2 cups elbow pasta, cooked until almost al dente
8 ounces Cheddar, 1/2 cubed, 1/2 shredded
8 ounces Colby cheese, cubed
8 ounces Monterey pepper jack cheese, cubed
2 teaspoons all-purpose flour
1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon dry mustard
1/8 teaspoon freshly ground nutmeg
4 tablespoons sour cream
1 large egg, beaten
1 cup heavy cream
1 cup half-and-half
1/4 cup finely grated onions
4 slices bread
1 tablespoon butter
Special equipment: 2-quart baking dish

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, toss together the pasta with the cheese cubes and pour into the baking dish.
  • In a large bowl, mix together the flour, salt, black pepper, cayenne pepper, dry mustard, nutmeg. Add the sour cream, egg, heavy cream, half-and-half and onions. Pour over the pasta and cover with the shredded Cheddar. Bake uncovered until the top is just beginning to brown, about 35 minutes.
  • Meanwhile, cut the bread into crouton-size squares. In a skillet over medium heat, melt the butter, add the bread cubes and toast until golden. Sprinkle the bread cubes on top of the macaroni and cheese and bake until golden brown, about 10 minutes more.

I make this when I've got 15 minutes to throw together a meal (not including cooking time.) It doesn't hurt that this is a REALLY tasty macaroni recipe. Can be served as a side dish, but we're veggies so we usually eat it as the main dish. Hope you enjoy.

Steps:

  • In a large bowl, toss together pasta with the cheese cubes and pour into a greased 2qt oven safe baking dish.
  • In a large bowl mix together the flour, salt, black pepper, cayenne pepper, dry mustard, nutmeg and sour cream, egg, heavy cream and half-and-half.
  • Pour the mixture over the pasta and cover with shredded Cheddar.
  • Bake uncovered at 350 degrees until top is just beginning to brown, about 35 minutes.

1 1/2 cups finely chopped onion
2 large garlic cloves, minced
1 1/2 tablespoons minced pickled jalapeno chilies, to taste or 1 to 2 tablespoons of chipotle in adobo
1/2 stick (1/4 cup) unsalted butter
1/4 cup all-purpose flour
5 cups milk
1 (28-ounce) can plum tomatoes, juice discarded and tomatoes chopped and drained well
1 pound elbow macaroni
2 cups coarsely grated Monterey Jack (about 8 ounces)
2 cups coarsely grated extra-sharp cheddar (about 8 ounces)
1/4 cup fresh bread crumbs
1/4 cup freshly grated Parmesan (about 1/4 pound)

Steps:

  • In a large heavy saucepan cook the onion, the garlic, the jalapenos, or chipotle in butter over moderately low heat, stirring, until the onion is softened, stir in the flour, and cook the mixture, stirring, for 3 minutes. Add the milk in a stream, whisking constantly, and bring the liquid to a boil. Stir in the tomatoes. Simmer the mixture for 2 minutes. Add salt and pepper, to taste.
  • In a kettle of boiling salted water cook the macaroni for 6 to 7 minutes, or until it is barely al dente, drain it well, and in a large bowl combine it with the tomato mixture. Stir in the Monterey Jack and the cheddar and transfer the mixture to a buttered 15 by 10-inch shallow baking dish or 3-quart gratin dish. In a bowl stir together the bread crumbs and the Parmesan, sprinkle the mixture evenly over the macaroni mixture. Bake the macaroni and cheese in the middle of a preheated 375 degree F oven for 20 to 25 minutes or until it is golden and bubbly.

This recipe came from what my mom referred to as the 'spice' cookbook. I grew up with it and am happy to share it. It's pretty simple to make. Make a roux, add to pasta. It is a favorite at potlucks but can be altered for smaller groups. You can make it as spicy as you like. I usually make a SPICY half and a not so spicy half.

