28 ounces fresh, ground spicy pork sausage
1 cup uncooked long-grain rice
1 slice onion, diced
3 cloves garlic, minced
1 green bell pepper, chopped
1 red bell pepper, chopped
1 (28 ounce) can whole peeled tomatoes, crushed
1 cup chicken broth
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon cayenne pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a skillet, brown sausage and drain grease. Stir in rice, onion, garlic and peppers. Cook 5 minutes. Stir in tomatoes, chicken broth, salt, pepper and cayenne pepper. Pour into 9x13 inch pan.
  • Bake for 1 hour or until rice is tender and most of the liquid is absorbed. Or, at this step, you can cover and freeze it.

1 cup black beluga lentils
2 ½ cups water
1 pinch salt
1 tablespoon olive oil
1 onion, chopped
4 hot Italian sausage links
1 clove garlic, crushed
1 (8 ounce) package crimini mushrooms, sliced
1 eggplant, chopped
1 small hot pepper, chopped
salt and ground black pepper to taste
1 (14 ounce) can diced tomatoes

Steps:

  • Combine lentils, water, and salt in a large pot; bring to a boil, reduce heat to medium-low, and cook at a simmer until the lentils are tender and the liquid is absorbed, about 25 minutes.
  • While the lentils cook, heat olive oil in a pot over medium heat. Cook and stir onion in hot oil until lightly browned, about 5 minutes. Add sausage links to the pot; cook until browned completely, 3 to 5 minutes per side. Stir garlic into the onion mixture; cook and stir until fragrant, 1 to 2 minutes. Add mushrooms, eggplant, and hot pepper to the pot; season with salt and black pepper. Pour diced tomatoes over the vegetable mixture. Place a cover on the pot and cook at a simmer until the sausage is no longer pink the middle, about 10 minutes.
  • Remove the sausages from the vegetable mixture to a cutting board; cut into chunks and stir into the lentils. Stir vegetable mixture into the lentils. Cover pot and cook until the vegetables are tender and the flavors blend, about 5 minutes.

2 pounds bulk spicy pork sausage
3 medium tart apples, peeled and cut into 1/4-inch slices
12 cups cubed Italian bread
1-1/2 cups shredded sharp cheddar cheese
9 large eggs
3 cups 2% milk
3/4 teaspoon yellow mustard

Steps:

  • In a large skillet, cook and crumble sausage over medium heat until no longer pink, 6-8 minutes. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 1 tablespoon. Add apples to drippings; cook and stir over medium heat until tender, 4-6 minutes., In a bowl, combine sausage, apples, bread and cheese. Transfer to a greased 13x9-in. baking dish. In another bowl, whisk eggs, milk and mustard; pour over bread mixture. Refrigerate, covered, several hours or overnight., Preheat oven to 350°. Remove casserole from refrigerator while oven heats. Bake, covered, until a knife inserted in the center comes out clean, about 45 minutes. Uncover; bake until golden brown, 10-15 minutes longer. Let stand 5-10 minutes before serving., Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake as directed, increasing time as needed or until golden brown and a knife inserted in the center comes out clean.

8 slices white bread, crusts removed and cut into cubes
1 lb spicy pork sausage, crumbled and cooked (Italian, bulk, or Jimmy Dean)
1 cup sliced mushrooms
1/4 cup finely chopped onion
2 cloves garlic, minced
1 (4 ounce) can mild green chilies, drained
1 1/2 cups grated sharp cheddar cheese
10 large eggs
2 cups milk
2 tablespoons chopped sun-dried tomatoes
1 tablespoon minced fresh basil
1/4 teaspoon ground sage
2 teaspoons dry mustard
1 teaspoon salt
pepper, to taste (anywhere between 3 dashes to 1/4 teaspoon)
2 dashes Tabasco sauce, to taste

Steps:

