From OregonLive.com. I loved the beef lettuce wraps from a restaurant in Montauk, NY called East by Northeast. This was the closest I have found to recreating it with a few minor adjustments from me.

1 lb lean ground beef
2 minced garlic cloves
1 tablespoon sherry wine
3 tablespoons soy sauce
1 tablespoon dark sesame oil
1 teaspoon thai chili paste (sambal oelek)
1/2 teaspoon Chinese five spice powder
1 bunch green onion, white parts chopped green parts cut on bias in 1/4-inch lengths (divided)
1 (8 ounce) can water chestnuts, drained and coarsely chopped
1 jalapeno chile, seeded, deveined and minced
1 teaspoon cornstarch, mixed with
1 tablespoon cold water
2 heads bibb lettuce or 2 heads butter lettuce

Steps:

  • Spray large, heavy skillet with nonstick cooking spray. In skillet set over medium-high heat, brown ground beef; drain if necessary.
  • Add garlic, sherry, soy sauce, sesame oil, chili paste, five-spice powder, white part of green onions, water chestnuts and minced chile. Turn down heat and simmer about 10 minutes.
  • Add cornstarch-water mixture to beef mixture and stir until it thickens slightly. Add green part of green onions and cook just until heated through (onion tops will lose their bright green color if cooked too long).
  • Separate lettuce leaves, wash and pat dry. Arrange lettuce cups on platter and serve alongside beef mixture.

SPICY CHINESE STIR FRY BEEF

As good as you can get in any restaurant. Its not hard to prepare at all and the flavour is a real taste sensation. The combination of the vegetables with the meat is delicious and just enough heat and spice to give this dish the nod from everyone.

150 g beef, thinly sliced
1 garlic clove, large, crushed
1/2 tablespoon soya sauce, light
1/2 tablespoon soya sauce, Dark
1 tablespoon oil, peanut
2 -3 cups Chinese vegetables, Been Shoots, Red Capsicum, Bok Choy, Chinese Leaf, Baby Corn, Spring Onions
1 teaspoon ginger, grated
1/2 cup water
1 tablespoon soya sauce, Light
1/2 tablespoon oyster sauce
2 1/2 teaspoons szechuan hot bean sauce
1/2 teaspoon sesame oil
1 teaspoon cornflour, heaped
water, to mix

Steps:

  • Cut the beef in thin slices, place in a dish with the garlic and the 1/2 tablespoon of Dark Soya sauce and the 1/2 tablespoon of light soya sauce. mix well, cover and place in the fridge to marinade for half an hour.
  • Cut up the vegetables of your choice, I use the vegetables I have mentioned, add the ginger and set aside.
  • Place the light soya sauce, oyster sauce, sesame sauce and the hot bean sauce in the water, mix the corn flour with enough water to make a paste and add it to the water.
  • Heat wok; add half of the oil and stir fry the vegetables. Place in warm oven. Add remainder of the oil to wok and quickly stir fry the meat for just a minute or two. Add the liquid, stir until it thickens.
  • Toss the vegetables back in and quickly stir.
  • Serve with fried rice or noodles of your choice.

CHINESE SPICY ORANGE BEEF MEATBALLS



Chinese Spicy Orange Beef Meatballs image

This is an easy recipe to make with any type of ground meet you have available.

1 lb ground beef (80/20)
1/2 lb ground turkey
1 orange (zest & juice)
1/3 c green onion, diced
2 clove garlic, minced
1/2 tsp ground ginger
1 Tbsp cornstarch
1/4 c soy sauce (or bragg's liquid aminos)
1/4 c dry sherry
1 tsp crushed red pepper flakes
1/2 c orange marmalade (low-sugar or sugar-free)
1/4 c italian breadcrumbs, fine

Steps:

  • 1. In a small sauce pan, combine ground ginger, cornstarch, soy sauce, (or Bragg's Liquid Aminos), dry sherry, crushed red pepper flakes, and orange marmalade.
  • 2. Ensure all ingredients are combined and allow the mixture to come to simmer for about 5 minutes. Do NOT boil!
  • 3. Once the mixture has simmered for 5 minutes, remove from heat and allow to cool. This takes about 1 hour. *TIP: You can pour the mixture in a bowl and place it in the freezer for 20-25 minutes to speed up the cooling process.
  • 4. In a large mixing bowl, add ground meat, zest & juice of one orange, green onions, breadcrumbs and minced garlic. *TIP: Allow ground meat to come to room temperature before handling.
  • 5. Pour 1/2 of the room temperature marmalade mixture into the ground meat mixture and gently combine. Set aside the other 1/2 of the sauce for serving.
  • 6. Tightly cover (with cling wrap) and allow to marinate at least 2 hours up to 24 hours.
  • 7. Preheat over to 375 degrees & line a baking sheet with foil. Spray foil with non-stick spray.
  • 8. At room temperature, form a golf ball size amount of meat into balls. The mixture will be slightly sticky
  • 9. Once each meatball is formed, place on the lined baking sheet with space between each one.
  • 10. Bake meatballs st 375 degrees for 22 minutes. Then bake at 325 degrees for 22 minutes.
  • 11. Once baking is completed, immediately remove baking sheet from oven and place the meatballs into an over-safe container with a lid. Pour the remainder of the marmalade mixture over the cooked meatballs along with 1 Tbsp. Sriracha sauce and cover.
  • 12. Allow the sauce at least 20 minutes to absorb before serving. A serving is 2 meatballs.

1 + lbs sirloin steak
Corn starch
Oil
3/4 C sweet chili sauce
3 tbs soy sauce
1 orange
Broccoli

Steps:

  • Tenderize sirloin steak until flat. Cut into strips and put into bowl. Add corn starch and mix around. Make sure there is enough corn starch to cover beef. Add oil to wok, enough to immerse beef strips. Heat oil on high. Add small batches of beef to oil and remove once browned to heat resistant bowl with paper towel to soak up oil. Continue in this fashion until all beef has been cooked. Mix sweet chili sauce, soy sauce, and the juice of one orange in measuring cup. Mix well. Remove oil from wok and re-heat wok. Add sauce mixture. Bring to a boil and cook mixture until it looks like syrup, Take off heat and toss in beef and pre-cooked broccoli heads (cut into small pieces). Make sure to cover beef and broccoli with sauce mixture. Serve over rice.