1 lb sharp cheddar cheese
1 lb monterey jack pepper cheese
9 tablespoons butter
8 tablespoons flour
2 teaspoons dry vegetarian chicken base (tastes better)
1 teaspoon onion powder
1/2 teaspoon white pepper
4 teaspoons Season-All salt
1/2 teaspoon dry mustard
1 dash cayenne (as much as you want)
1 dash nutmeg
4 cups milk
2 (8 ounce) packages macaroni
1 dash sweet paprika

Steps:

  • Grate cheese and set aside.
  • Cook macaroni following directions on package and set aside.
  • For the roux Melt butter, remove from heat.
  • Mix flour, seasoned stock base and seasonings.
  • Slowly add mixture to butter.
  • Cook over low heat. stirring, until mixture is smooth and bubbly. Do not allow to brown.
  • Remove from heat and slowly stir in milk.
  • Bring to a boil, stirring, and cook until sauce thinkens.
  • Add 2 cups of the cheese and stir unil melted.
  • Place half the macaroni in a buttered 13 x 9 x 2 inch baking dish.
  • Sprinkle with half of remaining cheese.
  • Pour half of sauce over all.
  • Top with layer of macaroni and the rest of the cheese.
  • Pour remaining cheese sauce over all. Sprinkel with paprika.
  • Bake in 350 oven 30 to 40 minutes.
  • Serve hot from baking dish.

3 cups cherry tomatoes
2 teaspoons olive oil, plus drizzling
Salt and pepper
1 package chorizo, casings removed and finely chopped
6 tablespoons butter
1/2 cup all-purpose flour
4 cups milk, warm
1 teaspoon dry mustard
1 tablespoon hot sauce
1 tablespoon Worcestershire sauce
2 cups shredded Monterey pepper jack
1 cup sharp white Cheddar
1 (2.7-ounce) can fried onions

Steps:

  • Heat oven to 350 degrees F.
  • Cook the pasta in salted, boiling salted water until al dente. Drain in a colander.
  • Add the cherry tomatoes to a sheet tray, drizzle with olive oil and season with salt and pepper. Bake for 20 minutes, until visibly plump and softened.
  • Heat a large skillet over medium heat. Add 2 teaspoons of olive oil. Saute the chorizo in a saute pan until crisp. Remove.
  • Melt 6 tablespoons butter in a large saucepot over medium heat. Add flour, stirring for 1 minute. Whisk in the warmed milk and bring to a boil. Continue to whisk constantly. 1 egg
1/4 cup water
1 tablespoon hot sauce
1/2 cup all-purpose flour
1/4 teaspoon chili powder
Salt and freshly ground black pepper
1 cup canola oil

Steps:

  • Form the leftover macaroni and cheese into 12 small balls.
  • In a pie plate or shallow dish, whisk together the egg, water and the hot sauce. In a second pie plate or shallow dish combine the flour, chili powder, and salt and pepper, to taste.
  • In a deep-sided skillet heat the canola oil over medium heat to 350 degrees F.
  • Coat the macaroni and cheese balls in the egg mixture. Put into the seasoned flour mixture, making sure they are completely coated.
  • Fry in hot oil, in batches, until golden brown, about 4 minutes. Remove from the oil and drain on a plate lined with a paper bag. Transfer to a serving dish and serve hot.

  • Add in flour and stir for 2 minutes with a wooden spoon.
  • Slowly add in the half and half cream whisking continuously until the mixture boils and thickens.

  • Preheat oven to 400°F. Set a medium pot of salted water to boil. Prepare a large baking sheet by lining with aluminum foil and coating with a little olive oil or nonstick cooking spray. Toss broccoli, red pepper, squash and carrots onto the baking sheet. Bake for 20 minutes, or until vegetables have softened. Remove from oven and set aside. 1 lb boneless skinless chicken breast, cut into bite-size pieces
1 (12 ounce) package macaroni shells and cheese

  • Spray large skillet with cooking spray and saute chicken on medium-high heat for about 5 minute or until cooked through.

10 slices turkey bacon
1 (1 pound) loaf processed cheese food (such as Velveeta®), cubed
¾ cup heavy cream
½ cup fat free half-and-half

⅜ teaspoon smoked paprika

Steps:

  • Bring a large pot with lightly salted water to a rolling boil. Stir in the shell pasta and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 13 minutes. Drain well in a colander set in the sink.

This is a warm, cheesy and delicious baked macaroni and cheese casserole. It is a little spicy (re: pepper and garlic), but it is easily modified to personal taste. My toddler loves this recipe! He gobbles it down, spices and all. This dish is great with a side of steamed, mixed veggies.

