Steps:

  • Place lemon zest, cardamom pods, vanilla pod, and ground coffee into paper filter in brew basket of your coffee maker.
  • Add water to the coffee maker, and brew according to manufacturer's directions.
  • While coffee is brewing, make the chantilly whipped cream:.
  • Whip the cream until soft peaks form; add the sugar, vanilla, cognac and cardamom, beating until well combined.
  • Pour spiced coffee into 6 tall warmed mugs, about 2/3 full.
  • Sweeten each serving with a teaspoon of sugar, or to taste.

1 vanilla bean, split

Unsalted butter, for greasing pan
1 large egg white
3 cups walnut pieces
1/4 cup brown sugar
1/2 teaspoon ground cinnamon

1/4 teaspoon ground allspice
1/4 teaspoon cayenne pepper
1/4 teaspoon ground cloves
1 cup heavy cream, chilled
2 tablespoons granulated sugar

Steps:

  • For the ice cream: In a small, heavy-bottomed saucepot, bring the goat's milk and cream to a boil. Remove from the heat and whisk in the cheese, granulated sugar and salt. Blend the cheese mixture in a blender until smooth. Transfer to a bowl. Freeze the cheese mixture in an ice cream maker according to the manufacturer's instructions. Transfer to an airtight container and put in the freezer to harden, at least 2 hours. Let the ice cream soften 5 minutes before serving.
  • For the cherry vanilla sauce: Combine the cherries, orange juice, granulated sugar and cinnamon stick in a medium saucepan. Scrape in the seeds from the vanilla bean and add the bean. Bring to a boil over high heat, stirring until the sugar dissolves. Boil 1 minute. Strain into a bowl. Reserve the cherries. Return the juices from the bowl, cinnamon stick and vanilla bean to the same pan. Mix the cornstarch and 1 tablespoon water in a small bowl; stir into the juices in the pan. Stir over medium heat until the juices boil and thicken, about 1 minute. Mix in the reserved cherries. Chill the compote 2 hours.
  • For the walnuts: Preheat the oven to 250 degrees F. Lightly butter a large shallow pan.
  • Whisk together the egg white and 1 teaspoon water in a large bowl until frothy. Stir in the nuts. Stir together the brown sugar, cinnamon, nutmeg, allspice, pepper and cloves, and then stir into the nuts, coating well. Spread the nuts in the prepared pan and bake in the middle of the oven until dry, about 50 minutes. Cool and break into bite-size chunks.
  • For the whipped cream: Beat the cream, granulated sugar and vanilla in a medium bowl until peaks form. Stir in the thyme leaves.
  • To serve, scoop the ice cream into sundae bowls, top with cherry vanilla sauce, thyme whipped cream and chopped spiced walnuts.

Transfer batter to prepared loaf pans.

½ cup brown sugar
1 egg
⅓ cup corn syrup
⅛ teaspoon nutmeg
⅛ teaspoon allspice

¼ cup pumpkin puree
½ cup pecan, finely chopped
2 cups crescent dough
1 cup cream cheese, softened
½ cup whipping cream

Steps:

  • In a large mixing bowl, whisk together the butter and brown sugar for 2- 3 minutes. Add the egg and whisk to combine, then add the corn syrup followed by the spices. Whisk well to combine, then add the pumpkin puree, followed by the pecans, then whisk again to fully incorporate. Set mixture aside.
  • Preheat your oven to 350⁰F. On a floured surface, divide your pre-made crescent dough into 6 even pieces. Using a roller, flatten each piece into a circle. 1 pkg refrigerated pie crusts (2 crusts)
3/4 c canned pumpkin
2 Tbsp non-dairy liquid coffee creamer, any flavor (i used sugar free vanilla)
1 egg white
3/4 tsp pumpkin pie spice
2 Tbsp sugar
additional sugar & pumpkin pie spice (mixed together, for dusting)
WHIPPED CREAM:
1 c heavy whipping cream
2 Tbsp sugar
pumpkin pie spice (about 1/2 tsp. or so)

