1 red chili
1 red pepper, diced
¼ lb chorizo
½ teaspoon turmeric
1 teaspoon salt
½ teaspoon pepper
1 ¼ cups long grain rice
1 ¾ cups water
⅔ cup pea
⅓ lb prawn

Steps:

  • Fry the onions, garlic, chilli, and red pepper with a little olive oil.
  • Add the chorizo after a minute.
  • Stir in the turmeric, salt, pepper, and long grain rice.
  • Pour in the water and simmer for 20 minutes.
  • Stir in the peas and prawns until prawns are pink and no longer translucent, about 3-4 minutes.

Add the shrimp and cook, stirring, until they turn pink, 2 to 4 minutes. Season with salt and stir in the cilantro.

Steps:

  • Stir together lemon grass, 1/4 cup ginger, garlic, cilantro, 1 minced chile, and 3/4 cup peanut oil in a large bowl. Add the shrimp, and toss to coat; let marinate at room temperature for 20 to 30 minutes.
  • Preheat a grill for medium-high heat.
  • Meanwhile, pour lime juice, rice vinegar, mirin, soy sauce, and water into the bowl of a blender or food processor. Add the lime zest, 1 tablespoon ginger, fish sauce, 2 chile peppers, garlic, and peanut butter; process until smooth. While processing, slowly pour in the peanut oil; process until smooth and creamy. Pour into a bowl, stir in mint, cilantro and chopped peanuts; season to taste with salt.
  • Remove shrimp from marinade, shaking off any excess. Grill on preheated grill until pink and firm, about 2 minutes per side. Serve immediately with sauce.

1 grilled yellow bell pepper, peeled, seeded and finely diced
1 grilled poblano chile, peeled, seeded and finely diced
1 grilled serrano chile, peeled, seeded and finely diced, optional

2 cloves garlic, finely chopped
1/4 teaspoon kosher salt
Freshly ground black pepper
Splash red wine vinegar, optional
2 tablespoons finely chopped fresh cilantro leaves
24 prawns, in the shell, preferably with heads
1 tablespoon olive oil
1 teaspoons kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Mix together all of the sauce ingredients in a medium bowl, cover, and let sit at room temperature for at least 1 hour and up to 2 hours before serving.
  • Heat your grill to high.
  • Toss the prawns with the oil in a bowl and season with the salt and pepper. Grill the prawns for 2 to 3 minutes per side, or until just cooked through. Remove to a platter and immediately spoon the sauce over shrimp with a slotted spoon. Serve hot.

1 teaspoon paprika

2 tablespoons paprika
1/2 cup butter
10 minced garlic cloves
2 tablespoons cayenne pepper
1/2 cup tomato paste
1 tablespoon sugar

Steps:

  • Warm butter in saucepan or microwave until just barely melted. Add remaining ingredients and mix well. Cool, stirring occasionally. Refrigerate up to a week or freeze in tbsp size quantities.
  • To prepare chicken or prawns: Place about a pound or pound and a half of sauteed chicken pieces or peeled, boiled, drained prawns into a pot. Add about 2 tbsp glaze to the pot and cook over very low heat stirring often to coat completely. Allow it to caramelize slightly. Serve warm or at room temperature. Adjust the amount of paste according to how spicy you like your food. We sometimes add up to 4 tbsp for this much chicken or seafood.

  • To make the ceviche, mix all the ingredients together in a bowl and refrigerate.
  • To make the mince, heat a pan and melt the butter. Fry the onions till soft, then add the mince and cook for 2-3 minutes. Then add the garlic powder, chilli flakes, cayenne pepper, cumin, coriander and beef stock. Bring to a gentle simmer. Lastly, add the tomato paste and mix well. Cook the mince for a further 5 minutes, season with salt and pepper, and continue to gently stir.
  • To make the guacamole, combine all of the ingredients in a bowl and mash together to your desired consistency.
  • Assemble your tacos with your favorite flavor combinations. Serve.

1 teaspoon dry mustard (if you want them really hot use Chinese dry mustard)

1 dash black pepper, freshly ground
2 tablespoons olive oil

1 kg king prawns or 1 kg shrimp, raw and unpeeled
2 glasses dry white wine, I used Chardonnay
1 small shallots or 1 small onion, peeled and diced finely
2 -4 garlic cloves, peeled and diced finely
1 tablespoon Old Bay Seasoning
1 lemon, cut in half
water
6 tablespoons high quality ready-made mayonnaise or 6 tablespoons home-made mayonnaise
3 dashes Tabasco sauce or 3 dashes any other hot chili sauce
1/2 lemon, juice of
1 tablespoon tomato sauce
1 tablespoon tomato puree
1 teaspoon garlic granules or 2 fresh garlic cloves, peeled and minced
salt and pepper, to taste

Steps:

  • Put the prawns/shrimp into a large pan and add the wine, lemon halves, onion or shallot and garlic. Add the water to just cover the prawns/shrimp, and then add the Old Bay seasoning. Stir well.
  • Cook over a high heat for about 5 minutes, or until the prawns are pink and cooked. Strain the prawns/shrimp (keeping the cooking liquor for a soup or fish sauce ~ I often freeze it until I need it.) and place them into a large bowl.
  • Allow lots of paper napkins and a spare bowl for the prawn/shrimp peelings and eat immediately with a mixed salad, crusty bread and the spicy dip.
  • To make the dip, just whiz or mix all the ingredients together and taste before adjusting the seasoning ~ we like it very spicy. Serve in a separate bowl or in individual dishes with the prawns/shrimp.