  • Cook the sausage until browned well, crumble; set aside.
  • In the same pan, sauté the mushrooms, onion, garlic, and green chiles.
  • Combine the sausage with the mushroom mixture; set aside and let cool.
  • Grease a 9x13-inch glass baking dish and fill the bottom with the prepared bread cubes; top with sausage mixture then the cheese.
  • Beat together the eggs, milk, sundried tomatoes, basil, sage, dry mustard, salt, pepper, and Tabasco; pour over sausage and cheese in the baking pan.
  • (This dish can be prepared a day ahead- at this point you'd cover it with plastic wrap and put it in the refrigerator.) In the morning, remove the casserole from the refrigerator and set it out on the counter for 30 minutes.
  • Preheat oven to 350 degrees F.
  • Uncover and bake casserole until it's golden and puffy and the center is set, about 50 to 60 minutes.
  • Cut into squares and serve.
  • If you want it especially spicy, chop up a jalapeno and sauté it along with the onion and mushrooms; you can also substitute O'Brien potatoes for the bread; you can even substitute vegetarian sausage for the meat!

Steps:

  • Set oven to 350 degrees F (set oven to second-lowest rack).
  • Generously grease a 13 x 9-inch baking dish.
  • In a large skillet cook the sausage meat with onion, bell pepper and garlic until the meat is lightly browned; mix in all remaining ingredients except the shredded cheddar cheese.
  • Transfer to prepared baking dish.
  • Bake uncovered for 30 minutes.
  • Remove and toss with a fork; cover with foil and continue baking for 1 hour or until the rice is soft.

2 1/2 cups mushrooms, sliced
1 medium onion, thinly sliced
2 teaspoons butter
1 cup sour cream
6 eggs
2 cups milk
3 cups swiss cheese, shredded

Steps:

  • Brown sausage in a skillet. Drain fat and set aside. Saute onions and mushrooms in butter until onion is tender. Mix in browned sausage.

This has to be one of my boys favorite dishes of all time. It is even better the second night and that is saying a lot! I try to make extra and freeze for a quick week night meal. Toss a salad, slice some bread and you have a wonderful hearty full of flavor and love meal.

3 can(s) fire roasted diced tomatoes with garlic
1 can(s) diced tomatoes with oregano,basil and garlic
1 medium onion, chopped
1 medium green pepper, chopped
1 small zucchini, diced
2 Tbsp italian seasoning
4 links hot italian sausage
1 lb ground beef
2 Tbsp minced garlic
1/2 tsp red pepper flakes
1 c cremini mushrooms, chopped
salt and pepper
1/2 lb mozzarella cheese, shredded
1 lb rigatoni pasta, uncooked

Steps:

  • 1. In a large pot brown the ground beef with sausage(remove sausage from casing and break apart as you brown it) add onion,garlic,red pepper flakes,and italian seasoning. Cook until the onion is translucent.
  • 2. Add to the ground beef and sausage the fire roasted tomatoes along with the regular diced tomatoes. Stir to blend well.
  • 3. Once blended add your zucchini, green peppers, mushrooms, salt and pepper to taste. Cover with lid and let simmer approx 30 minutes, stirring occasionally.
  • 4. Meanwhile cook pasta according to directions for al dente. Drain but do not rinse.
  • 5. Preheat oven to 350. Put pasta in a 9 x 13 casserole dish. Add pasta sauce a ladle at a time, mixing after each ladle (there will be sauce left over) until you reach your desired consistency. "I say this because some like it saucy while others prefer less"
  • 6. Sprinkle mozzarella cheese on top and bake 30 - 40 minutes until cheese is melted and casserole is bubbling. Let stand for 5 minutes. Serve with grated Parmesan cheese on the side.

SPICY FRIED CORN AND SAUSAGE CASSEROLE

A delicious fried corn is simmered with spicy sausage and seasoned chicken stock, then finished off in the oven making the perfect main dish or side serving.

