1 medium butternut squash, peeled and cut into 2-inch cubes
3 carrots, peeled and cut into thirds
2 tablespoons olive oil, divided
1 tablespoon curry powder
2 teaspoons chili powder
2 teaspoons coarsely ground black pepper
1 pinch salt
½ medium yellow onion, chopped
1 habanero pepper, seeded and chopped, or more to taste
4 cloves garlic, diced
4 cups water, or more to taste
2 cubes chicken bouillon

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Place squash and carrots in a bowl. Drizzle with 1 tablespoon olive oil and add curry powder, chili powder, pepper, and salt. Place on a rimmed baking sheet.
  • Roast in the preheated oven until vegetables are soft, about 20 minutes.
  • Meanwhile, place onion, habanero pepper, and garlic in a pot with remaining olive oil and saute over medium heat until soft and fragrant, 5 to 7 minutes. Add water and bouillon, increase heat to medium-high, and bring to a boil. Stir in roasted squash and carrots, reduce heat, and let simmer for 10 to 15 minutes.
  • Transfer carefully to an electric blender or food processor, in batches if necessary, and blend until smooth.

SPICY CARROT AND POTATO SOUP

A really simple, medium sweet spiced soup. This soup uses spices from the storecupboard. Excellent for a starter as can be made in advance and also freezes well.

1 tbsp oil
1 onion, chopped
2 large carrots, peeled and roughly chopped into chunks
2 sticks celery, roughly chopped
2 large baking size potatoes, peeled and chopped into chunks
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp hot chilli powder
800ml veg stock (made up with 2 stock cubes)
pinch of salt and black pepper

Steps:

  • Heat the oil in a large saucepan or casserole pan.
  • Fry the chopped raw vegetables gently on a medium heat for about 5 minutes until slightly softened.
  • Sprinkle over the cumin, coriander and chilli powder and stir into the veg, cook gently for another minute.
  • Pour in the vegetable stock.
  • Bring up to the boil and then simmer for 20 minutes until the veg is tender.
  • Use a stick blender in the pan to blend the soup or transfer to a food processor and blend to a smooth consistancy. You may need to add more boiled hot water at this point if too thick.
  • Taste and season as required with salt and pepper.
  • Serve with crusty bread and a twist of black pepper.

A healthy, tasty, and spicy soup I made for Thanksgiving for a Turkish/Japanese crowd, who really enjoyed the heat! I used homemade chili powder from de arbol chilis, and homemade chicken stock instead of vegetable. Simple to make. The chopping takes a little while if you are slow like me, and it cooks for a long time, but does not really need to be attended too much. From a book called 400 Soups. The original recipe also included garlic croutons for topping.

1 tablespoon olive oil
1 large onion, chopped
3 3/4 cups carrots, sliced
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon hot chili powder
3 3/4 cups vegetable stock
salt & fresh ground pepper
fresh cilantro, to garnish

Steps:

  • Heat the oil in a large pan, add the onions and carrots and cook gently for 5 minutes, stirring occasionally. Add the ground spices and cook gently for 1 minute, continuing to stir.
  • Stir in the stock, bring to a boil, then cover and cook gently for about 45 minutes until the carrots are tender.
  • Puree the soup in a blender or food processor, or with a hand-held blender (so easy!). Return to rinsed-out pan, season to taste with salt and pepper, reheating gently. Garnish with coriander.

1 tablespoon extra-virgin olive oil
1 medium leek, white and pale-green parts only, halved lengthwise and sliced crosswise 1/4 inch thick, rinsed well
1 bunch carrots (about 6), peeled and sliced crosswise 1/4 inch thick
2 teaspoons harissa
Coarse salt
3 cups homemade or store-bought low-sodium chicken stock
Garnish: 1 tablespoon chopped fresh flat-leaf parsley

Steps:

  • Heat oil in a large saucepan over medium heat. Cook leek until just soft, 4 to 5 minutes. Stir in carrots and harissa. Season with salt. Cook until carrots are just soft, 8 to 10 minutes. Add chicken stock, and bring to a simmer. Cook until vegetables are tender, 10 to 12 minutes.
  • Puree half the soup in a blender until smooth. (For safety, remove cap from hole in lid, and cover with a dish towel to prevent spattering.) Stir puree into remaining soup in pan. Divide soup among 4 bowls, and garnish with parsley.

