This is an easy, and very versatile recipe. It is spicy, so don't make it if you don't like spicy food! I use this in tacos, burritos, taco salads, and enchiladas. You can freeze it also. I hope you enjoy it!

2 -3 lbs boneless skinless chicken breasts or 2 -3 lbs boneless skinless chicken thighs
1 medium onion, chopped
1 (7 ounce) can diced green chilies
1 teaspoon chili powder
1 teaspoon cayenne pepper
1 (5 ounce) bottle hot sauce
1 teaspoon garlic powder
1 chicken bouillon cube
1 cup water
salt and pepper

Steps:

  • Add all ingredients to slow cooker, mix well.
  • Chicken should be covered by liquid, if not, add more water.
  • Cook on low 8 hours.
  • The chicken should be falling apart already, just continue to shred it.

CROCK POT SPICY CAJUN CHICKEN PASTA

An easy and comforting Crock Pot dinner! The chicken is moist and flavorful from all the spices. There's a hint of heat from the Creole seasoning. Red peppers add a bit of sweetness and crunch while mushrooms give the meal an earthiness. A fantastic and easy pasta dinner your family will love.

IN THE CROCK POT
4 frozen chicken breast halves, skinless and boneless
4 Tbsp Tony Chachere's More Spice seasoning
1/2 tsp dried basil
1/2 tsp lemon pepper
1 tsp garlic powder
1 tsp black pepper
1 can(s) cream of mushroom soup, undiluted
4 Tbsp butter
SAUCE
4 Tbsp butter
2 large red bell peppers
1 small container of baby portabella mushrooms, sliced
4 green onions
1 c heavy cream
salt
pepper
PASTA
1 lb pasta - I used cavatappi - but used your favorite.

Steps:

  • 1. For the Crock Pot: Mix the spices together and sprinkle it on top of all the other ingredients that are listed for the Crock Pot. I cooked this for 6 hours. When it is done - just shred the chicken in the pot. NOTE - the butter will rise to the top but don't worry it will all blend together in the end.
  • 2. After your chicken is done, prepare pasta per package directions and drain.
  • 3. While the pasta is cooking, get a skillet heated with butter. Slice the red pepper into thin slices, the same for the mushrooms. Cut the green onions on the diagonal - they should be about 2 inches long or so. Then add them to your skillet. Cook these about 3 or 4 minutes - but not too long! You want them to be still slightly firm, then remove from skillet using a slotted spoon.
  • 4. In the remaining butter in skillet pour your heavy cream and stir on about medium-high heat. Just til the sauce coats the spoon. Then add a pinch of salt and pepper to the sauce. Pour it into your Crock Pot with your chicken and its sauce.
  • 5. Add your vegetables and your pasta. Stir it to mix all together. Serve with either some Parmesan cheese or leave the Tony Chachere's shaker on the table for people to choose if they want a little more spice to it. Enjoy!

I love traditional "buffalo" wings, but like to try new ways to make them. I found this recipe on Southernfoods.about.com (supposedly one of Zaar's competitors but not in my view). I screened the wing recipes on Zaar's site but didn't find any duplicates. I know you'll like the simplicity and taste of this wing variation as much as we did.

2 lbs chicken wings
1 1/2 cups bottled barbecue sauce
1/4 cup honey
2 teaspoons prepared mustard (regular or spicy)
2 teaspoons Worcestershire sauce
1/2 teaspoon Tabasco sauce
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Spread wings in a single layer on a baking sheet that has been sprayed with cooking spray.
  • Sprinkle with salt and pepper.
  • Mix sauce ingredients until thoroughly mixed.
  • Broil wings, 4 inches away from heat, until nicely browned (about 10 minutes).
  • Turn wings, sprinkle with salt and pepper, and broil until browned as above.
  • Place browned wings in a crockpot.
  • Pour sauce over wings.
  • Cook 2 1/2 hours on high or 4-5 hours on low.
  • Serve with french fries or, if you prefer, rice.

1 -1 1/2 lb boneless skinless chicken thighs or 1 -1 1/2 lb boneless skinless chicken breast, cut into pieces
1 (28 ounce) can diced tomatoes with juice
1 cup chicken stock
1/4 cup peanut butter (I like all natural chunky)
1/3 cup diced onion
1 garlic clove (minced)
1 teaspoon cumin
1/4 teaspoon cinnamon
1/4 teaspoon crushed red pepper flakes (or more if desired!)
1 teaspoon salt
1/4 teaspoon pepper
2 teaspoons white sugar (optional, but recommended if using natural peanut butter)

Steps:

  • Put all ingredients except the chicken into a slow cooker. Stir to combine.
  • Add the chicken. Cook on low until liquid has thickened and chicken is cooked (approximately 5 hours depending upon size of chicken pieces - I always use a meat thermometer to be sure).

