3 tablespoons butter
3/4 cup finely chopped onion
3/4 cup finely chopped celery
4 cloves garlic, finely chopped
2 tablespoons salt-free seasoning blend
1/2 teaspoon ground red pepper (cayenne)
8 oz peeled cooked crawfish tails, chopped
1 package (8 oz) cream cheese, softened
Celery sticks, if desired

Steps:

  • In 8-inch skillet, melt butter over medium-high heat. Cook onion, celery and garlic in butter 5 minutes, stirring frequently, until tender. Add seasoning blend and red pepper; cook and stir 30 seconds longer.
  • In medium bowl, mix vegetables and crawfish tails. Add cream cheese; stir gently to combine. Serve with celery sticks.

Hot 'n Spicy Crawfish Dip image

2 tablespoons salted butter
1/2 cup diced green bell pepper
1 cup diced yellow onion
1/2 cup diced celery
3 garlic cloves, minced or crushed
1 jalapeno, diced
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 teaspoons paprika
1/2 teaspoon cayenne pepper
1 lb. peeled crawfish tails
8 ounces cream cheese, softened
2 cups grated extra-sharp Cheddar cheese (about 8 oz.)
1/4 cup heavy whipping cream
2 tablespoons Dijon mustard
1 tablespoon Worcestershire sauce
2 green onions, chopped, white and green parts
2 teaspoons hot sauce
2 tbsp. fresh lemon juice
2 tbsp. chopped fresh parsley
1 baguette, sliced into pieces

Steps:

  • Step 1 Set up your slow cooker and set it on High to heat up while you prepare the dip. Step 2 Melt butter in a large sauté pan or skillet over medium. Add bell pepper, onion, celery, garlic, jalapeño, salt, and black pepper, and cook 6 minutes. Step 3 Add paprika and cayenne pepper, and cook 1 more minute. Step 4 Place crawfish, cream cheese, cheddar cheese, and cream in a 6-quart slow cooker. Step 5 Change your cooking setting to HIGH. Step 6 Stir in bell pepper mixture, creole mustard, worcestershire sauce, and hot sauce. Step 7 Add the chopped green peppers Step 8 Break up the cream cheese with a large spoon so that the dip is loosely mixed. Step 9 Cover and cook on HIGH 30 minutes. Step 10 After 30 minutes, uncover and stir to make sure ingredients are thoroughly mixed. Cover and cook for an additional 10-15 minutes. Step 11 Reduce heat to WARM. Stir in lemon juice and parsley Step 12 serve with crackers, pita chips or toasted baguette slices.

40 lbs purged live crawfish
1 (4 ounce) bottle liquid zatarain's crab boil
1 lb tones cayenne pepper
6 whole leaf bay leaves
1/2 cup butter
0.5 (26 ounce) box salt
24 new potatoes (small)
24 ears corn (small)
2 (10 ounce) packages mushrooms
6 heads garlic (Cut top of pod off)
6 lemons (cut into wedges)
2 onions
1 (17 ounce) jar tony chachere's original seasoning
1 (10 lb) bag ice

Steps:

  • PURGE CRAWFISH.
  • First thing is to purge crawfish in a separate tub. to do this you simply dump the crawfish in a wash tub or something of size,fill with water over top of crawfish,and then sprinkle a box of salt all over them. Let crawfish set in the salt water for amount of time it takes to get water boiling in stock pot. Then drain & rinse them real good before adding to the pot. (Note: follow below directions before adding crawfish to pot.).
  • DIRECTIONS.
  • Fill 100 quart stock pot a lil over half full of water. Add crab boil, cayenne pepper, bay leaves, butter, lemons and salt. Bring to a boil for 10 minutes.
  • Add potatoes, corn, onion, mushrooms, and cut garlic pods. Boil another 10 minutes Add crawfish, bring back to a boil for about 5 minutes.
  • Cut fire, put in 1 bag of ice and immediately cover pot with lid. Let soak 20 to 30 minutes.
  • Drain, throw crawfish in drink box. Sprinkle Tony Chachere's, shake box to mix. Sprinkle and mix until you see spice's on the crawfish good. Enjoy!

Sherry's Spicy Crawfish Dip image

This is standard fare at all tailgating parties, backyard fete's and anything in between. I've been making it for about 5 years and had NOTHING but compliments. BEWARE...this is spicy hot!

1 lb bulk sausage (hot is especially good)
1/2 cup onion, chopped
1/2 cup bell pepper, chopped
2 tablespoons garlic powder
1 (10 1/2 ounce) can cream of mushroom soup
1 lb Velveeta Mexican cheese
2 teaspoons Tony Chachere's Seasoning
2 lbs crawfish tails

Steps:

  • Take one lb. of the crawfish tails and process them in a food processor until well chopped.
  • Brown your sausage, onion and bell pepper in a large sauce pan; drain when sausage is done (I use my colander).
  • Return the sausage mixture to the saucepan and all all of the remaining ingredients except for the 2 lbs. of crawfish.
  • Mix well and cook over low heat until the cheese is completely melted.
  • After the cheese is melted, add the crawfish and mix well.
  • Let this mixture simmer for 10-15 minutes, stirring to keep it from sticking.
  • Serve this in a crockpot to keep it warm; also, it can be mixed up in the crockpot, just make sure to brown your sausage first.
  • Serve with chips or if you really want a spicy kick, serve it with my recipe of Saltine Snackers.