1 cup chopped white onion
1/4 teaspoon garlic powder
3 teaspoons corn oil
1 (8 ounce) can chicken stock
1/2 teaspoon salt
2 teaspoons black pepper
1 (8 ounce) package fresh, uncooked spicy sausage
2 cups half cooked frozen corn (unsweetened, unsalted and drained) or 2 cups fresh cut corn (unsweetened, unsalted and drained)
1 teaspoon Tabasco sauce
1/4 cup heavy whipping cream

Steps:

  • In a large mixing bowl, whisk together the Chicken Stock, Heavy Cream, Salt, Garlic Powder, Black Pepper and Tabasco.
  • Set aside.
  • In a large skillet or oven-safe saute pan, cook and crumble fresh sausage until lightly brown and remove with spatula and drain on paper towels.
  • Save the pan drippings from the sausage and in that same pan, add the corn oil.
  • In the pan with just the corn oil and sausage drippings, after the corn oil has gotten hot, cook the white onions until they are transparent, glassy, and sizzling, sitrring and moving around with spatula.
  • Add the corn to the pan, frying on a medium to high heat for 5-7 minutes, moving it around with a spatula and making sure not to burn.
  • Still on a medium to high heat-- (the corn and the onions should be sizzling) now add back the drained and crumbled cooked sausage and, add the chicken stock mixture tothe pan.
  • Stir everything together and cover with lid.
  • Let cook covered for 5 min more on a medium to low heat.
  • Stir and transfer uncovered pan to a pre-heated 425 oven for 15 min uncovered.

1 (16 ounce) package smoked sausage
1 shallot, chopped
2 cloves garlic, minced
1 (14.5 ounce) can Italian-style diced tomatoes
1 (8.75 ounce) can whole kernel corn, drained
⅓ cup frozen green peas
1 (6 ounce) can mushrooms, drained
2 green onions, chopped
1 bay leaf
½ teaspoon dried thyme
1 teaspoon crushed red pepper flakes

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Heat oil in a large heavy skillet over medium-high heat. Cook sausage until browned on both sides; remove and set aside. Drain excess oil. Saute shallot and garlic until tender. 1 large onion - chopped
2 packets of sausages - what ever variety you like (Mexican/chilli sausages
are best, as they give the best flavour - normal sausages can taste a bit bland).
2 red peppers (diced)
1 can of tomatoes
2 cans of beans - one mixed beans or kidney beans, one baked beans.
2 chilli's - chopped (or more if you like it hotter)
½ tsp chilli powder
2 tbsp tomato puree
1 vegetable stock cube
½ tsp Worcester sauce
1 tbsp of brown sauce
1 tsp sugar (to taste)
Mushrooms - depending on size, about 10 normal size - quartered (chunky)
Mixed herbs (good pinch)
Oil
Salt and Pepper to taste

Steps:

  • 1. Preheat the oven to about 160 degrees (about a 4 gas), (if you're going to cook this like a casserole). 2. Fry the chopped onions until golden, remove from the frying pan. 3. Cut the sausages in to bite size pieces - about an inch in size. Fry in batches to seal and partially cook (don't be tempted to turn them too quickly, or they will fall apart). Remove and stand on kitchen paper to remove the excess fat. 4. Place the onions and sausages in either a big frying pan (with lid), or a casserole dish. Add the all the other ingredients and stir. If it looks a bit thick add some more water, or another can of tomatoes. 5. Cook for about an hour - until thickened slightly (if you're using a big frying pan, keep it on a low heat, and stir it occasionally to ensure it doesn't stick to the bottom of the pan). 6. Taste - to make sure it meets your requirements. 7. Serve with a nice jacket potato, mash or something yummy like that!

4 vegetarian sausages (I like cauldron brand)
1 onion, chopped
2 garlic cloves, chopped
1 red chile, chopped
3 stalks celery, finely chopped
1 parsnip, peeled and cubed
2 medium potatoes, cubed
200 g broccoli florets
200 g cauliflower florets
300 g cannellini beans
300 g borlotti beans
1 red chile, crushed (such as dried birds eye)
1 tablespoon miso (optional)
150 ml red wine (vegan fair trade wine can be bought at the Co-Op in the UK)
200 ml stock
1 sprig fresh rosemary
salt and pepper

Steps:

  • heat the oil in a large saucepan and start to fry the sausages for 3-4 minutes.
  • add the onion, garlic and chili and fry until they start to soften.
  • chop the sausages into bite size chunks in the pan.
  • add the vegetables and beans including fluid from tins (others can be substituted depending on your taste or what you have in).
  • stir in the crushed chili, miso paste, red wine, stock and rosemary.
  • season to taste and bring to the boil.
  • leave to simmer for around an hour stirring occasionally.
  • Serve with hot garlic bread if desired.
