1 pound beef tenderloin, cut into 1/2 inch strips
¼ cup orange juice
¼ cup seasoned rice vinegar
2 tablespoons soy sauce
1 tablespoon hot chile paste (such as sambal oelek)
1 tablespoon brown sugar, or to taste
2 cloves garlic, minced
¼ cup water
1 teaspoon cornstarch
cooking spray
2 tablespoons grated orange zest
1 bunch green onions, sliced - white parts and tops separated
salt and freshly ground black pepper to taste

Steps:

  • Combine beef, orange juice, rice vinegar, soy sauce, hot chili paste, brown sugar, and garlic in a large bowl. Cover and refrigerate for 1 to 2 hours.
  • Strain beef in a colander set over a large bowl, allowing beef to drain thoroughly, about 5 minutes. Reserve marinade.
  • Stir water and cornstarch into the bowl of marinade. Whisk until cornstarch is dissolved, set aside.
  • Spray skillet with cooking spray and place over high heat. Cook beef for 1 minute without stirring; cook and stir for an additional minute.
  • Stir in light parts of green onion and orange zest; cook for 30 seconds.
  • Stir in marinade and green onion tops; cook and stir until beef is no longer pink inside and sauce is reduced and thick, about 2 to 3 minutes.
  • Season with salt and black pepper to taste.

six 1-inch-thick boneless beef blade steaks, pierced all over on both sides with a fork
2 large red bell peppers, quartered
the zest from 2 navel oranges, removed with a vegetable peeler
1 cup fresh orange juice
1/3 cup vegetable oil
2 garlic cloves
1 tablespoon soy sauce
1 teaspoon dried hot red pepper flakes
1 tablespoon cider vinegar
1/2 teaspoon salt

Steps:

  • In a large shallow dish arrange the blade steaks in one layer and add the bell peppers. In a blender blend together the orange zest, the orange juice, the oil, the garlic, the soy sauce, the red pepper flakes, the vinegar, and the salt until the marinade is smooth, pour the marinade over the steaks and peppers, coating them thoroughly, and let the mixture marinate, covered and chilled, overnight.
  • Grill the steaks and the peppers, the marinade discarded, on an oiled rack set 5 to 6 inches over glowing coals for 8 minutes on each side for medium-rare steaks, transfer them to a platter, and let the steaks stand for 5 minutes.

2 pounds beef top round
2 small onions
2 tablespoons cooking oil
1/2 can orange juice concentrate
2 cubes beef bouillon
1/2 teaspoon hot red pepper flakes

Steps:

  • Cut the beef into thin strips and slice the onion. Heat 2 tablespoons of oil in a large skillet over a high flame. Season the beef with salt and pepper. Saute the beef until it just begins to brown. Add the orange juice, bouillon cubes and pepper flakes. Simmer until the beef is just done. If the sauce is thin, strain through a colander, reserving the beef. Return the sauce to a saucepan over a high heat. Reduce until the sauce reaches a desirable consistency or thicken with a little cornstarch.

2 Tbsp corn oil
1/4 c orange peel, grated
1 can(s) clove garlic, minced
1/2 tsp ground ginger
1 Tbsp cornstarch
1 c beef broth
1/4 c soy sauce
1/2 c dry sherry
1/4 c orange peel, slivered
1/2 tsp crushed dried red pepper
1/3 c marmalade

Steps:

  • 1. In Wok heat oil to medium heat and add meat 1/3 at a time.
  • 2. Stir fry 3 minutes or until browned.
  • 3. Return all beef to wok and add: peel, garlic and ginger.
  • 4. Stir fry 1 minute.
  • 5. Stir together: corn starch, beef broth, soy sauce, sherry, marmalade and pepper.
  • 6. Stir into beef.
  • 7. Stirring constantly, bring to boil over medium heat.
  • 8. Boil 1 minute.
  • 9. Serve over rice.

1 orange, zest of
2 garlic cloves, minced

500 g beef
1/2 cup broth

1 tablespoon honey

  • Cut the carrot, chili pepper, garlic, and orange zests. Set aside.

1/4 cup orange marmalade
1/2 teaspoon ground ginger

This is an easy recipe to make with any type of ground meet you have available.