24 chicken wings
1/3 c soy sauce
1/4 c rice vinegar
1/4 c worcestershire sauce
1/2 c brown sugar
1/4 c honey
4 clove garlic minced
1 to 2 Tbsp sriracha sauce
1 tsp each ground ginger, ground pepper and onion powder
2 Tbsp each cornstarch and water
black sesame seeds and cilantro for garnish

Steps:

  • 1. Place the chicken wings in the crock pot.
  • 2. In a large bowl whisk together the soy sauce, vinegar, Worcestershire, brown sugar, honey, garlic, sriracha, ginger, pepper and onion powder. Pour over the wings and cook on high for 3 to 4 hours or low for 6 to 8 hours. Stirring once in a while to make sure wings are coated in sauce.
  • 3. Remove wings from crock pot. Pour the sauce into a saucepan. mix the cornstarch with the water. Bring sauce to a boil and stir in the cornstarch . Cook until thickened. Pour over chicken wings and sprinkle with black sesame seeds and garnish with cilantro.

1 tablespoon cooking oil
6 boneless skinless chicken breast halves
4 garlic cloves, minced
1/2 cup brown sugar
1 cup low sodium soy sauce
1 cup low sodium chicken broth
2 tablespoons fresh lemon juice
1 teaspoon cayenne pepper, to taste
salt and pepper
1/4 cup cornstarch
1/4 cup water

Steps:

  • Heat oil in skillet.
  • Add chicken and brown on all sides.
  • While chicken is browning, make sauce by combining garlic, brown sugar, soy sauce, chicken broth, lemon juice, and cayenne in a mixing bowl.
  • Remove browned chicken from skillet and season to taste with salt and pepper.
  • Place chicken into crock pot and cover with sauce.
  • Cover and cook on low for 4-8 hours or until chicken is done, depending on your crock pot.
  • Remove chicken from crock pot and turn crock pot to High.
  • Mix corn starch and water thoroughly together, then add to crock pot liquid.
  • Place cover on crock pot so that the lid is slightly ajar.
  • Cook until sauce thickens, about 20-30 minutes.
  • Return chicken to crock pot to coat, then serve either alone or over a bed of rice and topped with sauce.

I would have liked to try a better BBQ Sauce but Winn-Dixie had a limited selection so I used there own which turned out pretty good. This is a great recipe for people who work or have little time to fix a meal trust me :-)

3 1/2 lbs boneless skinless chicken breasts (5 pack boneless or skinless Winn-Dixie)
2 (28 ounce) bottles barbecue sauce (Hickory, Winn-Dixie, or any brand of your choosing)
6 ounces red onions (diced Winn-Dixie)
6 ounces green peppers (diced Winn-Dixie)
2 tablespoons jalapenos (diced Jar or Fresh)
2 tablespoons hot sauce (Cajun chef green chili sauce)
1 tablespoon liquid smoke
8 ounces seasoning (Kevin's bayou blend dry seasoning)

Steps:

  • Unwrap and put all 5 pieces of chicken breasts on the bottom of the crock pot.
  • Take the bottle of Big Kevin's Seasoning and cover the top of each chicken breast.
  • Take pack of red onions and green peppers and dump on top of chicken.
  • Take liquid smoke, hot sauce, and jalapeño and dump on top of chicken.
  • Take barbecue sauce and make sure you put enough in to cover all the chicken breasts with (you will not need all of the 2nd bottle.
  • Set crock pot on Low for 7 to 8 hours. Once you get to the 7th hour you can check the chicken which should be tearing off when you pick it up. You can make kick ass shredded chicken sandwiches or pick it out for a really good meal.
  • As a bonus you should have enough sauce left to put in a plastic container and enjoy later.

I made this up out of several different recipes. Since we love things fairly spicy it took humdrum to very nice spice!!! Note that I do not brown chicken first...just toss it in the crock pot. Also...I am not very good about measuring...although since zaar membership I am trying harder....so always taste to decide if you need more of a spice. I am also not sure of the crock pot cooking time as I am at home checking it and stirring occasionally...will try and get that down better next time I make it. Enjoy!

