DAN DAN MEIN (SPICY SZECHUAN NOODLES)

Dan Dan Mein (Spicy Szechuan Noodles) image

There are two versions of the origin of this name. "Dan Dan" is onomatopoetic for "clap clap" and supposedly refers to the noise made by street vendors in Szechuan as they hawk this tasty snack. Dandan are wooden buckets, one on each end of a pole carried across the shoulders, from which vendors sell Dan Dan Mein in the streets of Chengdu. This recipe is adapted from Mrs Chiang's Szechuan Cookbook. It calls for Szechuan peppercorns, called "huajiao" ("flower pepper") in Chinese, and these are what give Szechuan food its distinctive taste. They can be found in Chinese specialty groceries. Do not substitute with black peppercorns, cayenne pepper or red chili peppers. Furthermore, do not substitute Middle Eastern tahini paste for the rich Chinese toasted sesame paste. The two are not interchangeable, although peanut butter is an acceptable alternative in this recipe. For the hot chili oil, use a commercial brand, mince any good dried red chilies, or make you own as follows.

1/8 teaspoon ground roasted szechuan peppercorns
4 teaspoons asian toasted sesame paste

Hot and Spicy Szechuan Noodles (Dan Dan Mian) image

This recipe, from "Authentic Recipes from China", is just sensational! While I wouldn't classify it as hot, just gently warm, we didn't add any extra chili oil just because the flavours as written were so perfect. You know you're onto a winner when DH eats a portion for 3 people!

In military chow halls this is called Yakisoba... but don't let that discourage you from making this for your fam! This is awesome and can be easily converted from meat-eating to vegetarian-friendly (for those 14 - 16 year olds that decided cows are unedible, if you know what I mean) - change out the meat with meatless burger...

SZECHUAN NOODLES WITH SPICY VEGGIE SAUCE

Szechuan Noodles With Spicy Veggie Sauce image

I took my recipe for Recipe#48760 because it is so popular, and changed it to make it vegetarian! So good with lots of veggies! Enjoy! NOTE:I have used frozen stir fry vegetaables to keep this recipe quick and easy, but also added fresh vegetables for those who can take a few more minutes. They are just suggestions, you may add whatever vegetables you would like!

CHINESE TAKE-OUT SPICY SZECHUAN NOODLES

Chinese Take-Out Spicy Szechuan Noodles image

This fresh pasta salad is alive with the flavors of peanuts, sesame, and garlic. It is one of our favorite hot-weather salads to serve with simple grilled meats such as chicken and pork. But there are so many flavors in the peanut sauce that is can really dominate the plate, so keep the other flavors of the meal low-key. This recipe makes a lot, but don't worry about leftovers. Because it is eaten cold, the noodles keep in the refrigerator for days. From the Take-Out Menu Cookbook.

Categories     Chinese

Time 1h

Yield 6-8 serving(s)

Number Of Ingredients 15

1/3 cup chicken stock
1/2 cup smooth peanut butter
1/4 cup soy sauce, plus more if necessary
1/4 cup rice vinegar
2 tablespoons chinese black vinegar or 2 tablespoons Worcestershire sauce
3 tablespoons toasted sesame oil
2 tablespoons chili-garlic sauce, plus more if necessary
1 1/2 tablespoons sugar
4 garlic cloves, minced
1 lb linguine or 1 lb whole wheat linguine
1 red pepper, seeded and cut into matchsticks
1 carrot, peeled and cut into matchsticks
1 bunch green onion, thinly sliced
1/2 cup peanuts, chopped
2 cups bean sprouts

Steps:

  • Bring a large pot of water (1 gallon) to a boil over high heat.
  • Meanwhile, combine the stock, peanut butter, soy sauce, rice vinegar, black vinegar, sesame oil, chili garlic sauce, sugar, and garlic in the bowl of a food processor. Pulse to combine well and transfer to a large bowl.
  • Cook the noodles about 6 minutes, or until they are almost done but still have a little bite in the center. Drain the noodles, and add immediately to the sauce mixture.
  • Toss the noodles, then add the red pepper, carrot, green onions, peanuts and sprouts.
  • Taste to adjust the seasoning with more soy sauce or chili sauce. If the mixture is dry, add a few tablespoons of hot water to make mixing the ingredients easier. Let the noodles sit to come to room temperature. As they sit, they will absorb the extra sauce in the bottom of the bowl. Serve at room temperature or chilled.
  • Make ahead: These noodles will keep, covered, and refrigerated for 2-3 days. If you want to make the dish ahead of time, don't add the bean sprouts. They become slimy and lose their crunch.
