Steps:
- Prepare a grill or preheat the broiler.
- Mix olive oil, lime juice, wine, mustard, chili powder, pepper, cilantro and salt in a medium bowl.
- Transfer half of the marinade mixture to another bowl and reserve for basting catfish.
- Add catfish to the first bowl; marinate for 15 minutes.
- Drain fillets and discard marinade.
- Place fillets on an oiled grill rack or broiler pan rack.
- Grill or broil 4 inches from the heat source, basting with reserved marinade, for about 3 minutes on each side, or until fish flakes easily when tested with a fork.

We love fish! We had to find a way to cook fish...had to give up fried foods. I ate this at the Cracker Barrel and went home and gave it a try! Quick and easy! I usually serve it with Long Grain and Wild Rice....

- 1. In a 12" skillet, heat olive oil.
- 2. Season fillets with blackened seasoning on both sides of fish. Cook in hot oil for a couple minutes on each side. Blackened seasoning will smoke, so reduce heat to prevent fire alarm from going off. Cook until fish is tender and easily flakes. Remove from heat and place on warmed dinner plate to serve.
- 3. Serve with lemon slices.

OUTSTANDING RECIPE!! I dearly love catfish and this recipe is just excellent. The marinade is quite zesty. I especially liked the wine-lime juice flavor. The smell while grilling is pretty captivating.

Steps:
- Mix olive oil, lime juice, Chardonnay, dry mustard, chili powder, pepper, cilantro and salt (optional) in medium bowl. Add catfish to bowl; marinate for 15 minutes.
- Drain fillets; place on a lightly oiled grill 4-inches above hot coals. Grill about 5 minutes per side or until fish flakes when tested with a fork. Baste with marinade while cooking. Discard remaining marinade.
- Stir chopped parsley into melted butter and brush over each fillet just before removing from grill.
