30-Minute Spicy Pork and Sweet Potato Stew image

Spicy, smoky chipotle chiles and chili powder add long-cooked flavor to this quick pork stew. To save time and use less fat, only the pork is browned in oil, while the onions get pureed with tomatoes, garlic and the chile to make the broth.

1 cup canned unsalted diced tomatoes
1 medium white onion, quartered
2 cloves garlic
1/2 chipotle in adobo sauce, plus 1 tablespoon of the sauce
2 tablespoons vegetable oil
1 large pork tenderloin, trimmed and cut into 1-inch chunks (about 1 1/2 pounds)
Kosher salt and freshly ground black pepper
1 tablespoon chili powder
One 8-ounce sweet potato, peeled and cut into 1/2-inch chunks
2 cups low-sodium chicken broth
1 tablespoon pickled jalapenos
1 cup 2 percent Greek yogurt
1/4 medium head red cabbage
1 medium Haas avocado
1 lime
1/2 cup loosely packed fresh cilantro
Eight 6-inch corn tortillas, warmed

Steps:

  • Puree the tomatoes, onions, garlic, chipotle and adobo sauce in a food processor until completely smooth.
  • Heat the oil in a large Dutch oven or pot over medium-high heat until nearly smoking. Add the pork in a single layer, season with 1 teaspoon salt and 1/2 teaspoon pepper and cook, undisturbed, until beginning to brown, about 2 minutes. Turn the pieces and cook until brown, about 1 minute more. Dust the meat with the chili powder, and add the tomato puree, sweet potatoes, chicken broth, 1/4 teaspoon salt and a few grinds of pepper. Bring to a boil, reduce the heat to medium, cover and gently simmer until the meat is cooked through and the potatoes are tender, about 15 minutes.
  • Meanwhile, prepare the toppings: Chop the jalapenos, and whisk together with the yogurt in a small bowl. Shred the cabbage, cut the avocado into chunks and cut the lime into wedges.
  • Ladle the stew into large, deep bowls. Top with the yogurt mixture, garnish with the cabbage, avocado, lime and cilantro and serve with the tortillas.

2 pounds boneless pork butt, trimmed of fat, cut into 1-inch cubes
2 tablespoons cider vinegar
1 tablespoon vegetable oil
Coarse salt and freshly ground black pepper
1 medium red onion, finely chopped
1 tablespoon finely chopped garlic
1 tablespoon cocoa powder
1 teaspoon ground cumin
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
1/4 cup coarsely chopped chipotle chiles, in adobo sauce
1 sweet potato, peeled and cut into 1/2-inch pieces
1 medium turnip, peeled and cut into 1/2-inch pieces
Cooked basmati rice, for serving (optional)
1 plum tomato, seeded and chopped, for garnish
Coarsely chopped fresh cilantro, for garnish

Steps:

  • Place pork in a shallow baking dish and pour over vinegar; turn to coat. Let stand for 15 minutes and up to 2 hours.
  • Preheat oven to 350 degrees. Heat vegetable oil in a Dutch oven. Season pork with salt and pepper and, working in batches, add to Dutch oven. Cook until browned on all sides; transfer pork to a plate and set aside.
  • Add onion, garlic, cocoa powder, cumin, cinnamon, cardamom, and chipotle chiles to Dutch oven. Cook until onion is soft and spices are fragrant, adding a little water if mixture begins to stick to the bottom of the pot.
  • Return pork to Dutch oven; stir to combine. Add 1 cup water, sweet potatoes, and turnips; do not stir. Cover and transfer to oven. Cook until pork is tender and vegetables are soft, about 1 1/2 hours. Serve hot with rice, if desired, and garnished with tomato and cilantro.

I've long adored hominy, the earthy dried corn kernels you find in pozole, the chile-laced Mexican stew. When I saw dried heirloom hominy for sale online, I bought some. I knew that having it in the cupboard when a hominy craving struck was the best insurance against cheating and buying the canned version. Like dried beans, dried hominy needs a good long soak and a lengthy cooking. But there's nothing difficult about the process. Many pozole recipes call for the finished stew to be garnished with shredded cabbage. But after bingeing on cabbage recently, I decided to take a different route, and stirred slivered collard greens into the pot at the end of cooking. They turned silky and soft and offered a nice contrast to the chewy hominy, the brawny pork and the spicy thick broth.

