Number Of Ingredients 6

3 medium potatoes (1 1/2 pounds)
1/3 cup butter or margarine
1/2 teaspoon salt
1/8 teaspoon ground red pepper (cayenne)
1/8 teaspoon garam masala, if desired
1 large garlic clove, finely chopped

Steps:

  • Place potatoes in enough water to cover (salted if desired) in 3-quart saucepan. Cover and heat to boiling. Boil about 15 minutes or until almost tender; drain. Cool slightly.
  • Heat coals or gas grill for direct heat.
  • Heat remaining ingredients to boiling; remove from heat. Cut each potato lengthwise into 4 or 5 slices. Brush potatoes generously with butter mixture.
  • Cover and grill potatoes 4 inches from medium heat about 20 minutes, turning and brushing 2 or 3 times with butter mixture, until golden brown and tender.

A nice, easy preparation for a side dish that you will want to put in to your repetoire for summer and beyond. This recipe can be cooked on a BBQ grill, stovetop grill or even in a sandwich/panini maker. Adjust herbs and spices to fit your taste or menu. I'm thinking Cajun would be darned good. Experiment with different types of potatoes, too.

4 large potatoes (your choice, but russet or Idaho are great)
1/2 cup olive oil (1/4 or less for for a lower fat version)
2 teaspoons sea salt
1 teaspoon pepper
2 tablespoons fresh rosemary
2 garlic cloves, minced
1/4 teaspoon cayenne pepper (optional)
1/2 teaspoon paprika (optional)

Steps:

  • Wash the potatoes and standing them on their side, cut 1/4 inch "planks". In a large bowl, toss potatoes with other ingredients until all are coated evenly. Grill should be nice and hot (approx. 550 degrees farenheit). Spray grill with PAM or coat with oil (unless it is non-stick). Lay potato planks onto the grill for 15 to 20 minutes, turning every five minutes, until done. "Done" means a nice dark golden brown with grill marks evident. (A good panini maker may cook the potatoes a bit sooner.) DIG IN!

These potatoes take 10 minutes to prepare and feature a buttery mix of Montreal seasoning, Parmesan cheese, garlic powder and paprika. You could also do these in the oven as noted in the directions.

6 large baking potatoes, scrubbed and dried
3 tablespoons butter, melted
1 1/2 teaspoons McCormick's Montreal Brand steak seasoning
3/4 teaspoon garlic powder
1/2 teaspoon paprika
2 tablespoons grated parmesan cheese
2 tablespoons fresh parsley, chopped

Steps:

  • Prepare grill for indirect-heat cooking.
  • Place each potato on piece of nonstick foil.
  • On an angle, cut 4 slits in each potato, 3/4 of the way through.
  • Mix butter, seasoning, garlic powder and paprika; stir in parmesan.
  • Dividing mixture evenly, spoon over potatoes; wrap in foil.
  • Place on gril over indirect heat.
  • Cover; cook until tender, about 1 hour.
  • Unwrap potatoes; drizzle with any butter mixture in foil.
  • Sprinkle with parsley.
  • For a no-grill option: Preheat oven to 400 degrees.
  • Bake wrapped potatoes 1 hour.
