A twist on shrimp scampi that I threw together for my hungry husband one day, made with things I had in the cupboard. It went over so well that it is a regular at our house now.

4 cups penne pasta
5 teaspoons olive oil
4 cloves garlic, minced
1 medium onion, diced
1 (16 ounce) can diced tomatoes with green chilies, drained
½ lemon, juiced
1 pound uncooked medium shrimp, peeled and deveined
¼ cup chopped fresh parsley
salt, to taste
ground black pepper, to taste
1 pinch crushed red pepper flakes, or to taste
1 teaspoon grated Parmesan cheese, or to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink.
  • Heat the olive oil in a skillet over medium heat. Stir in the garlic and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the tomatoes; simmer until heated through, about 5 minutes more. Add the lemon juice and shrimp. Cook and stir until the shrimp are bright pink on the outside and the meat is no longer transparent in the center, about 5 minutes. Stir in the parsley, then season with salt, pepper, and red pepper flakes. Serve shrimp and sauce over prepared penne pasta. Sprinkle with Parmesan cheese.

This recipe was obtained from shrimp.com. My son wanted *something different* for new years eve dinner, and I yelled downstairs to him to find something with shrimp, as I had a bunch of shrimp leftover in the freezer from Christmas. The aroma of all that garlic while cooking made our mouths water! Very tasty meal and not a complicated recipe. Our guests raved about it. We doubled the recipe and served 4, however the portions were very generous, I'm sure I could have served 6 on the doubled recipe.

1 lb large shrimp, peeled and deveined
3 tablespoons butter
3 tablespoons olive oil
3 cloves garlic, minced
1/2 teaspoon white pepper
1/2 teaspoon red pepper flakes
1/4 teaspoon cayenne pepper
1/4 teaspoon dried oregano
1 lemon, juice of
1/2 cup parmesan cheese
5 tablespoons Italian seasoned breadcrumbs
1/4 cup parsley, minced
salt
1 lb of cooked fettuccine pasta or 1 lb linguine

Steps:

  • Melt butter with the olive oil in a sauté pan.
  • When the mixture is hot, add the garlic, white pepper, red pepper flakes, oregano, and cayenne pepper, making sure to stir well.
  • When garlic looks cooked but not brown (about 3 minutes), add the Shrimp.
  • Toss the Shrimp about in the pan, coating them with the spiced oil.
  • Add the lemon juice and keep tossing over the heat.
  • Quickly add the parsley, bread crumbs, and Parmesan.
  • Toss to coat completely.
  • The Shrimp should now be bright pink and cooked through.
  • Place the pan under the broiler until cheese looks melted (1- 2 minutes).
  • Taste and adjust seasoning if necessary.
  • Serve over the cooked pasta, with additional Parmesan sprinkled over the top.

1 cup white wine
1/2 cup butter
1/4 cup extra virgin olive oil
4 tablespoons garlic, minced
2 green onions, chopped (optional)
1/2 teaspoon red pepper flakes or 1/4 teaspoon cayenne pepper, to taste
fresh parsley, chopped
lemon wedge

Steps:

  • Add wine, butter, garlic, oil and pepper flakes to a baking dish and bake at 350 for 7 minutes.
  • Add shrimp and cook until shrimp turns pink.
  • Garnish as desired.
  • Wonderful over pasta!

This recipe originally came from McCormick. The dried herb McCormick's version is pratically perfect but recently, I tried substituting fresh herbs for the dried version and it was amazing. My children don't like shrimp, but they love the pasta tossed in the sauce from this dish. I've substituted chicken for the shrimp also which they love.

1/2 teaspoon dried oregano leaves
1/2 teaspoon garlic powder
1/2 teaspoon onion powder

1 lb large shrimp, peeled and deveined
1/2 lb angel hair pasta, cooked

Steps:

  • Combine Old Bay seasoning with spices, olive oil, and lemon juice.

Salt and pepper to taste
2 tablespoons olive oil

1 jalapeño chile, seeded, chopped, or 1 teaspoon crushed red pepper flakes

2 lbs large shrimp, peeled and deveined, or 1 lb shrimp and 1 lb scallops
6 tbsp butter
6 tbsp olive oil
8 cloves garlic, minced
3/4 tsp red pepper flakes
3/4 tsp ground white pepper
1/2 tsp cayenne pepper
1/2 tsp dried oregano
juice from one lemon
1 c grated parmesan cheese
10 tbsp italian bread crumbs
1/2 c cilantro or parsley, minced
salt to taste
1 lb. cooked bowtie (or choice) pasta

Steps:

  • Cook pasta with salt in rapidly boiling water. Meanwhile, melt butter with olive oil in saute pan. When hot, add garlic, white pepper, red pepper flakes, oregano and cayenne pepper-stir well. When the garlic looks cooked, but not brown, add the shrimp. Toss the shrimp with the spiced oil. Add the lemon juice and continue to toss. Add the cilantro, 1/2 of the bread crumbs, and a little of the cheese. Toss to coat completely. The shrimp should be pink and cooked through. Stir into the cooked pasta and add the majority of the remaining cheese and the rest of the bread crumbs. Sprinkle with remaining cheese and serve.