1 pound dried hominy
3 pounds boneless pork butt, cut into 2-inch-square chunks
1 tablespoon kosher salt, plus more to taste
1 teaspoon black pepper
3 tablespoons peanut or safflower oil
2 yellow onions, finely chopped
4 garlic cloves, finely chopped
1 tablespoon New Mexican chile powder (or less, to taste)
1 teaspoon ground cumin
1 teaspoon Mexican oregano
1 bay leaf
1 cinnamon stick
1 chipotle in adobo sauce
1 (12-ounce) bottle lager-style beer
2 pounds collard greens (about 2 bunches), center rib removed, leaves chopped
Lime wedges, for serving
Cilantro leaves, for serving

Steps:

  • Soak the hominy in plenty of water overnight. Drain.
  • Season the pork all over with 1 teaspoon salt and the black pepper. Heat the oil in a large pot over medium-high heat. Sear the meat in batches until well browned on all sides. Transfer to a plate.
  • Add the onion to the pot and cook until soft, 5 to 7 minutes. Add the garlic, chile powder, cumin, oregano, bay leaf and cinnamon. Cook 1 minute. Return pork to pot. Stir in the chipotle, hominy, beer, 6 cups water and 2 teaspoons salt. Simmer, covered, for 1 hour. Uncover and simmer for about 1 to 1 1/2 hours more till meat and hominy are tender, adding water as needed if too thick. Stir in collards for last 20 minutes. Discard bay leaf and cinnamon. Taste and adjust seasonings. Ladle into bowls; garnish with lime, cilantro, avocado and radish.

2 tablespoons olive oil
3 lbs boneless pork shoulder
1 medium onion, diced
4 cloves garlic, peeled & crushed
2 tablespoons crushed red pepper flakes

Steps:

  • In a large stockpot, heat oil and brown pork on all sides.

  • Stir in tomatoes& stock, and bring to a boil.
  • Reduce heat& simmer, covered, for 2-1/2 hours.
  • Turn meat every 30 minutes.
  • Remove meat from pot& allow to cool.
  • Skim fat from top of stew.
  • Slice meat across grain into thin slices (or shred).
  • Return meat to pot, add beans, cooked pasta,& salt to taste.
  • Heat through.
  • Serve with sour cream, if desired.

2 tablespoons vegetable oil
1/4 cup soy sauce

2 garlic cloves, pressed

Steps:

  • Cut pork into l inch cubes and coat with about 3 Tbsp flour.
  • Brown pork thoroughly in hot oil in a dutch oven over medium-high heat.
  • Stir in soy sauce, sherry, garlic, ginger, red pepper, fennel, white parts of green onions, and 1 1/2 cups water.
  • Cover pan and bring to boil.

4 lb pork neck bones (pick bones with plenty of meat on them)
10 or more c water, divided
2 clove garlic, peeled and sliced thinly
1/4 cup chopped onion
1 tsp ground ginger
1 green onion (scallion), white and green parts separated and coarsely chopped
1/2 tsp black pepper
4 medium potatoes, peeled and cut into bite-size chunks
1 cup bean sprouts (mung bean sprouts)
15 ggaetnip (perilla leaves), cut into strips
8 to 10 napa cabbage leaves, torn in half
SAUCE
6 Tbsp gochugaru (or crushed red pepper flakes)
10 clove garlic, minced
5 Tbsp deulkkae garu (ground perilla seed)
3 Tbsp low-sodium soy sauce
2 Tbsp soy bean paste (such as korean dwenjang or japanese miso)
4 Tbsp rice wine
1 Tbsp gochujang (korean chili paste)
1 Tbsp ground sesame seeds
1 tsp salt
1 tsp black pepper

Steps:

  • 1. Place pork bones in a large bowl, and cover completely with cold water for one hour. Change water every 20 minutes, if possible. Drain and discard water, and rinse pork bones under cool running water to remove surface fats.
  • 2. Placed rinsed bones into a large saucepan, and add enough water to completely cover the bones. Bring to a boil, and let boil over medium heat for about 10 minutes. Drain water, and rinse pork bones once more. Rinse out stockpot well (to remove fats and bitter residue).
  • 3. Place rinsed pork bones back into stockpot, and add 8 cups water. Stir in garlic, chopped onion, ginger, white portion of green onion, and black pepper. Bring liquid to a low boil, then turn heat to low and simmer for 1 hour and 30 minutes on low heat. Remove any fat that accumulates on the surface during cooking.
  • 4. Place a fine mesh sieve over a large bowl, and pour the contents of the stockpot through the sieve, collecting the milky broth in the bowl (it should be about 5 cups or so of broth). Return the pork bones and pork meat to the stockpot. Discard the garlic, onion, and green onion that were collected in the sieve.
  • 5. Mix together all of the sauce ingredients in a medium bowl; set aside.
  • 6. Measure the broth (that was collected into the bowl) and add enough water to measure 10 cups. Pour the 10 cups of broth/water over the pork bones in the stockpot. Bring to a low boil over medium-high heat. Once it reaches a boil, reduce heat to low. Stir the sauce and potatoes into the broth, and let simmer for 20 to 25 minutes.
  • 7. When potatoes are soft, add the bean sprouts, perilla leaves, cabbage, green part of the green onion, and boil for another 10 to 15 minutes, or just until the vegetables are soft and the pork is tender and thoroughly cooked.
  • 8. Serve immediately with steamed white rice and plenty of banchan (side dishes).

  • In 1-gallon resealable food-storage plastic bag, shake flour and garlic-pepper blend to mix. Add pork; seal bag and shake to coat.
  • In 5-quart Dutch oven, heat oil over medium heat. Add coated pork; cook, stirring occasionally, until pork is evenly golden brown.

STAGE 1 - THE PORK STOCK
3 c chicken stock, not broth
2 c lite beer, or more stock
2 - 3 bay leaves, dried
1 1/4 lb pork, chicken, seafood, more on this later
STAGE 2 - THE ROUX
5 Tbsp sweet butter, unsalted
5 Tbsp flour, all-purpose variety
STAGE 3 - THE VEGGIES
1 stalk(s) celery, small dice
1/2 medium green or red bell pepper, small dice
1/2 medium yellow onion small dice
2 clove garlic, finely chopped
STAGE 4 - THE TOMATOES AND SPICES
14 oz crushed tomatoes with juice, 1 can
8 oz tomato sauce, 1 small can
2 Tbsp worcestershire sauce
1 Tbsp dried parsley flakes
2 tsp ground fennel
1 tsp smoked paprika
1 tsp ground cumin
1 - 2 tsp creole spice, i prefer tony chachere's
STAGE 5 - FINISHING TOUCHES
1/4 c sherry, dry variety, or to taste
lemon (or lime) juice, freshly squeezed, to taste
white pepper, freshly ground, to taste

  • 1. PREP/PREPARE
  • 2. To make this recipe, you will need a small saucepan (for the stock), and a good pot, like a Dutch oven (for the stew).
  • 3. I have several ways to use the base. For this recipe I am using cubed pork tenderloin. However, it works great with chicken, beef, and is amazing with seafood. If you are using seafood (shrimp, scallops, cod, etc.), then toss in some cubed taters and turn it into a spicy red chowder.

