1 tablespoon chili powder
1 ½ teaspoons salt
1 ½ teaspoons ground cumin
1 ½ teaspoons minced garlic
1 teaspoon ground black pepper
1 pound ground chicken
1 egg
1 large avocado - halved, pitted, and peeled
¼ teaspoon garlic powder
¼ teaspoon salt
1 (8 ounce) container light sour cream
1 ½ cups shredded cabbage
4 whole wheat Kaiser rolls
1 large tomato, sliced

Steps:

  • Mix chili powder, 1 1/2 teaspoon salt, cumin, minced garlic, and black pepper together in a small bowl.
  • Sprinkle 3/4 of the chili powder mixture over ground chicken in a large bowl. Add egg; mix well and shape into 4 patties.
  • Preheat grill for medium heat and lightly oil the grate. Grill patties until browned and juices run clear, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Mash avocado in a small bowl; season with garlic powder and 1/4 teaspoon salt.
  • Mix remaining chili powder mixture, sour cream, and shredded cabbage together in a bowl to make coleslaw.
  • Toast Kaiser rolls lightly on the grill. Place chicken patties on the buns. Top each patty with mashed avocado, a large scoop of coleslaw, and sliced tomato.

I really enjoy the recipes of Australian chef Bill Granger. He always comes up with dishes that somehow sound indulgent and healthy at the same time. This sounds like the kind of fusion food I have always thought I would experience if I ever got to go to Sydney. Cooking time includes chilling time for the burgers.

21 ounces ground chicken
1 onion, finely grated
3 ounces fresh white breadcrumbs
1 garlic clove, crushed
1 stalk lemongrass, white part only, finely chopped
2 tablespoons fresh cilantro, chopped
2 teaspoons lime zest, finely grated
1 tablespoon fish sauce
2 teaspoons caster sugar
light-flavoured oil, such as canola, for brushing
2 tablespoons caster sugar
2 tablespoons mirin or 2 tablespoons white vinegar
2 large carrots, cut into thin matchsticks
2 cups white cabbage, shredded
2 cups red cabbage, shredded
4 celery ribs, trimmed, cut into thin matchsticks
1 large red onion, thinly sliced
1 cup fresh mint leaves
1 cup cilantro leaf
1 tablespoon mirin or 1 tablespoon white vinegar
1 tablespoon caster sugar
1 1/2 tablespoons lime juice
2 tablespoons fish sauce
2 long red chilies, deseeded and finely chopped
1/2 teaspoon salt

Steps:

  • Put the ground chicken, onion, breadcrumbs, garlic, lemon grass, coriander, lime zest, fish sauce and sugar in a large bowl and mix together well with your hands.
  • Shape into six patties, then cover and refrigerate for 30 minutes.
  • For the slaw: mix together the sugar and rice vinegar, then add the carrot and leave to marinate for 20 minutes.
  • For the dressing: mix together all the ingredients, stirring until the sugar has dissolved.
  • Heat a barbecue or grill pan and brush with a little oil. Cook the patties for 4 minutes each side or until cooked through.
  • While the patties are cooking, put the white and red cabbage in a large mixing bowl.
  • Drain the carrot and add to the cabbage with the celery, onion, mint and coriander.
  • Add the dressing to the salad and toss together.
  • Serve the patties on soft rolls with lettuce, mint and coriander leaves and chilli sauce together with a helping of slaw.

1 1/4 pounds ground dark meat chicken
1 tablespoon sambal oelek (Asian chili paste)
Kosher salt and freshly ground pepper
1 tablespoon vegetable oil, plus more for brushing on pineapples
4 pineapple rings, drained and patted dry
2 tablespoons unsalted butter
4 large eggs
4 Kaiser rolls, split
12 slices pickled beets, drained
4 lettuce leaves
4 tomato slices
Mayonnaise and ketchup, for serving

Steps:

  • 1. Preheat a grill with a medium-high heat fire.
  • 2. Gently mix together the chicken, sambal oelek, 11/2 teaspoons salt, and 3/4 teaspoon pepper in a large bowl. Form into 4 (4-inch) patties with an indentation in the center of each burger.
  • 3. Brush the grill grate with 1 tablespoon oil. Lay the burgers on the grill and cook until grill marks appear, 5 to 6 minutes. Flip the burgers and continue grilling until an instant-read thermometer inserted sideways registers 160 degrees F, about 5 minutes. Set burgers aside to rest.
  • 4. Lightly brush the pineapple rings with oil, then grill the rings turning once, until distinct grill marks appear, about 3 minutes per side.
  • 5. Meanwhile, heat a large heavy nonstick skillet on the grill or on the stovetop over medium-high heat. Melt the butter and fry the eggs, sunny-side up, 3 to 4 minutes.