1 lb ground beef (80/20)
1/2 lb ground turkey
1 orange (zest & juice)
1/3 c green onion, diced
2 clove garlic, minced
1/2 tsp ground ginger
1 Tbsp cornstarch
1/4 c soy sauce (or bragg's liquid aminos)
1/4 c dry sherry
1 tsp crushed red pepper flakes
1/2 c orange marmalade (low-sugar or sugar-free)
1/4 c italian breadcrumbs, fine

Steps:

  • 1. In a small sauce pan, combine ground ginger, cornstarch, soy sauce, (or Bragg's Liquid Aminos), dry sherry, crushed red pepper flakes, and orange marmalade.
  • 2. Ensure all ingredients are combined and allow the mixture to come to simmer for about 5 minutes. Do NOT boil!
  • 3. Once the mixture has simmered for 5 minutes, remove from heat and allow to cool. This takes about 1 hour. *TIP: You can pour the mixture in a bowl and place it in the freezer for 20-25 minutes to speed up the cooling process.
  • 4. In a large mixing bowl, add ground meat, zest & juice of one orange, green onions, breadcrumbs and minced garlic. *TIP: Allow ground meat to come to room temperature before handling.
  • 5. Pour 1/2 of the room temperature marmalade mixture into the ground meat mixture and gently combine. Set aside the other 1/2 of the sauce for serving.
  • 6. Tightly cover (with cling wrap) and allow to marinate at least 2 hours up to 24 hours.
  • 7. Preheat over to 375 degrees & line a baking sheet with foil. Spray foil with non-stick spray.
  • 8. At room temperature, form a golf ball size amount of meat into balls. The mixture will be slightly sticky
  • 9. Once each meatball is formed, place on the lined baking sheet with space between each one.
  • 10. Bake meatballs st 375 degrees for 22 minutes. Then bake at 325 degrees for 22 minutes.
  • 11. Once baking is completed, immediately remove baking sheet from oven and place the meatballs into an over-safe container with a lid. Pour the remainder of the marmalade mixture over the cooked meatballs along with 1 Tbsp. Sriracha sauce and cover.
  • 12. Allow the sauce at least 20 minutes to absorb before serving. A serving is 2 meatballs.

6 cloves garlic, minced

1/4 cup soy sauce

2 tablespoon cornstarch
3 tablespoon cold water

Steps:

  • Season beef with salt and pepper. Put oil in the cooking pot and select browning. When oil begins to sizzle, brown meat in batches until all meat is browned-do not crowd. Transfer meat to a plate when browned. When all meat is browned select Sauté and add garlic to the pot. Sauté for 1 minute.   • Combine beef, orange juice, rice vinegar, soy sauce, hot chili paste, brown sugar, and garlic in a large bowl. Cover and refrigerate for 1 to 2 hours.
  • Strain beef in a colander set over a large bowl, allowing beef to drain thoroughly, about 5 minutes. Reserve marinade.
  • Stir water and cornstarch into the bowl of marinade. Whisk until cornstarch is dissolved, set aside.
  • Spray skillet with cooking spray and place over high heat. Cook beef for 1 minute without stirring; cook and stir for an additional minute.
  • Stir in light parts of green onion and orange zest; cook for 30 seconds.
  • Stir in marinade and green onion tops; cook and stir until beef is no longer pink inside and sauce is reduced and thick, about 2 to 3 minutes.
  • Season with salt and black pepper to taste.

I was a child bride {you believe me don't you?} Over the years I've tweaked it somewhat adding this and taking out that, and this is what I came up with a few years back. 1 bag instant white rice {or you can use long grain rice}
12 ounce can of frozen orange juice {make sure it does not say "drink"}
2 & 1/2 tablespoon white rice vinegar
2 tablespoon hoisin sauce
1 tablespoon turbinado sugar + 1 teaspoon
1 teaspoon fried chili paste {if you can't find the fried use sambal oelek}
2 teaspoons coarse sea salt {divided}
1 pound sirloin or round steak {cut into thin strips}
¼ cup cornstarch
1 teaspoons fresh ground pepper
½ red, yellow and orange bell pepper, (ribs and seeds removed) cut into strips
1 medium/large jalapeno pepper {cut fine} leave in as much or as little of the veins and seeds that suites your taste
2 bunches green onions about 14{sliced on the diagonal 1 inch both white and green parts}
1 bunch broccoli, cut into small pieces {blanched in salt water}
2 tablespoons vegetable oil {add more if necessary}

Steps:

