SHRIMP PENNE WITH CREAMY ROSA PASTA SAUCE

24 oz jar Bertolli® Organic Fire Roasted Garlic Marinara Sauce
15 oz jar Bertolli® Organic Creamy Alfredo Sauce
12 oz box Penne pasta
2 lbs. cooked shrimp
1 tablespoon extra virgin olive oil
Small container grape tomatoes (about a cup and a half)
2 cups fresh spinach
Grated Parmesan cheese

Steps:

  • Add Marinara and Alfredo sauces to a dutch oven or large pot and heat on medium to create a Rosa sauce. When it begins to bubble, reduce heat to low and simmer, stirring occasionally.
  • Bring water to boil and prepare Penne according to package directions, cooking JUST to al dente. Drain pasta and rinse immediately in cold water to prevent further cooking. Set aside.
  • Add 1 tablespoon extra virgin olive oil to a hot skillet and scorch tomatoes, stirring frequently until they pop and start to shrivel slightly. Set aside.
  • Add fresh spinach to Rosa sauce until wilted. Add cooked shrimp, penne and scorched tomatoes into Rosa sauce and let sit for a few minutes.
  • Serve with fresh grated Parmesan cheese and basil (optional)

3 cups uncooked penne pasta (about 12 ounces)
1 tablespoon olive oil
1 tablespoon butter
1/2 teaspoon crushed red pepper flakes
2 pounds uncooked shrimp (31-40 per pound), peeled and deveined
1 jar (24 ounces) marinara sauce
3/4 cup half-and-half cream
4 cups chopped fresh spinach

Steps:

  • Cook pasta according to package directions; drain., In a large skillet, heat 1/2 tablespoon each butter and oil over medium-high heat. Saute 1 pound shrimp with 1/4 teaspoon pepper flakes until shrimp turns pink, 3-5 minutes. Remove from pan; repeat., In same skillet, combine marinara sauce and cream; bring to a boil over medium heat. Stir in spinach until wilted. Add pasta and shrimp; toss and heat through.

1 (16 ounce) package penne pasta
2 tablespoons olive oil
¼ cup chopped red onion
1 tablespoon chopped garlic
¼ cup white wine
2 (14.5 ounce) cans diced tomatoes
1 pound shrimp, peeled and deveined
1 cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat the oil in a skillet over medium heat. Stir in onion and garlic, and cook until onion is tender. Mix in wine and tomatoes, and continue cooking 10 minutes, stirring occasionally.
  • Mix shrimp into the skillet, and cook 5 minutes, or until opaque. Toss with pasta and top with Parmesan cheese to serve.

12 ounces whole wheat penne
1 tablespoon olive oil
4 garlic cloves, minced
1 pinch crushed red pepper flakes
8 ounces button mushrooms, sliced
2 medium tomatoes, chopped (about 1/2 lb.)
salt and pepper, to taste
4 cups fresh spinach
10 ounces medium raw shrimp, peeled and deveined
1/2 cup marinara sauce
1/3 cup 0% plain Greek yogurt
1/4 cup grated parmesan cheese

Steps:

  • Cook penne according to package directions. Drain and set aside.
  • In a large skillet with a lid, heat olive oil over medium-low heat. Add in garlic and red pepper flakes, cook for 2 minutes or until garlic begins to soften.
  • Add in mushrooms, tomatoes, salt and pepper. Cook for 5 minutes, or until mushrooms begin to release their water.
  • Turn heat up to medium-high and add in shrimp. Cook for 1-2 minutes, or until shrimp are pink and opaque. Remove from heat, add in spinach and cover skillet. Let spinach wilt for 2 minutes.
  • Remove lid and place skillet back over low heat. Add the penne, Greek yogurt and pasta sauce. Stir until sauce is mixed well and all pasta and veggies are coated. Heat until just warmed through. Divide into pasta bowls and serve topped with parmesan cheese.

I found the original recipe in an old (1990's) Southern Living Magazine. I changed a few things and tweeked a few things, and came up with this recipe. Hubby and I love it. I serve it hot, right out of the electric skillet with some crispy garlic bread.

1 lb uncooked linguine
1 lb unpeeled large raw shrimp
4 tablespoons butter or 4 tablespoons margarine
1 medium sweet onion, chopped
2 -3 cloves garlic, minced
1 tablespoon cajun seasoning or 1 tablespoon creole seasoning
1 cup heavy cream
1/2 cup freshly grated parmesan cheese
1 teaspoon dry crushed red pepper
1/3 cup chopped fresh parsley or 2 tablespoons dried parsley

Steps:

  • Cook linguine according to package directions; keep warm.
  • Peel and devein shrimp; set aside.
  • Melt butter in a large electric skillet set on medium temperature.
  • Add onions and garlic to skillet; saute until tender.
  • Stir in cajun or creole seasoning; cook, stirring constantly for 1 minute.
  • Stir in shrimp and saute until barely pink.
  • Add heavy cream; reduce heat to medium low, and simmer for 3 minutes, stirring often.
  • Stir in linguine, parmesan cheese, and crushed red pepper, cook mixture, stirring gently, until thoroughly heated.
  • Stir in parsley; serve immediately.
