1 lb. extra-lean ground beef
1 (11-oz.) can vacuum packed whole kernel corn, drained
1/3 cup hot picante salsa
1/2 cup thinly sliced green onions with tops
2 tablespoons chopped fresh cilantro
1/2 to 1 teaspoon salt
1 teaspoon cumin
1 teaspoon finely chopped garlic
1 egg white
1 (28-oz.) can whole tomatoes, undrained, cut up
1 (15.5-oz.) can dark or light red kidney beans, drained
1 cup beef broth
2/3 cup hot picante salsa
2 tablespoons chopped fresh cilantro
1 cup chopped green bell pepper
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon finely chopped garlic
1/4 cup chopped fresh cilantro
1/4 cup chopped green onions with tops
1/4 cup dairy sour cream

Steps:

  • In large bowl, combine ground beef, 1/2 cup of the corn and remaining meatball ingredients; mix well. Shape into 1-inch balls; place on cookie sheet. Refrigerate 30 minutes or until set.
  • In 5-quart Dutch oven or stockpot, combine remaining corn and all soup ingredients. Bring to a boil over high heat. Reduce heat to low; carefully add uncooked meatballs. Simmer uncovered 45 to 60 minutes or until flavors blend and meatballs are no longer pink in the center. Garnish individual servings with toppings.

1 tablespoon olive oil
1 medium onion, chopped (1/2 cup)
3 cans (14.5 oz each) diced tomatoes with Italian herbs, undrained
3 1/2 cups chicken broth (from 32-oz carton)
1 tablespoon Sriracha sauce
1/2 teaspoon garlic salt
4 oz uncooked angel hair (cappellini) pasta, broken into 2-inch pieces
24 frozen cooked meatballs (from 24-oz bag)

Steps:

  • In 5-quart Dutch oven or saucepan, heat oil over medium-high heat. Cook onion in oil about 3 minutes, stirring occasionally, until tender. Stir in tomatoes, broth, Sriracha sauce and garlic salt. Heat to boiling, stirring occasionally.
  • Stir in pasta and meatballs. Heat to boiling; reduce heat. Cover and simmer about 6 minutes, stirring occasionally, until pasta is tender and meatballs are thoroughly heated.

ALBóNDIGAS AL CHIPOTLE (SPICY MEATBALL SOUP)

1 pound(s) ground beef
1 pound(s) ground pork
1 cup(s) cooked rice (leftover is great!)
1 1/2 teaspoon(s) (give or take) mexican dry oregano
1 - egg
- salt and pepper to your liking
4 large ripe tomatoes, chopped (try to conserve juice)
2-3 clove(s) garlic, minced
1 pinch(es) cumin seeds
1 large onion, chopped
6-8 cup(s) chicken broth (bouillon, tetra-pak, homemade...whatever)
1-2 tablespoon(s) olive oil, extra virgin
- salt and pepper to taste
2 - carrots, julienned
1 - potato, julienned
1-2 sprig(s) fresh oregano or epazote (herb found in latino markets)
1-3 - canned chipotle chiles en adobo (depends on your tolerance for heat)

Steps:

  • For the broth: On medium heat, in a pot, saute the onion, garlic and cumin seeds in the olive oil until the onions are translucent. Add tomatoes and continue to simmer slow and low. It's ready when the tomatoes are cooked down and it looks saucy. You may need to add a little broth. At this point, either transfer tomato sauce to a blender jar with the chipotles, or if you have a hand-held blender, throw the chipotles in the pot and blend there with a little broth. When your tomato sauce is smooth, transfer back to the pot, add all of the broth, carrots, potatoes and fresh herbs, S&P, cover, and bring to a steady simmer for about 20 minutes or so. (I like to add zucchini, and kale if I have it. Add it a little later though.)
  • Meatballs: In a large bowl, combine ground beef and pork, rice, oregano, egg, S&P with your hands. It's fun. Form into balls, size is up to you. I wouldn't recommend larger than baseball sized or they might fall apart. Gently add the meatballs to the soup one at a time. When they are good and buoyant and firm, they're done. Serve in deep bowls. Have fresh, chopped white onion, cilantro, lime wedges and chopped avocado for a garnish, and of course, plenty of warm corn tortillas! ¡Buen provecho!

1 lb ground beef
1 large egg, beaten
1/3 cup Italian seasoned breadcrumbs
1/4 cup grated parmesan cheese
salt and pepper, to taste
2 tablespoons extra virgin olive oil
2 carrots, diced
2 celery, diced
1 medium onion, diced
5 garlic cloves, minced
1/2 cup wine
14 ounces cannellini beans, drained
15 ounces Rotel Tomatoes (we use extra hot)
3 cups chicken stock
2 cups beef stock
1 cup egg noodles

Steps:

  • Combine meat, egg, bread crumbs, salt, pepper, and cheese. Thoroughly mix with hands. Form into small bite size meatballs. Bake at 350 degrees for 20 minutes until browned. Drain fat.
  • Meanwhile heat oil in pan. Saute carrots, celery, onion, and garlic until limp. Stir in red wine. Heat for one minute. Add beans, stocks, and tomatoes. Heat to boil.
  • Add meatballs and noodles. Cook for six minutes.