Steps:

  • 1. Preheat oven to 350 degrees F. Line 2 baking sheets with parchment or foil, spray lightly with nonstick.
  • 2. In a small mixing bowl, combine pumpkin, creamer, egg white, pumpkin pie spice and 2 T. sugar; set aside.
  • 3. Unroll one pastry, carefully spread pumpkin mixture in a thin layer over pastry (may not need all of the pumpkin mixture)- leave an 1/8-1/4 inch all the way around.
  • 4. Unroll second pastry, place it over pumpkin mixture and gently press edges together. Dust top of pastry with sugar and pumpkin spice mixture (you could also use a sugar & cinnamon mixture.)
  • 5. Using a pizza or ravioli cutter, cut into strips that are about 3/4" wide x 2 1/2" long.
  • 6. Place on prepared pans, leaving plenty of space between the sticks. Bake both pans for about 20 minutes or until dough is firm and golden brown.
  • 7. WHIPPED CREAM: Chill a metal mixing bowl and beaters in freezer for about 20 minutes. Place whipping cream, sugar and spice in chilled bowl and beat with electric mixer until stiff peaks form. Serve chilled in small bowls for dipping.

  • In a stainless steel mixing bowl, combine pineapple slices, sugar, wine, vanilla bean and mint leaves. Place into baking pan and cover with foil. Bake at 350 degrees F for 30 minutes. Fruit should be slightly caramelized to the bottom of the baking pan and there should be fragrant syrup through out.

1/4 teaspoon ground cinnamon, plus more for dusting
1/4 teaspoon ground ginger
1 cup brewed espresso
1 cup boiling water
1 cup heavy cream
2 tablespoons confectioners' sugar

Steps:

  • In a small saucepan, combine water and sugar over medium heat. Bring to a boil and reduce heat to low. Add the allspice, cinnamon, and ginger to the simple syrup and simmer for 5 minutes. Take pan off heat and set aside. To the 1 cup of brewed espresso, add 1 cup of boiling water. Pour 1/2 cup of espresso into each of 4 (6 to 8-ounce) serving cups. Add 2 tablespoons of the spiced simple syrup to each cup and stir to combine. In a large bowl, using an electric mixer with a whisk attachment, beat the heavy cream until soft peaks form. Add the confectioners' sugar and continue to beat until stiff. Top each cup of espresso with a dollop of whipped cream. Dust with cinnamon and serve.

1 1/2 cups all-purpose flour, plus more for the molds
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon kosher salt
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
4 ounces semisweet or bittersweet dark chocolate
1 stick (8 tablespoons) unsalted butter, plus more for the molds
1 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
1 cup whole milk
1 cup heavy cream, chilled
1/2 cup sour cream, chilled
1/4 cup packed light brown sugar
1/2 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the flour, baking soda, cinnamon, salt, allspice and cloves in a large bowl and set aside.
  • Melt the chocolate and butter in a double boiler or the microwave and whisk until smooth. Add the granulated sugar, vanilla, eggs and milk to the melted chocolate and whisk until smooth.
  • Add half of the dry ingredients and fold together with a spoon or spatula. Repeat with the remaining dry ingredients.
  • Butter and flour twelve 4-ounce ramekins, custard cups or disposable aluminum cups. Invert and tap on the counter to expel the excess flour. Fill each cup three-quarters of the way with batter and tap gently or use a spatula to smooth. Space the cups 1 to 2 inches apart on a baking pan. Bake until the edges look firm and dry and the centers are slightly soft, about 14 minutes. Cool briefly and remove the cakes from the ramekins.
  • Just before serving, beat the heavy cream, sour cream, brown sugar and vanilla in a large bowl with a mixer on medium-high speed until soft peaks form, about 2 minutes. Garnish each with a dollop of whipped cream.
