SPICY PEANUT BUTTER & JELLY CHICKEN WINGS
You'll need lots of napkins with this finger licking good wings. The glaze is amazing and spicy with the right amount of sweetness.

Steps:
- 1. Preheat oven 425 degrees. Line a baking sheet with parchment paper or silicone baking mat.
- 2. Whisk the mashed potato flakes, canola oil, and salt together. Add the wings with hands massage the mixture onto the wings. Place the wings on the baking sheet and bake for 20 minutes. Turn the wings and bake 20 more minutes.
- 3. Meanwhile mix the remaining ingredients together in a large bowl. Once the wings have baked toss in the peanut butter and jelly mixture and place back in oven pouring any remaining sauce on wings and bake another 5 minutes.
SPICY PEANUT BUTTER CHICKEN
Steps:
- 1. In a small bowl, combine stock, peanut butter, soy sauce, and rice wine vinegar until smooth. 2. Pour ¾ of the mixture into plastic bag. Add chicken to bag. Marinade for 4 hours or overnight. 3. Add water and cornstarch to small bowl. Stir until smooth. Blend with remaining sauce. Set aside (chilled) while chicken marinades. 4. Grill the chicken. Baste with remaining sauce. 5. In a wok or large heavy-bottomed skillet, heat oil over high heat. Add the remaining ¼ of the peanut butter sauce, garlic and ginger, and cook for about 5 minutes. Add the carrots, baby corn, snap peas and red pepper, and cook for 3-5 minutes longer, or until vegetables are tender-crisp. 6. Serve immediately. Sprinkle green onions and peanuts as garnish.
SPICY BUTTER CHICKEN
Steps:
- Heat in a pan : 2 tbsp butter 1 onion, diced When onion starts to brown, add the whole spices : 1 cinnamon stick 1 black cardamom 5 black peppercorns 2 cloves 1/2 tsp cumin seed When onions have browned, add powder spices : 2 Tbsp corriander powder 1/2 tsp tumeric powder 1/2 tsp chili powder 1 tsp garam masala salt 1/4 cup water When water boils off, set aside basic curry sauce Mix together, then bake in oven until chicken is done (1-1.5 hrs) 1 kilo chicken thighs, cubed 1/2 cup yogurt 6-8 Tbsp tomato paste 1+ tsp garlic paste 1 tsp ginger paste basic curry sauce Serve with naan and basmati rice, garnish with fresh chopped coriander.
