosemary
½ cup quinoa
1 (10 ounce) bag washed fresh spinach, chopped
salt and pepper to taste

Steps:

  • Place the cannellini beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Or, bring the beans and water to a boil in a large pot over high heat. Once boiling, turn off the heat, cover, and let stand 1 hour. Drain and rinse the beans before using.
  • Heat 1 tablespoon of the canola oil in a large pot over medium heat. Stir in the mushrooms, and cook until they soften and begin to give up their juices, about 4 minutes. Remove the mushrooms from the pot, and set aside. Heat the remaining tablespoon of canola oil in the pot, and stir in the sliced onions. Cook and stir until the onions have caramelized to a dark brown, about 15 minutes.
  • Pour in the wine and rosemary, and bring to a boil over high heat. Once boiling, add the drained beans, and enough water to cover the beans by 1 inch. Return to a boil, then reduce heat to medium-low, cover, and simmer for 30 minutes.
  • Stir in the cooked mushrooms and quinoa; continue cooking until the beans and the quinoa are tender, about 20 minutes more. Remove from the heat, and stir in the spinach leaves until wilted. Season to taste with salt and pepper before serving.

white kidney beans, rinsed and drained (cannellini)

10 -12 ounces spinach, tough stems trimmed
1 tablespoon fresh lemon juice

Steps:

  • In 3-quart saucepan, heat oil over medium heat.
  • Add onion and celery; cook, stirring, until celery is tender,5 to 8 minutes. Stir in garlic and cook 30 seconds.

1 Tablespoon olive oil
1 Tablespoon minced garlic
½ cup diced yellow onion
5 cups chicken broth
Salt/pepper (to taste)
1 pound ground turkey
1 Tablespoon lemon juice
½ teaspoon thyme
3 cups fresh spinach
15.5 oz. Cannellini Beans (drained/rinsed)
¼ cup Parmesan (shaved, to garnish)

Steps:

  • In a large soup pot or dutch oven, heat the olive oil over medium heat. Add the onions and garlic and cook until they are soft and translucent, about 5 minutes.
  • Add the chicken broth to the pot and bring to a gentle boil.
  • Season the raw turkey with desired amounts of salt and pepper. Drop them into the broth in bite-sized pieces. You can roll them neatly or just drop in pieces.
  • Add in the lemon juice and thyme, and let the soup bubble gently for about 15 minutes
  • Reduce the heat to medium-low. When you're ready to serve, add the spinach and Cannellini beans and simmer until the spinach is wilted, about 2 minutes.
  • Top each bowl with Parmesan cheese if desired and serve! (This soup is delicious with crusty bread!)

1 Tbsp butter
1/2 c chopped onion
1/2 c thinly sliced celery
1/3 c chopped green bell pepper
2 clove garlic - minced
1-2 tsp italian seasoning
1/4 tsp ground black pepper - more or less to taste
1/2 tsp red pepper flakes - more or less to taste
4 c reduced sodium chicken broth
1 can(s) diced tomatoes (14 oz) - plain or with the basil and oregano added
3/4 c orzo pasta, uncooked
1-1/2 c fresh green beans cut into 1" pieces
4 c fresh spinach - chopped
1 can(s) cannelini beans
1 - 2 c tomato juice
parmesan cheese for garnish
kielbasa, ham or italian sausage as optional ingredient

Steps:

  • 1. Melt butter in a large 3 qt pot or Dutch oven. Toss in the onion, celery and bell pepper. Saute until just barely tender. Add the garlic, Italian seasoning, black pepper and red pepper flakes. Stir and cook for about a minute being careful not to let it scorch or burn.
  • 2. Stir in the chicken broth and diced tomatoes. Bring to a boil then drop the heat down to a simmer. Cook - uncovered - for about 10 minutes to blend the flavors.
  • 3. Sprinkle the Orzo into the liquid and stir. Simmer, uncovered, for 10 minutes - stirring frequently.
  • 4. After 10 minutes add the green beans and spinach. Continue to cook - stirring often - for another 6 minutes or until the Orzo is tender.
  • 5. Add enough tomato juice to get the consistency you prefer for soup. If you are adding cooked protein now is the time to do it. Add the Cannelloni beans and heat through.
  • 6. Ladle the hot soup into bowls or large mugs. Garnish with a bit of Parmesan cheese if desired.

2 19oz cans of white beans
2 cups fresh spinach
2 Tbsp pesto
Salt, pepper & parmesan cheese

Steps:

  • Add broth and beans to large pot and bring to boil. Reduce heat and stir in pesto and simmer until it is wilted. Season to taste and serve with cheese garnish.
