Steps:

  • Pour the water into a slow cooker, add the bouillon cube, and stir to dissolve. Combine the black-eyed peas, onion, garlic, bell pepper, jalapeno pepper, ham, bacon, cayenne pepper, cumin, salt, and pepper; stir to blend. 2 slices thick-cut bacon, sliced
5 cloves garlic, peeled
5 dried red chiles, broken up
2 bay leaves
1 pound dried black-eyed peas
1 quart low-sodium chicken stock
2 tomatoes, quartered
1/4 bunch fresh thyme, leaves removed
Kosher salt and freshly ground black pepper
1 lemon, juiced
4 green onions, chopped
1/4 cup chopped fresh cilantro leaves

Steps:

  • In a large pot over medium heat, add bacon and render until crisp. Remove the bacon to the paper towel-lined plate. To the same pot with rendered bacon fat, add the garlic, chiles, bay leaves, and dried peas and stir to combine. Pour in the chicken stock and add the tomatoes. Simmer over medium-low heat for 1 hour until peas are tender.
  • Transfer about 1 to 2 cups of the peas to a blender and puree until smooth. Place the blended peas back into the pot and stir to incorporate. Add the thyme leaves and season with salt and pepper, to taste. Continue to cook for another 15 minutes. Place in a serving dish and dress the peas with the lemon juice, green onions, cilantro and bacon before serving

1 cup chopped orange bell pepper
1 cup chopped celery

4 teaspoons vegetable bouillon base (such as Better Than Bouillon® Vegetable Base)
1 (7 ounce) can chipotle peppers in adobo sauce, chopped, sauce reserved

½ teaspoon ground black pepper

Steps:

2 garlic cloves (minced or pressed)
1 bell pepper, diced
1 small onion, diced
1 teaspoon salt

1 teaspoon dried thyme (crushed)
1 (26 ounce) can chopped tomatoes (do NOT drain)
1 (4 ounce) can diced green chilies (do NOT drain)

  • Either presoak beans overnight, or, boil beans for 2 minutes and then remove from heat, cover and let set for 1 hour.

  • Place the corn into a saucepan, cover with water, and bring to a boil. Reduce heat and simmer until the corn is fully cooked, about 2 minutes. Drain the corn in a colander set in the sink.
  • Mix together the warm corn, black-eyed peas, ham, celery, and onion in a salad bowl.
  • Whisk together the sour cream, ketchup, cilantro, Cajun seasoning, and hot pepper sauce in a bowl until smooth. Stir the dressing lightly into the black-eyed pea mixture until thoroughly mixed. Serve immediately.

Uses canned balck-eyed peas, so is quick to make. Adjust "heat" to your liking. Good with cornbread. Can sizes are approximates.

3 slices bacon
1 cup onion, chopped
1 large green bell pepper, seeded and chopped
1 garlic clove, minced
1 (16 ounce) can black-eyed peas, drained
1 (16 ounce) can diced tomatoes, undrained
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon curry powder
1/2 teaspoon cayenne pepper
1/2 teaspoon chili powder

Steps:

  • In a large frying pan, cook bacon slices until crisp. Remove and drain on a paper towel. When cool, crumble into pieces.
  • Using the same pan, add onion, green pepper and garlic to bacon drippings and saute over medium heat until onions start to soften. Add remaining ingredients heat to a low boil. Reduce heat and simmer for 30 minutes.
  • Divide between 2 large bowls (or 4 smaller bowls) and top with bacon pieces.
