SPICY BUFFALO ONION RINGS AND BLUE CHEESE DIP
Steps:
- Fill a large heavy saucepan with 2 to 3 inches of cooking oil and heat over medium-high heat. The oil temperature should be at 350 degrees F when you start frying.
- In a large bowl, mix the eggs and milk; then add the flour and baking powder and mix thoroughly with a hand-held mixer. Strain the mixture to remove any lumps. Add more milk if you want a thinner crust. In a small bowl, mix the Cajun spice mix, cayenne pepper, white pepper, black pepper, dry mustard, and salt. Add this spice mixture to the batter. Cut the onions into thick slabs, dunk them in the batter, and fry them, in batches, in the oil until golden brown. Serve the onion rings with the Blue Cheese Dip, sliced carrot, and celery.
- In a large bowl, mix all the ingredients together. Season with salt and pepper, to taste. Serve the sauce in a side bowl for dipping.
CARIBBEAN LIME ONION RINGS WITH SPICY DIPPING SAUCE
A delicious poolside snack - or a great accompaniment for a barbecue. These tangy onion rings are delicious served with the spicy lime dip. I have also used low-fat mayonnaise, in an attempt to lighten the calories!

- Peel onion and cut into 1/4-inch slices, separating rings.
- In a medium-size bowl, combine flour, cornmeal, lime zest, baking powder, baking soda, salt and cayenne pepper.
- In a large bowl, combine the egg and buttermilk and stir. Add the flour mixture, and whisk until blended.
- Heat oil over medium-high heat in a heavy fry pan until temperature reaches 375°F.
- Dip onion rings into batter and carefully put into hot oil. Fry until golden brown, about 2 minutes, turning after one minute. Remove with fork and place on paper towels to absorb oil. Serve with Lime Dipping Sauce.
- Lime Dipping Sauce: Blend ingredients well. Make at least 30 minutes before serving.
SPICY OVEN BAKED ONION RINGS
I am not a fan of fried foods. After trying a few different oven baked recipes, I came up with this one. Feel free to cut out the jalapeno or lessen the cayenne if you don't like spicy rings.

My mom used to make these when I was growing up. We rarely fry things in our house these days, but these are so yummy that we have to make them on occasion! These have just a slight spicy flavor...enough to make these onion rings unique!

- Heat approximately one inch vegetable oil over medium high heat.
- Test the oil by putting a small cube of bread into the oil.
- If it turns brown after half a minute, the oil is ready.
- Cut the ends off the onion and peel the outer layers.
- Cut the onion into 3/4 inch slices and separate into rings.
- Mix together the pancake mix and beer.
- Add the paprika, chili powder and cayenne pepper to the mix.
- Take 5-6 of your "rings" and coat the rings of onion in the batter then fry for approx 5 minutes until both sides are golden brown.
- Turn over once during the frying process so both sides are cooked.
- Remove from oil and place on paper towels to drain.
- Season the onion rights with salt while they are still hot.

- Cut onions into 1/2 inch thick rings and pop the internal rings out until you have a nice sturdy onion ring. Brush onion with hot sauce. - 1. In a medium sauce pan add vinegar, water, sugar, salt, pickling spice, jalapeno, and habenero peppers. Heat on medium heat until boiling and boil for 1 minute. Stir to dissolve sugar and salt.
- 2. Remove from heat and allow to cool to room temperature and pour over onions in a glass container. Cover and refrigerate until ready to use. I let mine marinade about 3 hours.
- 3. Preheat deep fryer to 350 degrees. In a measuring cup combine buttermilk and egg and whisk to combine.
- 4. In another container combine cornmeal, flour, baking powder, salt, and garlic powder.
- 5. Remove the onion slices from the pickling liquid. Do not pat them dry.
- 6. Drop them into the cornmeal mixture and set aside.
- 7. Place slices one at a time into the buttermilk mixture, followed by the cornmeal mixture. Shake loose flour off onion rings and set aside.
- 8. Drop dredged onion slices - 3 or 4 at a time - into deep fryer and cook until golden about 3 minutes. Drain on paper towels. Try to allow them to cool a little before devouring with your favorite dipping sauce. Enjoy!
