SPICY BROILED SHRIMP
Spicy Broiled Shrimp is a wonderful low-carb dinner that can be on the table in minutes!

Steps:
- Thaw shrimp overnight in the refrigerator (or thaw in the bag in lukewarm water if you forget to plan ahead.) I used 31-40 count shrimp, so if you're lucky enough to find larger shrimp, increase the cooking time a tiny bit.
- When you're ready to cook, remove shrimp from the refrigerator and drain in a colander placed in the sink, then use a paper towel to pat shrimp dry if they still seem wet.
- Preheat broiler and put the rack so it's as close to the broiler as possible.
- Arrange the shrimp in a single layer in two individual casserole dishes or one larger casserole dish.
- I sprayed the casserole dishes with non-stick spray but it's probably not essential.
- Once shrimp are arranged in a single layer, add seasonings in this order:
- Drizzle shrimp with olive oil or melted butter and squeeze lemon juice over the shrimp (I used a squeezer that catches the seeds).
- Sprinkle Worchestershire sauce over the shrimp.
- Sprinkle Creole Seasoning (or make your own Creole Seasoning Blend) over the shrimp.
- Season with salt and fresh ground black pepper (skip the salt if you use Tony Chachere's Creole Seasoning, which has salt).
- When the rest of the meal is ready or almost ready, put shrimp under the broiler and cook for 7-8 minutes, or just until the shrimp turn pink and feel barely firm to the touch.
- Don't overcook. If your shrimp are larger than 31-40 count they may take a minute or two longer to cook, but not much.

CHEF JOHN'S GRILLED GARLIC AND HERB SHRIMP
This grilled garlic and herb shrimp recipe is very easy, IF you can just walk out into the backyard, and pick a handful of your own fresh, green sprigs. However, these are so amazingly delicious, if you don't have a garden, then do splurge and buy a bunch of all the herbs. And get the extra large shrimp so they can grill longer and get maximum caramelization.

Steps:
- Place salt, lemon zest, and 3 cloves garlic in bowl of a mortar and pestle. Pound with the pestle until mixture begins to form a paste, about 2 minutes. Add chopped basil, parsley, oregano, and thyme and pound with pestle until mixture begin to come together, about 5 minutes.
- Drizzle about 1 tablespoon of the olive oil into herb mixture. Grind together until mixture begins to form a sauce for marinating, about 1 minute. Pour in the remaining 3 tablespoons olive oil. Stir mixture with a spoon until mixture is thoroughly combined, adding additional olive oil as needed. Mixture should be fairly thick but pourable.
- Place shrimp in a large bowl and mix in about 2/3 of the sauce, reserving 1/3 for serving. Stir until shrimp are evenly coated with the sauce, about 2 minutes. Transfer shrimp to a resealable plastic bag. Refrigerate 2 to 3 hours. Cover and refrigerate remaining sauce.
- Preheat an outdoor grill for high heat and lightly oil the grate.
- Thread shrimp onto skewers (pierce each twice, once through large part of shrimp, once through small part). Place skewers on hot grill. Cook on each side until shrimp are bright pink and opaque and exterior is beginning to caramelize, 2 to 3 minutes per side. Transfer skewers to serving platter.
- Pour remaining sauce into mixing bowl. Whisk in 1 tablespoon olive oil, lemon juice, red pepper flakes, cayenne pepper, salt and black pepper. Spoon sauce over shrimp. Serve with lemon wedges.

BROILED SHRIMP WITH SPICY GINGER-LIME BUTTER
Steps:
- Preheat broiler. Melt butter in heavy small skillet over medium heat. Stir in ginger and cayenne. Remove from heat. Stir in lime juice and peel. Season ginger-lime butter to taste with salt and pepper.
- Place shrimp in bowl. Add ginger-lime butter; toss to coat. Transfer shrimp to small rimmed baking sheet. Broil until pink and just cooked through, about 2 minutes per side. Transfer shrimp to plate; drizzle with pan juices. Sprinkle with onions. Serve with lemon wedges.
SPICY GRILLED SHRIMP
Steps:
- Preheat grill for medium heat.
- In a small bowl, crush the garlic with the salt. Mix in cayenne pepper and paprika, and then stir in olive oil and lemon juice to form a paste. In a large bowl, toss shrimp with garlic paste until evenly coated.
- Lightly oil grill grate. Cook shrimp for 2 to 3 minutes per side, or until opaque. Transfer to a serving dish, garnish with lemon wedges, and serve.

GRILLED HERB SHRIMP
Steps:
- Combine all the ingredients and allow them to marinate for 1 hour at room temperature or cover and refrigerate for up to 2 days.
- Skewer the shrimp. I use 3 or 4 shrimp on a 12-inch skewer for dinner. Heat a grill with coals and brush the grill with oil to prevent the shrimp from sticking. Grill the shrimp for only 1 1/2 minutes on each side.
~ SPICY HERB BROILED SHRIMP ~
Another awesome shrimp recipe. This can be served as an appetizer or main dish. Serve with lemon slices. This is my own concoction. Enjoy!

- 1. Peel, devein and rinse shrimp. Pat dry in paper towels.
- 2. In a small saucepan, over low heat, melt butter. Stir in all other ingredients, except for shrimp...stirring often for about 3 minutes. Make sure not to burn. Remove from heat.
- 3. Place the shrimp on a broiler pan and brush generously with the butter mixture.
- 4. Broil about 5 inches from broiler flame, for 3 - 5 minutes or until turn pink, then turn and brush again with butter, turning one last time and buttering.
- 5. Plate and pour any remaining seasoned butter over the shrimp. Serve with lemon slices.
