  • Cook 5 sliced garlic cloves in 1/4 cup olive oil in a pot over medium-low heat until sizzling, 1 minute. Add 1 pound chopped kale and stir until wilted, 3 to 5 minutes. Increase the heat to medium. Add 2 tablespoons cider vinegar, 1/2 teaspoon kosher salt and a pinch of red pepper flakes. Cook, stirring, until tender, 5 minutes.

1 pound kale (large stems removed, chopped, or use frozen chopped kale)
2 teaspoons extra virgin olive oil
1/2 cup finely chopped purple onion
1 medium clove garlic (pressed)
1 or 2 hot peppers (minced, or 1 heaping tablespoon Portuguese crushed red peppers from a jar)
3 tablespoons red wine vinegar
1 tomato (chopped)
1/2 teaspoon salt (or to taste)

Steps:

  • To cook the kale, bring a pot of salted water to a boil. Add the chopped kale and boil for 10 to 15 minutes, or until stem portions are tender. Or, follow directions on the package if using frozen kale.
  • Heat olive oil in a large skillet or sauté pan over medium heat; cook onion until just tender.
  • Add the garlic and cook, stirring, for 1 minute.
  • Add crushed red peppers, kale, and vinegar; cook, stirring, for 1 minute longer.
  • Add chopped tomato, salt, and pepper; heat through.

1 bunch kale
1 tablespoon olive oil
1 teaspoon minced garlic

Steps:

  • Soak kale leaves in a large bowl of water until dirt and sand begin to fall to the bottom, about 2 minutes. Lift kale from the bowl without drying the leaves and immediately remove and discard stems. Chop the kale leaves into 1-inch pieces.
  • Heat olive oil in a large skillet over medium heat; cook and stir garlic until sizzling, about 1 minute. Add kale to the skillet and place a cover over the top.
  • Cook, stirring occasionally with tongs, until kale is bright green and slightly tender, 5 to 7 minutes.

Extra-virgin olive oil
3 cloves garlic, smashed
Pinch crushed red pepper
1 bunch baby kale, stems removed, cut into 1/2-inch lengths
1 bunch black kale, stems removed, cut into 1/2-inch lengths
Kosher salt
1/4 cup chicken stock
1 tablespoon sherry vinegar

Steps:

  • Coat a large saute pan with olive oil and add the garlic cloves and crushed red pepper. Bring the pan to a medium heat and cook the garlic until it gets golden and very aromatic. Remove the garlic and discard.
  • Add the 2 types of kale and stir to coat with the oil. Season with salt and add the chicken stock. Cover and cook for 2 to 3 minutes.
  • Uncover and stir to be sure that the kale is cooked evenly. Let the liquid evaporate. Sprinkle with sherry vinegar. Taste to make sure that the kale is seasoned perfectly.
  • Serve immediately.

2 tablespoons chili-garlic sauce
1 tablespoon minced garlic
1 tablespoon dark brown sugar
1 tablespoon fresh lime juice
3 teaspoons fish sauce
1 lb large shrimp, peeled and deveined
5 cups fresh kale (seems like a lot but it cooks down!)
3 tablespoons oil
fresh cracked pepper

Steps:

  • 1. In a medium size bowl add Garlic Chili Pepper Sauce, garlic, sugar, lime juice and 2 teaspoons of the Fish Sauce. Mix well. Add shrimp and mix until covered with sauce. Set aside to season.
  • 2. Add shrimp mixture to skillet. Stir-fry until shrimp turns opaque (pink) and sauce is well mixed with ingredients. Serve immediately. If desired, sprinkle with cilantro and serve with hot.
  • 3. Add 2 tablespoons of oil to a hot wok or skillet and drop in the chopped kale. Sauté for 3 to 4 minutes.
  • 4. Place kale on a serving dish and pour shrimp on top! ENJOY!

4 tilapia fillets (6 ounces each)
3/4 teaspoon pepper, divided

1 can (15 ounces) cannellini beans, rinsed and drained

  • In a 6-qt. stockpot, heat 1 tablespoon oil over medium heat. Add garlic, fennel and pepper flakes; cook and stir 1 minute. Add kale and water; bring to a boil.