225 g carrots
2 tablespoons olive oil
1 tablespoon curry powder
350 ml vegetable stock
300 ml skim milk
salt and pepper

Steps:

  • Peel and finely chop the onion. Peel and cut parsnips and carrots into evely sized pieces.
  • Heat the oil in a saucepan and add the vegetables, coat with oil,and cook for a few minutes until they start to soften. Add the curry powder and cook, stirring, for a minute.
  • Stir in the stock and milk. Season with salt and pepper.
  • Bring to the boil then reduce heat to a gentle simmer. Cook for 15-20 minutes until vegetables are soft.
  • Allow to cool a little, and then puree in a blender or food processor until smooth. If it's too thick for your liking add more stock.
  • Reheat gently to serve.

1 pound carrots, peeled and sliced into 1/4-inch-thick disks
5 tablespoons EVOO (extra-virgin olive oil), plus some for drizzling
Salt and black pepper
1 orange
1 teaspoon hot sauce (eyeball it)
12 large shrimp, shelled, deveined, and butterflied (see Note)
2 medium onions, thinly sliced
2-inch piece fresh ginger, peeled and chopped
2 large garlic cloves, chopped
1 teaspoon curry powder, 1/3 palmful
1 quart chicken stock
1/4 cup fresh flat-leaf parsley, a generous handful, chopped

Steps:

  • Preheat the oven to 450°F.
  • Put the carrot disks on a cookie sheet, drizzle them with a little EVOO, and season them with salt and pepper. Toss the carrots around to make sure they are well coated. Spread in an even layer then roast them for 15 minutes, or until they are tender and the bottoms are browned. Stir the carrots at least twice while they roast so they cook evenly. Zest the orange and reserve.
  • In a shallow dish, combine the juice of half of the orange with the hot sauce, 2 tablespoons of the EVOO, and a little salt. Add the shrimp and toss to coat; set aside for a few minutes.
  • Preheat a soup pot over medium-high heat with 2 tablespoons of the EVOO, twice around the pan. Add the onions, ginger, garlic, curry powder, and salt and pepper to the pot and cook until the onions are tender and lightly colored, about 5 minutes, stirring frequently. If you find the onions are browning before they are getting tender, add a splash of water. Transfer the cooked onions to a blender or food processor, where they can wait for the carrots to finish roasting. Return the soup pot to the cooktop, add the chicken stock, and bring it up to a simmer.
  • When the carrots are roasted, transfer them to the blender or food processor where the onions are patiently waiting. Add a little ladle of the hot chicken stock and puree until the vegetables are smooth. Start by pulse-grinding the mixture to get it going and then let 'er rip. Add more hot stock, bit by bit, until it incorporates. Careful, sometimes when blending hot things the blender or food processor top is not tight enough and you can get splashed: put a kitchen towel over the lid for extra safety. (Hot carrot puree is not a home facial technique!) Add the carrot-onion puree to the bubbling stock and stir to combine, then let the soup gently simmer while you cook the shrimp.
  • Preheat a large skillet over medium-high heat with the remaining tablespoon of EVOO. Drain the shrimp and cook them on each side for 2 to 3 minutes, or until cooked through. Add the parsley and toss.
  • Check the soup consistency. If you want it thicker let it simmer a little bit longer; if you want it less thick, add a couple splashes of chicken stock to thin it out. Add the orange zest, stir it to combine, then taste and check for seasoning and adjust with salt and pepper.
  • Ladle some soup into shallow serving bowls and arrange 3 shrimp in the center of each bowl, standing up if you can manage it.

  • Peel and chop the garlic, chop three spring onions and the coriander stems, dice half the chilli and add to a large pot. Add the curry powder and fry in one teaspoon oil for 2 minutes.
  • Add the sweet potato, squash and carrots and fry for a few more seconds before adding the stock. Boil for 15-20 minutes.
  • Put the cashews in a freezer bag and bash a few times with a rolling pin. Toast the crushed nuts in a dry frying pan over a low heat for approximately 3-4 minutes.
  • Chop the remaining spring onions, coriander leaves and spring onions.
  • When all the vegetables are completely softened, blend the soup together. Ladle into bowls and garnish with the crushed nuts, chilli, coriander and spring onions.

