This is a wonderfully flavorful meatball that is easy to make, requires little prep time, and is a sure hit for those looking for traditional Thai flavors like sriracha, lime, and ginger. Spice can be adjusted to taste.

2 serrano chile pepper, halved lengthwise and seeded
½ pound rib-eye steak, partially frozen
1 egg
¼ cup panko bread crumbs
1 tablespoon sriracha sauce
1 tablespoon minced fresh ginger
1 teaspoon kosher salt
1 teaspoon ground black pepper
1 lime, zested
1 tablespoon light olive oil
⅓ (12 fluid ounce) can or bottle beer
1 tablespoon soy sauce
1 tablespoon creamy peanut butter
½ bunch cilantro, chopped

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place serrano peppers with cut sides down onto the prepared baking sheet.
  • Cook under the preheated broiler until the skin of the peppers has charred, 5 to 8 minutes. Immediately put peppers in a heatproof bowl, cover tightly with plastic wrap, and let sit until cool enough to handle, 5 to 10 minutes. Scrape the skins off with your fingers, core and seed chile peppers. Dice peppers.
  • Cut rib-eye steak into thin slices. Chop slices finely. Transfer to a bowl. Add serrano peppers, egg, panko, sriracha sauce, ginger, salt, pepper, and lime zest. Wet your hands and form mixture into ping pong-sized balls.
  • Coat a saute pan with olive oil and heat over medium-high heat. Add meatballs and sear both sides evenly, about 4 minutes. Pour in beer and soy sauce. Stir in peanut butter and reduce heat; simmer sauce until thickened, 5 to 10 minutes. Garnish with cilantro.

Healthy Spinach Meatballs With Spicy Sriracha Marinara image

Found on the blog "One Couple's Kitchen." This is SPICY. So if you don't do well with heat, I would skip this one, or just leave out the sriracha. The meatballs are a healthy combo of turkey and pork with the added benefit of spinach. Feel free to use your own sauce, or use the marinara with normal spaghetti. I served over spaghetti squash to make it even healthier! Options are endless!

1 lb ground pork
1 lb ground turkey
1 (16 ounce) bag frozen chopped spinach, thawed & squeezed dry (or 1 1/2 10 oz pkgs)
1/3 cup plain dried breadcrumbs
3 egg whites
3/4 teaspoon dried oregano (I used Italian seasoning, because I had that on hand)
course salt & pepper
nonstick cooking spray
2 teaspoons olive oil
1 small yellow onion, diced
3 -4 garlic cloves, minced
2 (28 ounce) cans crushed tomatoes
1/4 cup sriracha sauce (use less if you're less adventurous!)
1 (16 ounce) box whole wheat spaghetti
1/2 cup fresh parsley, chopped (optional)

Steps:

  • Heat broiler, with rack in top position.
  • Place pork, turkey, spinach, breadcrumbs, egg whites, oregano, 1 1/2 tsps salt & 1/2 tsp pepper in a large bowl.
  • With your hands, mix to combine. Roll into 1 - 1 1/2 inch meatballs. Arrange meatballs on a rimmed baking sheet. Lightly coat with cooking spray. Broil for 5 minutes. Turn meatballs and broil another 5 minutes, until golden brown.
  • In a large heavy pot, heat oil over medium. Add onion and garlic. Cook, stirring occasionally, until onion is translucent, about 6 minutes.
  • Add tomatoes and Sriracha and bring to a simmer.
  • Add meatballs and simmer at least 10 minutes. (To store, let cool, then refrigerate in an airtight container, up to 1 week, or freeze, up to 3 months).
  • In a large pot of boiling salted water, cook pasta according to package directions. Drain pasta, add to pot with meatballs and gently toss to coat.
  • Sprinkle with parsley and serve. Enjoy :).

1 (9 ounce) bottle of sriracha chili sauce
1 (18 ounce) jar grape jelly (Use 1 jar for spicy meatballs, or add more grape jelly to cut down on the spiciness)
2 -3 dozen meatballs

Steps:

  • Combine all ingredients in a slow cooker. Turn the heat on low.
  • Cook for 4 hours.
  • Serve warm. Set out extra sriracha/grape jelly sauce for dipping, if desired.

Inspired by a more traditional recipe, I wanted to create an even more moist and spicy sriracha meatball. So easy to make, and great if you like food with a little kick. Many people wouldn't think to put in the oats, but I would almost say they are the secret ingredient. It's my new favorite, and I hope you enjoy it! Spoon meatballs and sauce over spaghetti.

1 red onion, diced
1 pound ground turkey
1 cup rolled oats
½ cup ricotta cheese
2 medium eggs
½ cup bread crumbs
¼ cup pickled banana peppers, diced
¼ cup grated Parmesan cheese
2 tablespoons medium chunky salsa
1 teaspoon sriracha sauce, or more to taste
salt and ground black pepper to taste
½ tablespoon olive oil, or as needed
1 (16 ounce) jar spaghetti sauce, or to taste

Steps:

  • Cook onion in a heavy-bottomed pan over medium heat until onion starts to sweat, about 5 minutes. Reduce heat to low and let soften and brown while you prepare the other ingredients.
  • Place ground turkey in a large bowl. Add oats, ricotta cheese, eggs, bread crumbs, banana peppers, Parmesan cheese, salsa, sriracha sauce, salt, and pepper. Stir until evenly combined. Add cooked onion last. Let meatball mixture sit to let the flavors marry and texture thicken, about 10 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Line a jellyroll pan with aluminum foil; brush a layer of olive oil on top.
  • Roll ground turkey mixture into balls and arrange on the jellyroll pan.
  • Bake in the preheated oven until lightly browned, 20 to 25 minutes.
  • Heat sauce in a large saucepan over medium heat. Add meatballs; stir until covered in sauce. Simmer until flavors intensify, at least 15 minutes.