  • 5. Can This Stew Be Frozen? Absolutely. Just place it into good single-serving containers, and it will last 4 - 6 months. Then, when you get the yearning for more, let the frozen stew sit on the counter for about an hour, and warm it up in a saucepan over low heat. I suppose you could always nuke it in the microwave. I would use low power for 2 minutes at a time until it is nice and warm.
  • 6. Gather your ingredients (mise en place).
  • 7. STAGE 1 - THE PORK AND STOCK
  • 8. Place the beer, chicken stock and bay leaves into a saucepan, then bring it up to a simmer.
  • 9. While the pot is coming up to the simmer, cube the pork into bite-size pieces.
  • 10. Add the cubed pork and simmer until tender, about an hour or so.
  • 11. Remove the meat from the stock and reserve; discard the bay leaves. Keep the stock warm by placing the saucepan over low heat.
  • 12. STAGE 2 - THE ROUX
  • 13. Add the butter to a pot, large enough to hold all the ingredients. Set heat to medium low and wait until the butter melts, and the foaming subsides. Add the flour and start whisking.
  • 14. Continue to whisk until it begins to brown, about 8 - 10 minutes. We are making a brown roux.
  • 15. When the roux begins to smell nutty, it is ready. Do not let it burn.
  • 16. Whisk in the stock, abouty a quarter cup at a time, until you have a base the consistency of a good English gravy.
  • 17. Something like this.
  • 18. You might need a bit more, or a bit less stock. We are looking for a certain consistency, not a precise amount of stock.
  • 19. STAGE 3 - THE VEGGIES (AND PORK)
  • 20. Add the bell pepper, chopped celery, onions, minced garlic, and reserved pork. You will notice that in addition to cubed pork, I added slices of homemade beef sausage.
  • 21. Gently simmer for about 10 - 12 minutes.
  • 22. STAGE 4 - THE TOMATOES AND SPICES
  • 23. Add the crushed tomatoes, the dry spices, and Worcestershire, then thin the base down with a bit more stock.
  • 24. The normal consistency would be halfway between a gravy and water. However, make it anyway you wish. For example, you could leave it thick and ladle it over some steamed rice. Or, you add enough stock to make it more of a soup. You choose.
  • 25. Continue to simmer for an additional 3 - 4 minutes.
  • 26. STAGE 5 - FINISHING TOUCHES
  • 27. Add the sherry, then simmer for 2 - 3 minutes.
  • 28. Finish it off with a some freshly squeezed lemon juice, and maybe a bit more salt or pepper, to taste.
  • 29. PLATE/PRESENT
  • 30. Serve while nice and warm with a fresh loaf of crusty bread, and maybe ladled over some steamed white rice. Enjoy.
  • 31. Keep the faith, and keep cooking.

1 can diced tomatoes (puree half)
4 serrano chili peppers, seeded and chopped
1 teaspoon ground cumin (more if you like cumin, up to a tablespoon is fine)
1 tablespoon ground oregano (Mexican preferably)
1 tablespoon chipotle chili powder (regular chili powder is not as hot)
¼ teaspoon Hungarian hot paprika (cayenne pepper can be substituted)
1 tablespoon black pepper (alternately, 2 tsp coarse black pepper and 1 tsp white pepper)
2 teaspoon dry mustard
Vegetable oil as needed for sautéing
2 large onions, diced
5 garlic cloves, minced
3 lbs lean pork (tenderloin is good), cut into 1/2- to 3/4-inch cubes
1 can black beans, rinsed
1 cup frozen corn (or equivalent in canned corn)
2 cups cooked rice (whole grain is best)
2 jalapeno peppers, seeded and finely minced
2 tablespoon hot pepper sauce
2 teaspoons white vinegar
2 teaspoon salt (or to taste)

Steps:

  • 1. In a large heavy saucepan on medium heat, add the broth, tomatoes, serrano and spices. 2. Heat oil in a large sauté pan over medium heat, sauté the onions and garlic. Add to saucepan. 3. Add more oil to the sauté pan if needed, add the pork and sauté until coloured. Remove from the pan and add to the saucepan. Deglaze the sauté pan with water or broth. 4. Bring the mixture to a boil; reduce the heat to a simmer. Cook, covered, for 1 hour, stirring occasionally. 5. Add beans, corn, and rice. Add the jalapenos, hot pepper sauce, vinegar, salt. 6. Cook, covered, at a simmer for about 20 minutes or until the beans, corn, and rice are warmed through. NOTE: This also works well in a slow cooker on high for 3-4 hours or low for 6-8 hours. Only add last 7 ingredients about 30 minutes before serving.

Steps:

  • Coat pork in flour(reserve 2 tbs flour). Heat oil in large saucepan over medium high heat; brown pork on all sides. Add 1 1/2 cups water, soy sauce, sherry, garlic, ginger,red pepper, fennel and scallion whites. Cover and bring to a boil; reduce heat and simmer for 30 minutes. Add carrots and simmer an additional 30 minutes longer or until pork and carrots are tender. Meanwhile combine reserved flour and 1/4 cup water and set aside. Stir scallion greens into pork mixture, simmer one minute. Add flour, bring to a boil. Cook and stir until mixture is slightly thickened. Serve over rice.