2 cups skim milk (or any other milk)
1 cup soymilk, fortified (substituting with any other milk is fine)
2 tablespoons butter
3 tablespoons white whole wheat flour (while a healthy and delicious flour, substituting with any other flour is acceptable)
1/4 teaspoon salt (more of less to taste)
1/2 teaspoon pepper (more or less to taste)
1/2 teaspoon garlic powder (more or less to taste, alternately, 1-2 cloves of minced fresh garlic would be nice as well)
1/2 teaspoon onion powder (more or less to taste, alternately, 1 small onion diced and sauteed would be great in this dish)
1/2 teaspoon ground mustard (more or less to taste)
2 cups whole wheat pasta, uncooked (approximately 10 ounces, i.e. macaroni, spirals, shells, mini penne... may substitute with enriched )
8 ounces cheese, sliced (I use a Jack-and-Colby-combo cheese that comes in 10 slices)
2 ounces mozzarella cheese, grated 0R cut into small cubes (may substitute with any other creamy-textured cheese, i.e. Muenster, Provolone, Edam)

Steps:

  • Preheat oven to 350 degrees.
  • Set aside an 8x11 glass casserole dish (spray with non-stick spray, if desired).
  • Cook the pasta according to its instructions and remove from heat 2 minutes PRIOR to it being fully cooked. Drain the pasta and rinse with cold water (to halt further cooking of the pasta). Drain the pasta and return to saucepan.
  • AS THE PASTA IS COOKING, warm all of the milk and the 2 tbsp butter over medium-low heat.
  • In a small bowl combine the flour, salt, pepper, garlic powder, onion powder and ground mustard. After the milk is heated, whisk in 1/2-1 cup of the milk, whisking until combined and no clumps remain. Whisk this mixture back into the milk, reduce heat to a simmer and allow the sauce to thicken (about 2-3 minutes). Remove from heat.
  • Layer ingredients in the 8x11 dish: Add 1/2 of the pasta and 1/2 of the sauce, stir. Sprinkle 1/2 of the Mozzarella over the pasta and arrange 1/2 of the sliced cheese over the mozzarella. Repeat the steps once more (DO NOT stir the second layer of pasta and sauce unless you stir very gently, working to avoid disturbing the layer below).
  • Bake for 25-30 minutes or until the top is a golden color and the milk is bubbling (while not necessary, the dish may be covered for 1/2 of the baking time, if desired).
  • The dish will continue to cook when removed from the oven. Letting it cool for 5-10 minutes will insure a delicious (and slightly cooled) meal.

This is my favorite dish there; they posted it on their website. This recipe makes a LOT, so if you are making it for a small group or family, you might want to half it.

1 tablespoon butter
1/2 cup finely diced onion
6 cups milk
1 teaspoon garlic
2 teaspoons crushed red pepper flakes
1 1/2 teaspoons Dijon mustard
1/2 teaspoon Tabasco sauce
2 ounces dark beer
5 tablespoons melted butter
6 tablespoons flour
8 ounces Velveeta cheese
8 ounces yellow cheddar cheese
4 ounces monterey jack cheese
8 ounces white American cheese
1 (10 ounce) package frozen chopped spinach (thawed and drained well)
1 lb macaroni
2 cups grated cheddar cheese

Steps:

  • Thaw the frozen spinach in the refrigerator overnight.
  • Squeeze as much excess water as possible out of spinach and set aside.
  • Place the milk, garlic, and crushed red pepper in a saucepan.
  • Bring to a simmer with low to medium heat.
  • Saute the finely diced onion in 1 tbsp butter for about 5 minutes.
  • Add the onion to the milk, then add the Dijon mustard, Tabasco, and beer.
  • Continue to simmer, stirring often so the milk does not burn.
  • Make a roux with 5 tbsp melter butter and 6 tbsp flour.
  • Cook on low heat for 3 to 4 minutes.
  • Add to the milk mixture and mix well.
  • Continue to simmer until the sauce thickens, then reduce heat.
  • Add the cheese to the sauce (cut into small cubes so the cheese will melt faster.).
  • Stir until the cheese is completely melted and blended into the sauce.
  • Remove from heat.
  • Cook the macaroni according to package directions.
  • In a large mixing bowl, combine the cooked macaroni, cheese sauce, and the spinach.
  • Mix until blended.
  • Transfer to a large casserole dish.
  • Top with grated cheddar cheese.
  • Bake at 350 degrees for about 15 minutes or till hot.

