Number Of Ingredients 15

1 whole garlic bulb
2 to 3 tablespoons olive oil, divided
2 dried ancho chilies
2 dried chipotle chilies
1 bottle (12 ounces) dark beer
3 pounds beef stew meat, cut into 3/4-inch pieces
2 large onions, chopped
3 cans (16 ounces each) kidney beans, rinsed and drained
3 cans (14-1/2 ounces each) diced tomatoes, undrained
2 cans (8 ounces each) tomato sauce
2 tablespoons Worcestershire sauce
1 tablespoon chili powder
1 teaspoon pepper
1/2 teaspoon salt
Optional: Shredded cheddar cheese and sliced jalapeno pepper, seeded

Steps:

  • Preheat oven to 425°. Remove papery outer skin from garlic bulb, but do not peel or separate the cloves. Cut off top of garlic bulb, exposing individual cloves. Brush cut cloves with 1 teaspoon oil. Wrap in foil. Bake until cloves are soft, 30-35 minutes. Unwrap and cool slightly. Squeeze garlic from skins; mash with a fork., Meanwhile, in a large dry skillet over medium-high heat, toast chilies on both sides until puffy, 3-6 minutes. (Do not blacken.) Cool. Remove stems and seeds; coarsely chop chilies. Place in a small bowl; cover with beer. Let stand until softened, about 30 minutes., In the same skillet, heat 1 tablespoon oil over medium-high heat. Brown beef in batches, adding additional oil if needed; transfer to a 6-qt. slow cooker. In the skillet, heat 2 teaspoons oil over medium heat. Add onions; cook and stir until tender. Add to beef., Stir in the remaining ingredients, mashed garlic and dried chilies mixture. Cover and cook on low until meat is tender, 7-9 hours. If desired, serve with cheese and jalapenos.

Wanting to do something different with the standard beef stew, I added a spicy twist to this family's comfort food. It's quick and easy and sure to please the hungry!

all-purpose flour
1 pinch garlic salt, or to taste
ground black pepper to taste
2 ½ pounds beef stew meat, cut into cubes
1 tablespoon olive oil, or more if needed
3 cups water
1 (1.5 ounce) package dry beef stew seasoning mix
2 large potatoes, cut into cubes
1 small onion, chopped
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
1 teaspoon hot pepper sauce (such as Frank's RedHot®)
1 cup frozen corn

Steps:

  • Mix flour, garlic salt, and black pepper together in a shallow dish.
  • Gently press beef cubes into the flour mixture to coat evenly.
  • Heat olive oil in a skillet over medium heat; cook and stir beef in batches in hot oil until browned completely, about 5 minutes per batch. Remove browned beef with a slotted spoon to a bowl until all beef is browned.
  • Stir water and beef stew seasoning mix together in a slow cooker until the seasoning is dissolved into the liquid. Add browned beef, potatoes, onion, diced tomatoes with green chile peppers, and hot pepper sauce.
  • Cook on High, 3 1/2 to 4 1/2 hours. Add frozen corn and continue cooking until the corn is hot, about 30 minutes more.

4 bacon strips, chopped
1 medium onion, chopped
2 garlic cloves, minced
2 cups reduced-sodium beef broth
3 cups water
1 package (16 ounces) 16-bean soup mix
1 can (10 ounces) diced tomatoes and green chiles, undrained
1 can (8 ounces) tomato sauce
1 poblano pepper, chopped
1/4 cup packed brown sugar
1 envelope taco seasoning
TOPPINGS: chopped fresh cilantro, shredded cheddar cheese and sour cream

Steps:

  • Select saute or browning setting on a 6-qt. electric pressure cooker; adjust for medium heat. Cook bacon until crisp, 4-5 minutes. Add onion and garlic; cook until tender, 5-6 minutes longer. Add broth to pressure cooker. Cook 30 seconds, stirring to loosen browned bits from pan. Press cancel., Add water, soup mix, tomatoes and green chiles, tomato sauce, poblano pepper, brown sugar and taco seasoning. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 90 minutes. Let pressure release naturally., If desired, select saute setting and adjust for low heat. Simmer, stirring constantly, until desired consistency. I made up this dish back in the early 1970s when I was down to very little food in the house. Since it's combination of barbecue sauce, hamburger, hot dogs and beans, this one-skillet meal makes both children and adults happy.