2 1/2-3 lbs skinless chicken breasts, with ribs, washed and dried
2 pinches red pepper flakes
black pepper, to taste
3 teaspoons of minced garlic (or more if desired)
1 green bell pepper, seeded and cubed
1 red bell pepper, seeded and cubed
8 ounces fresh mushrooms, sliced
2 large onions, thinly sliced
1 teaspoon italian seasoning
2 (26 ounce) jars pasta sauce (I use Classico spicy red pepper and their spicy basil combined)
1 (15 ounce) can tomatoes seasoned with basil garlic & oregano
1 bay leaf
1/4 teaspoon Old Bay Seasoning
6 -7 fresh basil leaves, torn into small pieces
1 teaspoon Pickapeppa Sauce (optional)
1 small zucchini, diced (optional)
1/4 cup red wine (optional)
4 tablespoons chilled butter
1/4 cup half-and-half or 1/4 cup whipping cream
1/2 cup fresh grated parmesan cheese

Steps:

  • Place chicken in crock pot bone side up.
  • Add all seasonings and vegetables on top of chicken, including the optionals if using stop at the butter.
  • Then add the 2 jars of pasta sauce on top. I cook on high for 3-4 hours depending on how thick the chicken breasts are, stirring occasionally.
  • When the internal temperature reaches 180°F using a meat thermometer, I remove the chicken and debone, placing meat back into the sauce.
  • I then add the butter, whipping cream and continue to cook for another hour on warm.
  • About 10 minutes before serving, I add the parmesan cheese.
  • Serve over pasta or I use extra wide egg noodles with warm crusty bread!

4 jalapeno peppers
1 onion, diced
3 garlic cloves
10 chicken tenders
1 1/2 teaspoons cumin
1 teaspoon ground cayenne pepper

1 chicken bouillon cube

Steps:

  • Boil tomatillos and jalapenos in water for 15 minutes.
  • Take out and peel tomatillos (THEY WILL BE HOT TO THE TOUCH).
  • Take off stems of jalapenos, but leave in seeds and put them with the tomatillos into a blender.
  • Mix for 15 seconds.
  • Put into the crock pot with everything else.
  • Cook on high for 3 1/2 hours, and then take chicken out and shred.
  • Put back in for 1 hour, and serve with rice, or tortillas and beans.

1/4 cup peanut butter
2 tablespoons lime juice
1 tablespoon soy sauce (Tamarind to be gluten free)
1 teaspoon grated fresh ginger
1/4 cup sweet chili sauce
1/4 cup sambal oelek ground chili paste (adjust amount to preference)
2 tablespoons chopped peanuts (optional)
3 tablespoons chopped fresh cilantro (optional)

Steps:

  • In a medium bowl, mix together peanut butter, lime juice, soy sauce, ginger, sweet chili sauce and sambal oelek.
  • Brown the chicken using a small amount of oil or use a stovetop grilling pan.
  • Once the chicken is browned, dip the chicken in the sauce and place in slow cooker.
  • Pour the rest of the sauce over top of the chicken.
  • Cook on Low 8 hours or on High 4 hours.
  • Garnish with peanuts and cilantro, if using.
  • **This is very hot! It's best to add the Sambal Oelek after everything else and adjust the amount to your preference.

8 boneless skinless chicken thighs (trimmed of extra fat)
1 tablespoon olive oil
1/2 cup ketchup
1/4 cup low sodium soy sauce
1/4 cup honey
2 tablespoons dark brown sugar
1 tablespoon fresh ginger (grated)
1 tablespoon sriracha
3 cloves garlic (minced)
2 green onions (thinly sliced)
4 cups cooked white rice (for serving)
4 tablespoons cilantro (for garnish)

Steps:

  • Season chicken thighs with salt and black pepper to taste.
  • Heat olive oil over medium high in a 12-inch skillet. Add the chicken thighs skin side down and cook until browned about 3-5 minutes.
  • In a medium sized mixing bowl add ketchup, soy sauce, honey, dark brown sugar, ginger, sriracha and garlic. Whisk to combine.
  • Add chicken thighs to a 6 quart slow cooker. Pour sauce over the chicken thighs.
  • Cover the slow cooker and cook on high for 2-3 hours or until the chicken is fully cooked and the sauce has slightly thickened.
  • When fully cooked sprinkle the top of the chicken with green onions and cilantro. Serve over rice.