750 g sweet potatoes, peeled and diced
250 g diced carrots
1500 ml vegetable stock
1 teaspoon chili oil

  • Heat the olive oil in a large saucepan and gently fry the onion over a medium heat until softened but not browned. Add the sweet potato and carrots and cook, covered, for 10 minutes or so, until the vegetables are soft but still with some bite.
  • Pour in the stock, bring to the boil and then simmer, covered, for 30 minutes until the vegetables are tender.
  • Pour into a blender and whizz until smooth - do this in batches if you need to. Return to the pan and gently reheat.

I went on a cruise on the Holland America cruiseline and they served a wonderful carrot soup. The seasonings are a little different, and this is from the Down Home with the Neely's cookbook, so you know it's gotta be good!

5 cups vegetable broth (or chicken broth)
1 lb carrot, coarsely chopped
2 medium celery ribs, coarsely chopped
1 large onion, coarsely chopped
1 leek, white and tender green parts only, coarsely chopped
1 small sweet potato, peeled and coarsely chopped (about 6 ounces)
2 teaspoons fresh ginger, grated
1 1/2 teaspoons ground cumin
1 teaspoon ground coriander
1/4 teaspoon cayenne pepper (more or less to heat preference)
1 cup buttermilk (well shaken)
2 tablespoons fresh lemon juice
salt
pepper
2 tablespoons flat leaf parsley, coarsely chopped

Steps:

  • In a large pot, combine the stock with the carrots, celery, onion, leek, potato, ginger, cumin, coriander, and cayenne, and bring to a boil.
  • Cover and simmer over low heat until the vegetables are tender, 20-25 minutes.
  • Working in batches, puree the soup in a food processor(or blender), then return to the pot.
  • Stir in buttermilk and lemon juice, and season with salt and pepper to taste.
  • Reheat gently. Ladle into bowls, and sprinkle with the parsley and serve. Enjoy!

1 tablespoon canola or other vegetable oil
1 large onion, thickly sliced (about 2 cups)
2 pounds carrots, peeled and thinly sliced (about 6 cups)
1 celery stalk, thinly sliced
1 teaspoon salt
1 teaspoon Chinese chili paste*
6 cups water
2 tablespoons peanut butter (see Note)
3 tablespoons soy sauce
2 tablespoons fresh lime juice
a few fresh lime wedges

Steps:

  • Or use a fresh stemmed and chopped fresh chile and 2 minced garlic cloves. In a soup pot on medium heat, warm the oil and add the onions, carrots, celery, salt, and chili paste. Sauté on high heat for 5 minutes, stirring often. Add the water, cover, and bring to a boil. Lower the heat and simmer until the carrots are soft, about 25 minutes. Stir in the peanut butter, soy sauce, and lime juice. In a blender, purée the soup in batches. Reheat, if necessary. Serve with lime wedges. Note: If you wish, replace the peanut butter with freshly ground peanuts. Grind ½ cup unsalted roasted peanuts in a blender or small food processor and add them to the soup just before puréeing it. Variation: Try serving the soup cold. It's not your usual chilled soup candidate, but we like it!

1 (2-inch) knob of ginger, peeled and finely chopped
1 teaspoon ground cumin seed
1/2 teaspoon ground coriander
1 to 2 tablespoons harissa paste (see note above)
2 1/2 pounds carrots, peeled and roughly chopped
1 1/2 quarts low-sodium homemade or store bought vegetable or chicken broth (see note above)
Kosher salt
1/4 cup pine nuts
2 tablespoons chopped fresh parsley leaves
1 tablespoon zest and 2 tablespoons juice from 1 lemon

Steps:

  • Heat 2 tablespoons olive oil in a large saucepan over medium heat until shimmering. Add leeks, onions, garlic, and ginger, and cook, stirring frequently, until vegetables are softened but not browned, about 5 minutes. Add cumin, coriander, and harissa paste and cook, stirring constantly, until fragrant, about 1 minute. Add carrots and stir to coat in spice mixture. Add broth (see note above), season with a pinch of salt, bring to a boil, reduce to a bare simmer and cook, stirring occasionally, until carrots are completely tender, about 20 minutes. 2 Meanwhile, heat 2 tablespoons olive oil in a small skillet over medium heat until shimmering. Add pine nuts, reduce heat to low, and cook, tossing and stirring constantly, until fragrant and nutty brown, about 10 minute. Transfer to a bowl. Let cool for a few moments, then stir in parsley, lemon zest, and a pinch of salt. 3 When carrots are tender, transfer half of soup to a blender. Start blender on lowest speed and slowly increase speed to high. With blender running, slowly drizzle in remaining 2 tablespoons extra-virgin olive oil. Transfer soup to a clean pot, pressing it through a fine mesh strainer or chinois if desired. Repeat with remaining soup and 2 more tablespoons olive oil.   • Heat the olive oil in a pan over a medium heat. Add the chopped onion, celery sticks, garlic and grated fresh ginger and cook for about 5 minutes.
  • Stir in the curry powder and cook for a further 5 minutes.
  • Add the chopped parsnips and carrots and pour in the vegetable stock. Cover and simmer until the vegetables are tender; about 30 minutes.
  • Puree the soup, in batches, adding more stock to get the right consistency. If you're freezing the soup, cool completely and freeze in airight containers for up to 3 months.
  • To serve, reheat and drizzle each bowl with a tablespoon of cream and top each bowl with half tablespoon of the toasted pumpkin seeds.
  • Cook's tip: To toast pumpkin seeds, place in a pan over a medium heat and dry fry until the seeds begin to pop.

  • Heat oil, and add the carrot and onion, cook until slightly softened-about 5 minutes
  • Add spices and stir until carrot and onion covered with spices
  • Add vegetable stock, bring to boil and then simmer for about 15/20 minutes until the carrots are soft
  • Leave to cool, once cool, blend until smooth
  • Add more stock if the soup is a bit thick, adding seasoning and more chilli, if you require more of a chilli kick

2 -3 tablespoons olives or 2 -3 tablespoons sunflower oil
2 onions (sliced)
3 garlic cloves (coarsely chopped)
1 tablespoon ginger (chopped) (optional)
1 cayenne pepper (sliced, removing seeds optional)
500 -600 g carrots (chopped)
4 tomatoes (diced)
2 vegetable bouillon cubes
1 1/2 liters water
400 ml coconut milk
1/2 cup cilantro, as garnish
1 lime

Steps:

  • Heat oil in pan at medium, add onion, cayenne pepper and garlic. Cook until onion is translucent (taking care not to burn the garlic).
  • Add chopped carrot and tomato (and ginger, optional) and cook for another 5 or 10 minutes, stirring about every minute.
  • Add bouillion cubes and water (water should just about immerse the contents of the pan).
  • Simmer until carrots are tender.
  • Blend the contents of the pan and return to pan.
  • Stir in coconut milk and heat through without allowing it to boil.
  • Serve and add cilantro and lime juice to taste. The lime juice helps mellow out the heat of the cayenne pepper.

1 Tbsp. butter
1/2 cup chopped onion
1/3 cup chopped leek
4 carrots, sliced into small disks
1 red chilli finely chopped (or depending of personal taste)
1/4 cup chopped parsley
5 cups chicken broth
1/3 to 1/4 cup uncooked long cooking rice

Steps:

  • In warm pot, firstly soften onion and leek in butter. After few minutes, add remaining ingredients. Cook all together for 1/2 hour. Wait for 20min to cool, after put it in blender or food processor, and make puree. Add seasoning such as: nutmeg, black & white pepper. If desired, you can add garlic, ginger, cumin etc. As well before serving add roasted pine nuts, or 1-2 spoons of Greek yogurt. Bon appetite

Steps:

  • Add 1.5l of boiling water in a pan and add the vegetable stock cubes, corriander and onion
  • Peel the carrots and potoes and chop them add this to the pan of water
  • Add a pinch of chili flakes to the pan
  • Boil for 20 mins and then let it cool down
  • Pour the ingredients in to a liquidiser. Season with salt and pepper
