SPICY MINCE WITH RICE & SPINACH
This recipe is on a sheet cut out from a magazine years ago. I think it's probably family circle, but not certain. Made it quite a lot for a while, but then stopped. We seem to be returning to our old favourites here for a while.

Steps:
- Heat the oil in a LARGE pan, add the onion and fry for 3- 4 minutes until softened.
- Add the garlic and spices and fry for another 3 minutes.
- Add the minced beef and cook for 4 to 5 minutes or until all the meat has browned.
- Add the stock and bring to the boil.
- Cover and simmer for 40 minutes until all the meat is tender.
- MEANWHILE cook the rice in a pan of boiling water for 10- 12 minutes until just tender.
- Add the spinach to the rice and cook for just 30 seconds.
- Drain well and stir rice and spinach mixture into the minced beef mixture, together with the sultanas and almonds.
- Transfer the mixture to a warmed serving dish and serve with naan breads.
MINCED BEEF AND SPINACH CURRY
A hearty, flavourful and nutritious curry dish. Pared-down ingredients and a simple technique, resulting in surprisingly deep and complex flavours. Goes VERY nicely with brown rice or wholewheat flatbreads. Compliments a fresh, herby salad well.

Steps:
- Chop the onion and crush the garlic. Slice the scotch bonnet into thin slivers and chop these finely.
- Heat the oil in a deep-sided frying pan/skillet and cook the onions, garlic and pepper until soft. Add the minced beef and brown off.
- Place the balls of frozen spinach into the pan on top of the beef. Cover and cook on a medium heat until spinach is softened. Stir thoroughly.
- Add the cinnamon, coriander, cumin and garam masala. Stir thoroughly to blend in spices, then add the chopped tomato.
- Increase heat and cook until the sauce reduces and thickens. Add salt to taste.