This started as a pantry soup, whatever I had on hand. But it was a hit so I wrote it all down. I used vegetables I had in the freezer, hence the cooking time. If you substitute canned vegetables you could cut your cooking time way down. I say use what you have!

FOR THE SOUP
5 c beef broth
3/4 c frozen black eyed peas
3/4 c frozen baby lima beans
1/2 c frozen corn kernels
1/2 c diced onion
1/2 c sliced celery
1/2 c sliced carrots
1 can(s) turnip or collard greens, drained
1 can(s) diced tomatoes
1 can(s) tomatoes and green chilies (or another can of diced tomatoes if you don't like heat)
salt and pepper to taste
dash(es) a few dashed of hot sauce, chipotle is good
FOR THE MEATBALLS
1 lb ground pork
1/2 tsp fennel seeds, crushed to release flavor
1 Tbsp dried sage
1/2 tsp garlic salt
1/2 tsp ground black pepper
1/2 c bread crumbs, soaked in enough milk to cover them, drain excess before use

Steps:

  • 1. Place all of the soup ingredients in a large soup pot.
  • 2. Bring to a boil, cover, reduce to simmer, and cook until the peas and beans are done. Approximately an hour.
  • 3. Gently mix the ingredients for the meatballs. Don't over mix.
  • 4. Form into small, bite sized balls and drop into the soup. Add some more beef broth or water if too much has cooked away.
  • 5. Once it is back to a simmer, cover and cook for 5 to 10 minutes. These little meatballs will cook quickly. Pull one out and cut it open to insure they are done.

Some like it HOT; some don't. You may want to adjust the chili. This recipe originated in Honduras. Good with a crisp salad and a crusty bread for a light meal.

2 hard cooked eggs
1/2 c cooked brown rice
1/4 c soft, fine bread crumbs
1/4 c fine chopped green onion
1/4 c fine chopped ripe olives
1/4 tsp rosemary, dried
1 dash(es) cloves
1 dash(es) cinnamon, ground
1/2 lb lean ground beef
1/2 lb lean ground pork
raisins
2 c beef broth (i used bouillon)
1 can(s) condensed tomato soup
1 Tbsp chili powder
1/2 c shredded monterey jack cheese
coarse chopped ripe olives
chopped green onion

Steps:

  • 1. Separate egg yolks from the whites and chop each separately.
  • 2. In a bowl combine crumbled egg yolks, rice, bread crumbs, 1/4 C chopped green onions, 1/4 C chopped olives, and all spices except chili.
  • 3. Add both meats and mix well.
  • 4. Use 1 1/2 teaspoons of mixture for each meatball; wrapping meat around two or three raisins. Set aside on a plate.
  • 5. In a large saucepan, combine broth, tomato soup, and chili; mix well then add meatballs. Bring to boiling; reduce heat and simmer 30 minutes.
  • 6. Stir in chopped egg whites. Top each serving with cheese, olives and chopped green onions.
  • 7. Cook's Notes: I used sausage,(as that is what I happened to have) which meant a lot of unwanted fat, so I chilled soup overnight to allow fat to rise, then discarded the fat, which made this soup almost fat free. Sour cream also makes a good topping, and helps to cut the heat. There are just the two of us, so there was some left over and it was even better the next day.

3 tablespoons fine dry breadcrumbs
1 1/2 teaspoons fajita seasoning mix
1/4 teaspoon ground cumin
1/4 teaspoon salt

1 egg, well beaten
2 tablespoons vegetable oil
1/2 cup chopped onion
2 carrots, chopped
2 (10 ounce) cans diced tomatoes with green chilies, undrained
1 zucchini, diced
2 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
3 tablespoons tomato paste
1 teaspoon minced and seeded chipotle pepper
1 teaspoon adobo sauce
3 1/2 cups chicken broth
1 (15 ounce) can black beans, rinsed and drained
1 1/2 cups frozen corn kernels
1/4 teaspoon kosher salt
2 tablespoons chopped fresh cilantro

Steps:

  • Combine ground beef, breadcrumbs, fajita seasoning, cumin, salt, cilantro, and egg until well-combined. Shape mixture into 1-inch meatballs and arrange on a lightly greased baking sheet.
  • Bake at 400°F for 12 to 15 minutes or until browned, turning occasionally.
  • Sauté onion and carrot in hot oil in a Dutch oven for 4 to 5 minutes or until tender.
  • Add zucchini, garlic, cumin, coriander, tomato paste, chipotle pepper, and adobo sauce; cook for 2 to 3 minutes, stirring constantly (Do not let garlic brown).
  • Stir in meatballs, chicken broth, diced tomatoes, black beans, corn, and salt.
  • Bring to a boil; reduce heat, and simmer, covered, 35 minutes.
  • Stir in cilantro.
  • Garnish as desired with lime wedges, sour cream, diced avocado, or cilantro sprigs and enjoy!