2 pounds ground beef
2 (16 ounce) packages kielbasa sausage, sliced into 1/2 inch pieces
2 cloves garlic, chopped
1 onion, chopped
2 (14.5 ounce) cans peeled and diced tomatoes, drained
4 medium baking potatoes, peeled and diced
2 (15 ounce) cans pinto beans, with liquid
2 (15.2 ounce) cans whole kernel corn, with liquid
1 (14.5 ounce) can diced tomatoes with green chile peppers, with liquid
1 (10 ounce) package frozen mixed vegetables
4 cups water
2 teaspoons ground cumin
2 teaspoons chili powder
salt and pepper to taste

Steps:

  • Crumble the ground beef into a large skillet over medium-high heat. Add the sausage, garlic and onion; cook and stir until the meat is no longer pink. Drain off grease, and transfer the contents of the skillet to a large pot.
  • Pour the tomatoes into the pot with the meat, and stir in the potatoes, pinto beans, corn, diced tomatoes with chilies, mixed vegetables and water. Season with cumin, chili powder, salt and pepper. Cover, and simmer over medium-low heat for at least 1 hour. Stir occasionally. The longer this stew cooks, the better it gets.

1 tablespoon olive oil
1 pound beef stew meat
salt and pepper to taste
2 cloves garlic, minced
1 teaspoon chopped fresh ginger
1 fresh jalapeno peppers, diced
1 tablespoon curry powder
1 (14.5 ounce) can diced tomatoes with juice
1 onion, sliced and quartered
1 cup beef broth

Steps:

  • Heat the olive oil in a skillet over medium heat, and brown the beef on all sides. Remove from skillet, reserving juices, and season with salt and pepper. Cook and stir the garlic, ginger, and jalapeno in the skillet for 2 minutes, until tender, and season with curry powder. Mix in the diced tomatoes and juice.
  • Place the onion in the bottom of a slow cooker, and layer with the browned beef. Scoop the skillet mixture into the slow cooker, and mix in the beef broth.
  • Cover, and cook 6 to 8 hours on Low.

This is easy to play with, and easy to make. I got this recipe from a friend, but it was too spicy for my family, so I toned it down a bit. You can jack it back by adding more chili powder.

2 lbs ground turkey
1 (1 lb) can tomato soup
2 (1 lb) cans tomato sauce
2 (14 1/2 ounce) cans mixed vegetables
1 teaspoon chili powder
2 teaspoons garlic powder
1 teaspoon sage
1 teaspoon cumin
salt, to taste
1 (14 1/2 ounce) can ranch style beans
1 (14 1/2 ounce) can diced tomatoes
1/2 medium onion, diced

Steps:

  • Brown the turkey in a stew pot until all of the water is cooked off.
  • Add all of the other ingredients and simmer until dinner time. You can eat it as soon as it's hot, but the flavor is better if it cooks for at least two hours.

My mother in law came to visit from New York and named this Cowboy stew. It is an easy dish to make and we love it. It is now a hit in NY as well!

1 lb ground hamburger meat
1 jar(s) spicy v8 vegetable juice, large jar
carrots
potatoes
1 small onion
1 can(s) green beans, canned or fresh
1 can(s) corn, canned or fresh
1 can(s) tomatoes, canned, large
1 can(s) diced green chiles, canned or fresh
clove garlic

Steps:

  • 1. Cook and drain hamburger meat.
  • 2. In a large soup pot , add Spicy V8, then all vegetables. You can vary or add any vegetables to this. Add salt and pepper to taste.
  • 3. Add water so that it can reduce. I use anywhere from 1-2 cups of water. It can take as little as an hour to cook depending on how much you want it reduced and your vegetables cooked.