100 g all-purpose flour
1 teaspoon black pepper
1/2 teaspoon onion salt

  • Put chicken on chopping board and slice down middle with your knife longways (as if chopping down a tree) youll then have 2 thinner chicken breasts Marinate them in water (just enough to cover the chicken) with salt and msg for about 1/2 hour (I boil the water to dissolve then cool) Mix Flour ingredients.
  • Dry breasts with kitchen towell and dip into mix, then dip into either egg whisked with a small amount of milk (for a lighter coating) or just egg and then back into the mix.
  • Deep fry for 8 minutes and place on more paper towells.
  • Warm burger buns, add lettuce, mayonnaise and insert 1 burger.

1 teaspoon white wine vinegar
1/2 teaspoon sugar
1/2 small red onion, divided
1 ripe avocado, cut into 1-inch chunks
1 cup thinly sliced cucumber
1 portobello cap
1 cup frozen shelled edamame, thawed
2 cloves garlic
2 boneless, skinless chicken breasts (6 ounces each), quartered
2 tablespoons reduced-sodium soy sauce
1/4 teaspoon cayenne pepper
1 tablespoon olive oil
4 whole-wheat English muffins (or wholegrain buns), split
Lettuce leaves (optional)

Steps:

  • Heat oven to 400°F. In a bowl, whisk together yogurt, vinegar and sugar. Dice half the onion; add diced onion, avocado and cucumber to yogurt mixture; toss to coat. In a food processor, process portobello, edamame, garlic and remaining half of onion until finely chopped. Add chicken, soy sauce and cayenne. Steps:

  • For the burger:
  • Combine all the burger ingredients, except the rolls, lettuce and tomatoes in a large bowl and mix well. Form into small patties about 2 inches in diameter and arrange on a platter lined with waxed paper. Cover with plastic wrap and refrigerate until ready to grill.

1 medium onion, finely diced
2 large cloves garlic, crushed
1 lb (450 g) ground chicken breast
2-4 tablespoons hot sauce (more or less to taste)
3/4 teaspoon salt

Canola oil, for the pan
4 buns, split and toasted
1 batch Spicy Blue Cheese Celery Slaw

Steps:

  • Melt the butter in a medium skillet over medium heat; add the onion and cook until softened, but not brown, about 5 to 7 minutes. Add the garlic and cook 1 minute more, stirring constantly. Cool slightly.
  • Add the onion/garlic mixture (with the butter that's in the pan), ground chicken, hot sauce, salt, and black pepper to a large bowl. Combine the mixture with your hands being careful not to over-mix, and divide it into 4 portions. Shape each into a ball and flatten into a patty.
  • Heat a skillet over medium heat and add enough canola oil to generously coat the bottom. Once the skillet is hot, add the burgers and cook until they're cooked throughout, about 6 to 8 minutes per side, flipping once. (I like to cover the skillet with a lid to help contain the spattering oil, but leave the lid ajar so steam can escape, otherwise chicken has a tendency to be rubbery.)
  • Place the burgers on the buns and serve with the slaw on top.

Steps:

  • Prepare cucumber relish first by dissolving sugar in vinegar.
  • Add remaining ingredients and stir well.
  • Allow to sit at room temperature for at least half an hour.
  • Prepare satay sauce by mixing all ingredients until smooth; set aside.
  • To prepare burgers, whisk together peanut butter with Tabasco and chicken broth until blended.
  • Check ground chicken to be sure it isn't very wet; if it is, blot it with paper toweling.
  • In another bowl, stir up chicken with garlic, cilantro, mint, and salt, squeezing mixture with your hands to incorporate ingredients.
  • Stir peanut butter mixture into chicken mixture and blend until smooth.
  • Form into four thick patties.

1 small carrot
1 small red onion, halved
1 pound ground chicken
1/4 cup panko (Japanese breadcrumbs)
1/4 cup hoisin sauce
1 tablespoon grated peeled ginger
4 teaspoons low-sodium soy sauce
3 teaspoons hot Asian chili sauce, such as sambal oelek
8 ounces white mushrooms, thinly sliced
2 teaspoons toasted sesame oil
Juice of 1 lime
4 whole-wheat sesame hamburger buns

Steps:

  • Preheat the oven to 375 degrees F. Mist a baking sheet with cooking spray. Grate the carrot and 1/2 onion into a large bowl. Add the chicken, panko, 2 tablespoons hoisin sauce, the ginger, 3 teaspoons soy sauce and 1 teaspoon sambal oelek and mix until combined.
