Number Of Ingredients 9

4 ounces good-quality silver tequila
1 1/2 ounces agave syrup or simple syrup
4 1-inch chunks pineapple, plus wedges for garnish
2 sprigs fresh cilantro
2 1/4-inch-thick slices red chile pepper (with seeds), plus more for garnish
4 ounces pineapple juice
2 ounces lime juice (from about 2 limes)
1 ounce triple sec
Kosher salt, for the glasses (optional)

Steps:

  • Combine the tequila, agave, pineapple, cilantro and chile pepper in a large shaker; muddle with the end of a wooden spoon.
  • Add the pineapple juice, lime juice and triple sec to the shaker and fill with ice. Cover and shake vigorously for 15 seconds. Strain into 2 rocks glasses filled with ice. (Rim the glasses with salt, if desired.) Garnish with the pineapple wedges and more chile pepper.

2 slices pineapple, cored
1/2 Fresno chile, sliced lengthwise
2 ounces lime juice plus 2 lime wheels plus lime wedges, for rimming the glasses
Kosher salt, for rimming the glasses
4 ounces tequila blanco
3 ounces pineapple juice
1 1/2 ounces triple sec

Steps:

  • Preheat a grill to high heat.
  • Grill the pineapple and chile on both sides until charred, 2 to 3 minutes per side. Let cool.
  • Use the lime wedges to moisten the outer rims of 2 rocks glasses; dip in the salt. Fill with ice and set aside.
  • Muddle the chile and pineapple in a shaker until broken up. Add the tequila, pineapple juice, triple sec and lime juice. Shake vigorously for 30 seconds.
  • Strain into the glasses over the ice. Garnish each with a lime wheel.

1 tablespoon kosher salt
1/2 teaspoon chili powder, ground
1 lime wedge
8 ounces tequila, blanco
1/2 cup lime juice, freshly squeezed
1/2 cup pineapple juice
2 ounces Cointreau liqueur
1 teaspoon hot sauce

Steps:

  • Mix the salt and chile powder on a small plate. Rub the rims of 4 martini (or other gorgeous) glasses with the lime wedge, then dip the rims in the salt mixture to coat. Fill a cocktail shaker with ice, and add all of the remaining ingredients. Shake vigorously, then strain into glasses. Serve immediately.

1 tablespoon chile-lime seasoning, such as Tajin
1 tablespoon kosher salt
1 1/2 teaspoons sugar
1 lime wedge
Grilled Pineapple, recipe follows
Grilled Jalapenos, recipe follows
2 ounces Santo Mezquila
2 ounces pineapple juice
1 ounce freshly squeezed lime juice
1/2 ounce agave nectar
1 fresh pineapple
4 jalapenos

Steps:

  • For the rim: Mix the chile-lime seasoning with the salt and sugar on a small plate. Run the lime wedge around the rim of a margarita glass, then dip the glass into the mixture to coat the rim. Fill with ice and set aside.
  • In a cocktail shaker or pint glass, add 4 quartered Grilled Pineapple pieces and 5 Grilled Jalapeno rings. Muddle hard.
  • Fill the shaker two-thirds of the way with ice, then add the Mezquila, pineapple juice, lime juice and agave. Cap the shaker and shake vigorously for 15 to 20 seconds. Strain the contents into the prepared margarita glass.
  • Place half a Grilled Jalapeno piece and half a Grilled Pineapple piece in the cocktail and serve.
  • Preheat a grill over medium-high heat.
  • Cut the pineapple into 1/2-inch-thick round slices (at least 6 pieces). Grill until well charred and marked, approximately 90 seconds per side. Cut two-thirds of the pineapple rounds into quarters. Cut the remaining pineapple rounds into halves for garnish.
  • Preheat a grill to medium-high heat.
  • Grill the whole jalapenos until well-marked, approximately 90 seconds per side. Cut 2 jalapenos into rings. Cut the other 2 lengthwise, leaving stems attached, and remove the seeds. Use the halves for garnish.
