SUNNY'S SPICY PB&J WINGS

3 pounds chicken wings, whole or separated, as you like
Kosher salt and freshly ground black pepper
2 cups all-purpose flour
Peanut or vegetable oil, for deep-frying
1/2 cup peanuts, toasted and roughly chopped, for garnish
1 cup smooth peanut butter
1 cup grape jelly
3/4 cup coconut cream
1/4 cup soy sauce
1 tablespoon plus 1 teaspoon sriracha hot chili sauce
1/4 cup hot water
Kosher salt and freshly ground black pepper

Steps:

  • For the wings: Place the wings on a baking sheet and season both sides with salt and pepper.
  • Pour the flour in a paper bag or large bowl and toss the wings in the flour in batches, then place on a wire rack set inside a baking sheet or on the counter. Let rest to come to room temperature, at least 30 minutes and up to 2 hours.
  • For the sauce: In a small pot over medium heat, combine the peanut butter, jelly, coconut cream, soy sauce and sriracha. Slowly whisk in the hot water to loosen the mixture. Bring the sauce to a simmer, then whisk as it thickens, about 5 minutes. Taste and season with a pinch of salt, if needed, and a few grinds of black pepper.
  • Fry the wings: In a Dutch oven, large pot or fryer, pour enough oil to deep-fry the wings, about 6 inches. Heat the oil to 360 degrees F. When you add your wings, the temperature will settle at 350 degrees F. Try to keep it there by adjusting the heat.
  • Fry the wings in batches until golden brown, 12 to 14 minutes. Drain on paper towels.
  • Sauce and garnish the wings: Place some of the sauce in a large bowl and toss the wings in batches, adding more sauce to thoroughly coat. Place the wings on a serving tray and sprinkle with the chopped peanuts. Serve warm.

3/4 cup peanut butter
3/4 cup jelly of choice (I used grape)
1/2 cup soy sauce
2 Tbsps hot sauce of choice (I used Sriracha)
1 Tbsp worcestershire sauce
3 cloves garlic (minced)
4 pounds jumbo, split chicken wings

Steps:

  • Add the peanut butter, jelly, soy sauce, hot sauce, worcestershire sauce, and garlic to a saucepan. Bring to a boil and whisk it all together. Remove from heat once it's melted.
  • Pat the chicken wings dry and place in a gallon size plastic bag. Pour 1/4 of the peanut butter and jelly sauce over the wings and massage the bag until evenly mixed. Marinate in the fridge several hours or overnight.
  • Cook the wings according to one of these methods.Smoker: Place the chicken wings in a smoker set to 250 degrees for two and a half hours. Flip them halfway through. Brush with the sauce during the last half hour. Check the internal temp to make sure they are at 170 degrees before serving.Oven: Place wings on a lined baking sheet and put in a 400 degree oven for 45 minutes, flip them halfway through.   • Serve with the leftover peanut butter and jelly sauce for dipping.Note: The sauce gets thicker at room temp, warm it slightly if you prefer a thinner sauce.

13 ounces tart cherry jelly
1/2 cup natural creamy peanut butter
2 tablespoons apple cider vinegar
2 tablespoons cherry juice
1 teaspoon sriracha
12 chicken drumettes
Chopped peanuts

Steps:

  • In a medium-sized mixing bowl whisk together jelly, peanut butter, vinegar, juice, and sriracha. Pour peanut butter mixture into a 1-gallon zip-top bag and add in chicken wings. Securely close the bag and using your hands make sure all the chicken is coated. I just move around the chicken until it's fully covered. Place the bag (zip side up) in a small casserole dish and let the chicken marinate overnight. (I place it in a small casserole dish just in case there is a leak in the bag.) When you're ready to make your chicken wings preheat your grill to medium heat, add your wings, and cook for about 10 minutes until the outside is crisp and the chicken is fully cooked. Serve with a sprinkling of peanuts if desired.

These spicy Chinese-inspired wings came from a cookbook called, "Blue Corn and Chocolate". The flavor is best when the wings are slightly warm or at room temperature. I also use this sauce to make a great main dish using chicken breasts! Chef note: Try lining pan with parchment paper. It is great for cakes and cookies, but fabulous for oven fries and chicken wings etc. Nothing sticks to it and makes cleanup so much easier."

2 lbs chicken wings
salt and pepper
2 tablespoons peanut butter
2 tablespoons soy sauce
1 1/2 tablespoons honey
1 garlic clove, crushed
1/4 teaspoon crushed red pepper flakes
1/3 cup dry roasted salted peanut, finely chopped
fresh cilantro, chopped

Steps:

  • Chop tips off the chicken wings; discard.
  • Preheat oven to 400 degrees.
  • Line a baking pan with foil (this will save clean-up later).
  • Place the chicken wings in a single layer on the tray; salt and pepper them lightly.
  • Bake the wings for about 30 minutes until they are just beginning to brown and get crisp.
  • While the wings are baking, combine the peanut butter, soy sauce, honey, garlic, and the hot peppers in a small saucepan.

You'll need lots of napkins with this finger licking good wings. The glaze is amazing and spicy with the right amount of sweetness.

1/3 c instant mashed potato flakes
2 Tbsp canola oil
1 Tbsp salt
4 lb chicken wings separated at joint and tips cut off and discarded
1/4 c smooth or natural peanut butter
1/4 c spicy jelly i used a hot raspberry jelly but you can use jalapeno jelly or whatever flavor you want
1/4 c rice vinegar
3 Tbsp soy sauce
1 Tbsp toasted sesame oil
2 Tbsp honey
1/2 tsp sambal olek sauce

Steps:

  • 1. Preheat oven 425 degrees. Line a baking sheet with parchment paper or silicone baking mat.
  • 2. Whisk the mashed potato flakes, canola oil, and salt together. Add the wings with hands massage the mixture onto the wings. Place the wings on the baking sheet and bake for 20 minutes. Turn the wings and bake 20 more minutes.
  • 3. Meanwhile mix the remaining ingredients together in a large bowl. Once the wings have baked toss in the peanut butter and jelly mixture and place back in oven pouring any remaining sauce on wings and bake another 5 minutes.