  • 1. In a small bowl, combine orange juice, vinegar, Hoisin sauce, chili paste, salt and 1 tablespoon sugar; set aside.
  • 2. In a baggie large enough to hold the steak, toss with the cornstarch; seasoned with 1 teaspoon salt and pepper, set aside.
  • 3. Bring a pot large enough to hold the broccoli to a rolling boil, salt it with 1 teaspoon of salt and blanch for maybe a minute or 2. Once the broccoli turns a bright green remove them and put it into ice water to stop the cooking. Drain in a colander and set aside. We like our vegetables with a little crunch but if you like your vegetables softer cook them for a minute or two longer. DO NOT THROW OUT THE BROCCOLI WATER. I'll explain in my notes.
  • 4. In a wok or skillet, heat 1 tablespoon oil over medium/high heat. Add the sweet peppers, green onions and jalapeno pepper and cook for about 3 to 4 minutes, remove and set aside.
  • 5. Get the pan very hot again, add another tablespoon of oil and shake off excess cornstarch from the meat and add half the beef; cook until browned, 2 to 4 minutes. Using slotted spoon, transfer beef to plate. Repeat with remaining oil and remaining beef.
  • 6. Cook rice according to package instructions; set aside.
  • 7. Add the orange-juice mixture to the hot pan plus the 1 teaspoon of sugar {leave in any oil and bits from the steak} and cook over high heat until sauce thickens, 2 to 4 minutes or until it reduces to almost 1 cup. Then add the peppers/onions, stir and cook for about 2 minutes and return the beef to the hot pan; cook long enough to get the sirloin hot. The last minute of cooking the beef add the broccoli and stir to get it hot.
  • 8. Serve over rice. Season with more salt and pepper if necessary.

3/4 lb beef top round steak, trimmed of all visible fat, cut into thin strips
2 tablespoons cornstarch
2 teaspoons orange zest
1/2 cup low sodium beef broth
1/4 cup orange juice
2 tablespoons reduced sodium soy sauce
1 tablespoon sugar
1 1/2 teaspoons chili-garlic sauce
1/4 teaspoon crushed red pepper flakes
4 teaspoons canola oil
1 tablespoon gingerroot, minced peeled
1/4 lb green beans, halved crosswise
1 red bell pepper, seeded and cut into thin strips
1 carrot, cut into thin strips (matchstick size)

Steps:

  • Combine beef, 1 tbsp cornstarch, and orange rind in medium bowl.
  • Toss well to coat and set aside.
  • Combine remaining 1 tbsp cornstarch, broth, orange juice, soy sauce, and chili-garlic sauce in small bowl; set aside.
  • Heat nonstick skillet (large) over med-high heat until a drop of water sizzles.
  • Add 2 tsp oil, then add beef.
  • Stir-fry until cooked through.
  • Transfer to a plate.
  • Add remaining 2 tsp oil, then add the ginger.
  • Stir-fry until fragrant.
  • Add the green beans, bell pepper, and carrot.
  • Stir fry until crisp-tender.
  • Add the broth mixture and cook, stirring constantly, until the mixture boils and thickens, about 1 minute.
  • Add the beef and cook until hot.

2 lb. round steak, thinly sliced
2 tbsp. vegetable oil
4 oranges
2 clove minced garlic
1/2 tsp. minced fresh gingeroot
1 onion
2 tbsp. cornstarch
1 c. beef broth
1/4 c. soy sauce
1/2 tsp. crushed red pepper

Steps:

  • In a wok stir-fry the beef for 3 minutes or until browned (in small batch). Stir fry the onion (you can add some broccoli). Return all the meat to the wok. Add the orange peel, garlic and ginger. Stir-fry 1 minute. Mix the beef broth, soy sauce, cornstarch and pepper. Add the mixture to the wok. Add the oranges cut in small pieces. Bring to a boil over medium heat and boil 1 minute. Serve on white cooked rice.

2 teaspoon(s) minced garlic
1 bunch(es) green onions, sliced diagonally
- salt & pepper to taste
1/4 cup(s) water
1 teaspoon(s) cornstarch
2 tablespoon(s) orange zest or peel

Steps:

  • In lg bowl, combine beef strips, orange juice, vinegar, soy sauce, hot chili paste, brown sugar and garlic, stir to coat. Refrigerate 1 hr to marinate.
  • Strain beef in colander over lg bowl. Reserve marinade. Stir water and cornstarch into marinade. Whisk until cornstarch is dissolved.
  • Spray a wok or lg skillet w/cooking spray. Place over high heat. Cook beef, stirring for 1 min. Cook 1 min more. Stir in white parts of green onions and orange zest. Cook, stirring for 1 min. Stir in marinade and green parts of green onions. Cook, stirring until beef is no longer pink. Season w/ salt and pepper. Serve over rice or noodles.