500g big prawns (about 8 - 15 prawns)
1 sheet of Aluminium foil
100ml water
Spices (Pounded or Blended) :
3 tbsp dried prawns
6 shallot, with skin peeled off
6 bird's eye chillies
6 red chillies
1/2 tbsp belacan
1 tbsp curry leaves
Seasoning :
1/2 tbsp light soy sauce
1 tsp sugar
500ml water

Steps:

  • 1. Pound the dried prawns (presoaked in warm water for half an hour and drained), shallot, bird's eye chillies, red chillies, belacan and curry leaves with a mortar and pestle until fine. Alternatively, all the spices can be blended using blender or food processor with some oil added in. 2. Heat up oil. Sauté the pounded/blended spices mixture, stir-fry briskly over high heat, then turn to mediun low heat until fragrant. When the colour of the spices mixture changed from chilli red to dark brownish-red, add in seasoning and stir well. 3. Place all the prawns in Aluminium foil, pour in the previous sautéed sauce (in Method 2) and wrap up neatly. 4. Bring 100ml water to boil in a clean wok. Place the above prawn parcel in the wok, close lid and simmer for 15 minutes (or until water is dry and Aluminium parcel puffs up). Ready to serve.   • Heat 1 tablespoon oil in a large saucepan over medium heat.
  • Add the onion and chorizo, and cook, stirring, for 5 minutes until the onion softens and the chorizo starts to crisp. Stir in harissa and cook for a further minute.
  • Add tomatoes, lentils, capsicum and stock, bring to a boil, then reduce heat to low and simmer, stirring occasionally, for 20 minutes until the mixture has thickened slightly.
  • Season the prawns with sea salt and freshly ground black pepper, then add to the pan. Cover and cook for 5 minutes or until the prawns are just cooked through.
  • Stir in the parsley, then serve with crusty bread and a mixed salad.

6 fresh figs, diced
1/2 mango, diced
2 tablespoons freshly grated ginger
1 tablespoon finely diced red bell pepper
3 tablespoons rice vinegar
2 tablespoons honey
1 pinch cayenne pepper
2 medium golden tomatoes, cut and seeded to form cups
12 large tiger prawns, cooked, peeled, and chilled
4 sprigs fresh cilantro
8 whole chives

Steps:

  • Place figs, mango, ginger, red pepper, rice vinegar, honey, and cayenne in a small saucpan. Simmer over low heat for 15 minutes. Let cool slightly, and then refrigerate until completely chilled.
  • Fill tomatoes with fig chutney. Place tomato in the center of each plate. Arrange shrimp on tomato, with tails down. Garnish with cilantro and chives.

½ lime , juiced, plus wedges to serve
50g mayonnaise
2 tbsp vegetable oil
1 garlic clove , crushed
thumb-sized piece ginger , grated
½ red chilli , finely chopped
1 tbsp tamarind paste
180g raw jumbo king prawns (or tiger prawns)
toasted sesame seeds , sliced
spring onions and cooked
rice , to serve

Steps:

  • Mix the lime juice with the mayonnaise and set aside.
  • Heat the oil in a large, non-stick frying pan over a medium heat and add the garlic, ginger and chilli. Lightly fry for 2 mins until fragrant, then add the tamarind paste.
  • Toss the prawns in the mixture and cook for 2-3 mins until they have all turned pink. Serve with rice topped with the sesame seeds and spring onions, and the lime mayo, plus lime wedges for squeezing over.

I make this a lot. Its slightly sweet and spicy and the sauce makes it perfect for jacket potatoes. 250 g king prawns (Jumbo cooked, if frozen defrosted)
1 garlic clove (finely sliced)
low-fat cooking spray
1/2 chili powder (my chilli powder is mega hot so I only use a little bit)
1 vegetable stock cube
200 ml hot water

Steps:

  • Spray a frying pan liberally with low fat cooking spray add the garlic and sauté for a minute. Add the chilli and sauté for a further 30 seconds.
  • Add the prawns, crumble in the oxo cube, add the water stirring well to mix. Cook for about 5-7 minutes to heat through the prawns and allowing the sauce to reduce and thicken slightly.