8 large green onion
2 lbs boneless pork,cut in 1" cubes
6 cloves of garlic, minced
1 TB cooking oil
7-8 large dried shitake mushroom
1 can whole water chestnuts
2 cups whole baby carrots
1/3-1/2 cup soy sauce
1/2 cup sherry
2 TB grated ginger root or crushed ginger (jar)
1/2 to 1 tsp crushed red pepper flakes
1 tsp 5 spice powder
cornstarch to thicken

Steps:

  • Soak mushooms in warm water until rehydrated, save soaking water, diced mushrooms and set aside. Add water to soaking water to make 3 cups, set aside. Cut green onion into 1" pieces, separating the white from the green pieces.. Heat oil in a 4 qt dutch oven. Brown garlic and pork in two batches. Return all meat to pot, add diced mushrooms and white part of onions, stir to brown slightly. Add reserved soaking liquid,soy sauce, sherry, spices, simmer covered for 30 minutes. Add carrots and simmer another 25 minutes, or until tender. Add water chestnuts and green part of onions, cook another minute or two. Make a slurry of cornstarch and water, add to simmering stew to thicken. Serve over hot rice or pan fried noodles.

2 tablespoons vegetable oil
3 pounds boneless pork shoulder, diced
Kosher salt
1 large white onion, diced
1 1/2 cups diced Hatch or Anaheim chile peppers
1 small green bell pepper, diced
1 small red bell pepper, diced
4 cloves garlic, minced
4 cups low-sodium chicken broth
1 pound Yukon gold potatoes, peeled and diced
2 15-ounce cans white hominy, drained and rinsed
1 large bunch cilantro, leaves chopped
2 tablespoons cornstarch
Flour tortillas, warmed, for serving

Steps:

  • Heat 1 tablespoon vegetable oil in a large Dutch oven over medium-high heat. Sprinkle the pork with 1 teaspoon salt. Working in batches, cook the pork, stirring, until browned, about 5 minutes. Transfer to a plate and discard the fat from the pot. Heat the remaining 1 tablespoon vegetable oil in the pot. Add the onion, chile peppers, bell peppers and garlic and cook, stirring occasionally, until softened, about 7 minutes. Return the pork to the pot along with the chicken broth; cover and bring to a boil. Stir the stew and reduce the heat to medium low; simmer, covered, until the pork is tender, about 30 minutes. Increase the heat to medium high and bring the stew to a low boil. Add the potatoes, hominy and enough water to cover the pork and potatoes. Add half of the cilantro and 1 teaspoon salt and cook, uncovered, stirring occasionally, until the potatoes are tender and the stew is slightly thickened, about 30 minutes. Whisk the cornstarch with 1/4 cup water in a small bowl until smooth. Stir into the stew along with the remaining cilantro and continue cooking, stirring occasionally, until the liquid thickens, about 5 more minutes. Serve with flour tortillas. 1 pound dried hominy
3 pounds boneless pork butt, cut into 2-inch-square chunks
1 tablespoon kosher salt, plus more to taste
1 teaspoon black pepper
3 tablespoons peanut or safflower oil
2 yellow onions, finely chopped
4 garlic cloves, finely chopped
1 tablespoon New Mexican chile powder (I used regular chile powder, which works fine)
1 teaspoon ground cumin
1 teaspoon Mexican oregano (I used regular oregano, also fine)
1 bay leaf
1 cinnamon stick
1 chipotle in adobo sauce (I used 2)
1 (12-ounce) bottle lager-style beer
2 pounds collard greens (about 2 bunches), center rib removed, leaves chopped
Lime wedges, for serving
Cilantro leaves, for serving

Steps:

  • Soak the hominy in plenty of water overnight or during the day for 8 hours or so. Drain.
  • Season the pork all over with salt and black pepper. Heat the oil in a large pot or Dutch oven over medium-high heat. Sear the meat in batches until well browned on all sides. Transfer to a plate. (If there's a lot of fat in there, you can pour a little of it out, but leave enough to cook the onions.)
  • Add the onion to the pot and cook until soft, 5 to 7 minutes (it'll get a little color from the pork bits in the pan). Add the garlic, chile powder, cumin, oregano, bay leaf and cinnamon. Cook 1 minute. Return pork to pot. Stir in the chipotle, hominy, beer, 6 cups water and 2 teaspoons salt. Simmer, covered, for 1 hour. Uncover and simmer for about 1 to 1/2 hours more until meat and hominy are tender, adding water as needed if too thick. (I wanted it thick, so let most of the liquid evaporate.) Stir in collards for last 20 minutes. Discard bay leaf and cinnamon. Taste and adjust seasonings. Ladle into bowls; garnish with lime, cilantro and, if you want, avocado and radish.
