Salmon:
1 can (14.5 ounces) wild Alaskan salmon
1 1/2 scallions, chopped (divided)
1/4 cup whole-wheat breadcrumbs
1/2 teaspoon curry powder
1 teaspoon olive oil
2 tablespoons low-sodium soy sauce
1/8 teaspoon ground ginger
4 cups cooked brown rice
Spinach:
2 teaspoons olive oil
1 teaspoon chopped garlic
1 bag (12 ounces) prewashed baby spinach

Steps:

  • Salmon:
  • Drain fish; put in a bowl. Stir in 1 of the scallions, breadcrumbs and curry. Form 4 patties. Heat oil in a medium pan over medium heat. Cook patties until light brown, about 4 minutes; flip; cook 3 minutes more. Serve over rice. Dipping sauce: Mix soy sauce, ginger and remaining 1/2 scallion.
  • Spinach:
  • Heat oil in a large pan over medium heat. Sauté garlic until just browned, about 1 minute. Add spinach; cook until wilted, about 4 minutes.

1 lemon
¼ cup honey
1 pound salmon fillets
Freshly ground Spice Islands® Black Pepper Adjustable Grinder
1 ½ teaspoons Mazola® Corn Oil
½ cup thinly sliced red onions
2 cloves garlic, thinly sliced
1 (5 ounce) package fresh baby spinach
¼ cup dry white wine
¼ teaspoon Spice Islands® Crushed Red Pepper
⅛ teaspoon salt
1 tablespoon chopped, toasted pine nuts

Steps:

  • Preheat oven to 450 degrees F. Grate zest from lemon; set aside. Squeeze 1 tablespoon lemon juice into a small bowl. Add honey and mix well. Line a baking sheet with foil; spray foil with cooking spray. Place salmon fillets on baking sheet. Generously season with black pepper. Drizzle with half of the honey mixture. Roast salmon for 10 to 12 minutes or until fish is lightly browned and flakes easily. Brush on remaining glaze as needed. For a browner glaze, broil on HIGH the last few minutes of cooking.
  • Heat oil in a large nonstick skillet over medium-high heat. Add onions and garlic and saute 3 to 5 minutes. Add spinach and white wine. Continue to saute until spinach is wilted and most of the liquid has evaporated. Stir in 1 teaspoon lemon zest, crushed red pepper and salt. Divide spinach evenly on top of salmon fillets; sprinkle with pine nuts. Serve immediately.

4 (6-ounce) salmon fillets, preferably skin on
1 teaspoon ground coriander
1 teaspoon sweet paprika
3/4 teaspoon ground ginger
1/2 teaspoon kosher salt
1/4 teaspoon ground cinnamon
Pinch cayenne
1 tablespoon extra-virgin olive oil
Serving Suggestion: Sauteed spinach or other greens

Steps:

  • Preheat oven to 375 degrees F.
  • Using a sharp knife, slash the salmon skin to form cross-hatch marks. Stir the spices together in a small bowl, and then rub over the flesh side of the salmon.
  • Heat the oil in a medium oven proof non-stick skillet over medium-high heat. Place the salmon, skin-side up, and cook until seared and golden, about 3 minutes. Turn the salmon and cook until the skin sizzles and fries, about 1 minute. Transfer the skillet to the oven and continue cooking until the salmon is firm to the touch, about 4 minutes.
  • Transfer the fillets to 4 plates. Serve with the sauteed greens, if desired.

2 (5 1/2 ounce) salmon fillets, skinned
1 teaspoon freshly ground mace
1 teaspoon crushed black pepper
1 teaspoon flaked sea salt
1/2 lemon, juice of
1 ounce butter
2 garlic cloves, crushed
8 ounces baby spinach leaves
1/2 lemon, juice of
1 pinch of freshly grated nutmeg
freshly ground salt and black pepper

Steps:

  • Heat the butter in a large saucepan. Once melted, add the garlic, then the spinach, stirring well.
  • Mix in the lemon juice, season with the nutmeg, salt and freshly ground pepper. Cover the pan and turn off the heat.
  • Set aside for 5 minutes until the spinach is slightly wilted.
  • Meanwhile, preheat the broiler. Season the salmon fillets with the mace, black pepper and sea-salt.
  • Place the salmon on the hot broiler and broil for 2 minutes, without moving.
  • Turn the salmon fillets over and cook for a further 2 minutes, until a white residue appears around the edge of the salmon. Once this appears, remove the salmon and rest for 1 minute.
  • Squeeze the lemon juice over the salmon just before serving. Serve the salmon with the spinach.