8 tablespoons butter melted
1/2 pound cream cheese melted
2 1/2 cups heavy cream
1 teaspoon salt
1/4 teaspoon Tony Chachere's Seasoning (Cajun or creole)
1/2 pound Cheddar cheese
1/3 cup flour
1 cup sliced jalapenos from jar (2/3 c--1 c was too spicy)
1/2 cup jalapenos juice from jar
2 tablespoons Panko Japanese bread crumbs
1 pound Perciatel 10-inch macaroni noodles cooked al dente

Steps:

  • Preheat your oven to 350 degrees. In a saucepan melt butter. Add cream cheese and mix until blended. Add heavy cream and whisk. Add jalapeno juice and whisk. Mix in cheddar, stirring until cheddar is completely melted. Mix in sliced jalapenos. Add salt, Tony Chachere's seasoning and flour. Continue whisking until all ingredients are completely incorporated. Spray loaf pan with pan coating. Layer bottom of a 13 x 9 inch pan with cooked macaroni. Cover with cheddar mixture. Add another layer of pasta and cheddar mixture. Dust top with bread crumbs. Bake for 30 minutes at 350 degrees.

1-1/2 cups elbow macaroni, uncooked
2 Tbsp. butter
2 Tbsp. flour
3/4 cup milk
1 cup KRAFT Shredded Cheddar Cheese
1/2 cup KRAFT Shredded Monterey Jack Cheese
1/4 cup KRAFT Grated Parmesan Cheese
1 tsp. TACO BELL® Hot Sauce
1/4 tsp. ground black pepper
2 Tbsp. dry bread crumbs

Steps:

  • Heat oven to 350°F.
  • Cook macaroni as directed on package, omitting salt; drain. Spoon into 1-1/2-qt. casserole.
  • Melt butter in small saucepan on low heat. Stir in flour; cook and stir 2 min. or until bubbly. Gradually stir in milk. Cook and stir on medium heat until mixture comes to boil and thickens. Simmer on low heat 3 to 5 min. Remove from heat.
  • Reserve 1 Tbsp. of each cheese. Add remaining cheeses to the sauce mixture; stir until cheeses are melted and mixture is well blended. Stir in hot sauce and pepper. Pour over macaroni in casserole; mix well. Toss bread crumbs and reserved cheese; sprinkle over macaroni mixture.
  • Bake 35 to 40 min. or until lightly browned.

I had the various ingredients as left-overs so did some major tweaking of several other recipes and came up with this.

1 small onion, chopped
1 clove garlic, grated or minced
1 Tbsp jarred jalapeno slices, minced
1/2 tsp coriander
1 tsp cumin
1 1/2 Tbsp grapeseed oil (or other oil)
1 1/2 Tbsp flour
3/4 c half and half
1 c milk
1 medium head cauliflower, separated into florets
1/8 tsp cayenne pepper, or to taste
6 oz smoked turkey sausage, sliced
1/2 lb pasta of choice
6 oz velveeta cheese, cubed
1 Tbsp panko bread crumbs
1 Tbsp grated parmesan cheese

Steps:

  • 1. Preheat oven to 350°F. Grease 2 quart casserole dish. Set aside.
  • 2. Cook pasta and cauliflower in salted boiling water until done. Drain, set aside.
  • 3. Slice turkey sausage, saute until browned. Set aside.
  • 4. In a large pot, heat oil and saute onion, garlic and jalapeno until onion has softened. Add coriander, cumin and cayenne.
  • 5. Stir in flour and cook for about 3 minutes. Add milk mixture slowly. Add cheese. Stir until cheese melts and mixture thickens.
  • 6. Add cooked pasta and cauliflower and the sausage to cheese mixture. Stir to mix.
  • 7. Transfer mixture to casserole dish. Top with crumbs and parmesan. Bake for 20-30 minutes until crumbs are browned. Let sit for a few minutes before serving.

1/4 c butter or margarine
1/2 medium sweet onion,chopped
8 oz loaf mexican-style pasteurized prepared cheese product, cubed
8 oz container sour cream
10 oz can diced tomatoes and green chiles , drained

Steps:

  • 1. Melt butter in a large skillet over medium heat;add onion, and saute' 3 to 5 minutes or until tender.
  • 2. Add cheese,and cook, stirring constantly, 5 minutes or until cheese melts.
  • 3. Stir in sour cream, blending well.
  • 4. Stir in tomatoes and green chiles and pasta; cook,stirring constantly,5 minutes or until thoroughly heated.
