SPICY RAMEN NOODLES RECIPE

This spicy ramen noodles recipe is easy to make and so much better than store bought ramen, plus you can make it as spicy as you want! Ready in minutes!

5 cups chicken broth (or use vegetable broth)
2 serrano peppers (sliced (use jalapeno for milder))
4 cloves garlic (smashed)
1 thumb sized knob of fresh ginger (peeled and sliced)
3 tablespoons gochujang (or to taste - I usually use 1/4 cup)
1 tablespoon chili crisp (or use hot chili oil)
1 tablespoon soy sauce (or more to taste)
1 tablespoon sesame oil
1 teaspoon sambal oelek (or use chili-garlic sauce)
1 tsp rice wine vinegar
Sriracha to taste (or use your favorite hot sauce)
4 ounces ramen noodles
1/2 pound shrimp (peeled and deveined (or use other cooked proteins))
2 soft boiled eggs
Fresh chopped parsley, green onion, spicy chili flakes, sesame seeds for serving

Steps:

  • Add the chicken broth to a large pot and heat to medium heat.
  • Stir in serrano peppers, garlic, ginger, gochujang, chili crisp, soy sauce, sesame oil, sambal oelek, vinegar and sriracha. Stir until everything is completely incorporated.
  • Simmer for 10 minutes to let the flavors develop.
  • Stir in the noodles and shrimp (or other cooked proteins) and cook until the noodles are softened and the shrimp is cooked through, about 5 minutes.
  • Serve into bowls and garnish with sliced soft boiled eggs, fresh chopped parsley, red pepper flakes, green onion and sesame seeds.

1 (3 ounce) package cooked ramen noodles
1 (8 ounce) package cream cheese, softened
1 cup shredded mozzarella cheese
1 tablespoon ginger paste
1 tablespoon garlic paste
2 teaspoons red pepper flakes
1 teaspoon salt
14 medium (blank)s jalapeno peppers
1 (16 ounce) package bacon, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with foil and place a rack on top.
  • Roughly chop the cooked ramen noodles. Set aside.
  • Mix cream cheese, mozzarella, ginger paste, garlic paste, pepper flakes, and salt together in a bowl.
  • Hollow out jalapenos and remove seeds. Stuff each jalapeno evenly with cream cheese mixture. Wrap each with one slice of bacon. Lay the jalapenos on top of the baking sheet rack.
  • Bake in the preheated oven until bacon is browned and crisp, 30 to 45 minutes.

I admit it, I still love ramen. In this yummy recipe, expect fast, easy, and spicy with salty, sweet, and sour flavors kicking in. The spiciness level can be adapted to your taste by adjusting the chili garlic sauce. This will make 4 side servings or 3 hearty main course servings.

3 tablespoons reduced-sodium soy sauce
2 tablespoons sesame oil
1 ½ tablespoons brown sugar
1 tablespoon rice vinegar
2 teaspoons chili-garlic sauce, or more to taste
1 teaspoon grated fresh ginger
3 tablespoons creamy peanut butter
2 (3 ounce) packages ramen noodles
2 tablespoons chopped peanuts
2 medium green onions, thinly sliced diagonally

Steps:

  • Whisk soy sauce, sesame oil, brown sugar, rice vinegar, chili garlic sauce, and ginger together in a small bowl. Add peanut butter, whisking until well combined, and set aside.
  • Bring 4 cups of water to a boil in a pot. Discard the flavor packet and add ramen noodles to the boiling water. Cook until noodles are tender, 4 to 5 minutes. Drain noodles, reserving some of the noodle water in case you need to thin out the sauce later.
  • Pour sauce over ramen noodles, tossing until well coated. If sauce is too thick, thin out with a small amount of the reserved noodle water until you reach your desired consistency. Your hot noodles will soak up the sauce. Garnish with peanuts and green onion, and serve.
