SPICED LIME-MARINATED EYE OF ROUND STEAKS

This recipe for eye of round steak becomes tender when marinated in a flavorful spice-lime mixture and grilled to just medium-rare.

1 medium lime ( juiced )
1 teaspoon kosher salt
1 teaspoon garlic powder
1 teaspoon ground cumin
1 teaspoon freshly ground black pepper
1 teaspoon ground coriander
2 (8-ounce) beef eye of round steaks (cut 1 inch thick)

Steps:

  • Gather the ingredients.
  • Make the marinade by combining lime juice, salt, garlic powder, cumin, pepper, and coriander.
  • Use a fork to deeply prick the steaks all over on both sides.
  • Place the steaks in a resealable plastic bag and pour the marinade over the steaks, making sure to coat them well. Let marinate at room temperature for 30 minutes, turning once.
  • Heat an outdoor grill , indoor grill, or grill pan on the stovetop and remove the steaks from the marinade.
  • Place the steaks on a hot grill (or grill pan that has been very lightly coated with cooking spray) and cook each side for 4 to 5 minutes, or until done to your liking.
  • Let the meat rest for 10 minutes. Enjoy whole or sliced against the grain .

1 fresh beef brisket (6 pounds)
1/3 cup packed brown sugar
3/4 cup coarse sea salt
1/4 cup chopped onion
4 bay leaves, crushed
3 teaspoons pepper
2 teaspoons dried rosemary, crushed
2 teaspoons dried thyme
1-1/2 teaspoons ground allspice
1-1/2 teaspoons ground cloves
4 medium onions, sliced
4 medium carrots, sliced
2 celery ribs, sliced
2 cups stout or beef broth
Optional: Rye bread, Swiss cheese slices and Dijon mustard

Steps:

  • Place beef in a 15x10x1-in. baking pan; rub with brown sugar. Refrigerate, covered, 24 hours., In a small bowl, mix salt, chopped onion, bay leaves and seasonings; rub over beef. Refrigerate, covered, 3 days, turning and rubbing salt mixture into beef once each day., Preheat oven to 325°. Remove and discard salt mixture. Place beef, onions, carrots, celery and stout in a roasting pan. Add water to come halfway up the brisket. Roast, covered, 4-4-1/2 hours or until meat is tender. Cool meat in cooking juices for 1 hour., Remove beef; discard vegetables and cooking juices. Transfer beef to a 13x9-in. baking dish. Refrigerate, covered, overnight., Cut diagonally across the grain into thin slices. Serve with rye bread, cheese and mustard.

2 teaspoons coriander seeds
1 teaspoon anise seed
1 teaspoon fennel seed
1 teaspoon dried thyme
1 teaspoon ground cloves
1 teaspoon sea salt
1 teaspoon pepper
1/2 teaspoon ground cinnamon
2 1/2 cups dry white wine
2 1/4-2 1/2 lbs round beef
2 tablespoons olive oil
2 onions, chopped
2 carrots, chopped
2 stalks celery, chopped
1 parsnip, chopped
4 green beans, chopped
8 mushrooms, chopped
1 1/4 cups beef broth or 1 1/4 cups chicken broth
7 tablespoons dry red wine
2 sprigs fresh parsley

Steps:

  • Serve with oven baked potatoes.
  • Put the coriander seeds in a mortar and pound them with a pestle.
  • Stir in the rest of the spices and seasonings, then pour the mixture into a bowl and stir in the white wine.
  • Put the beef in large zip lock bag, pour the marinade over the beef, push the air out of the bag and seal it.
  • Massage the marinade around the beef and refrigerate for about 24 hours, turning and massaging occasionally.
  • Preheat the oven to 300f degrees.
  • Heat the oil in a deep casserole just large enough to hold the beef snugly.
  • I use my cast iron dutch oven.
  • Add all the vegetables and cook over gentle heat for 15 to 20 minutes, or untl they start to soften.
  • Lift the beef out of the marinade and place on top of the veggies.
  • Strain 1 1/4 cups of the marinade into a measuring cup and add the broth and the red wine.
  • Pour the liquid over the beef.
  • Add the parsley, cover and place in the oven.
  • Bake for 2 to 3 hours, or until the beef is tender.
  • For the last hour, wash and score the potatoes.
  • Place potatoes on oven grate around the outside of the casserole.
  • Bake 1 hour, or until fork tender.

1 tablespoon ground allspice
2 teaspoons ground mace
1 teaspoon ground cloves
1 tablespoon ground black pepper
2 tablespoons sliced garlic
10 sprigs fresh thyme
350 ml (1/2 bottle) red wine
8 pounds rolled rib-eye roast, trussed
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
2 large carrots, roughly chopped
2 medium onions, roughly chopped
1 head garlic, peeled and smashed
2 celery stalks, roughly chopped
6 sprigs fresh thyme

Steps:

  • Mix all the marinade ingredients together in a strong plastic bag. Put the roast into the bag and seal tightly. Marinate in the refrigerator for 2 days turning the bag at least 2 times a day.
  • Remove roast from the marinade, and let sit at room temperature for 1 hour before browning.
  • Preheat oven to 275 degrees F.
  • Heat oil in a large dutch oven over high heat. Pat the roast dry of excess marinade. Season the roast with salt and pepper, and sear on all sides until golden brown.
  • Remove the roast to a dish. Heat the oil in the pan and saute the carrots, onions, garlic, celery, and thyme. Add the red wine and any left over marinade to the vegetables, and bring it to a simmer. Scrape up any bits in the bottom of the pot.
  • Place the roast back into the pot. Cover the pot with a heavy lid and bake, half the total cooking time with the lid on, and half without. Allow 20 minutes per pound of meat, or until internal temperature reaches 145 degrees F, about 2 hours.
  • Add water to pot if it looks like its drying out too fast. Remove the roast to a platter, and let rest for 15 minutes before carving. Strain the gravy from the pot and put in a sauceboat.

TENNESSEE SPICED ROUND

This is a traditional recipes from Traveller's Rest, historic home of Judge John Overton, near Nashville, Tennessee. it requires a seventeen day preparation period prior to serving date. Incredibly good!

17-20 lb round of beef
2 cups brown sugar
2 cups salt
1 tsp. black pepper
step 2:
1 1/2 tbsp. nutmeg
1 1/2 tbsp. cinnamon
1 1/2 tbsp. ginger
1 1/2 tbsp. allspice
1 1/2 tbsp. black pepper
1 tbsp. cayenne pepper
step 3:
2 lbs. beef suet
1 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. allspice
1/2 tsp. black peppe
1/2 tsp. cayenne pepper

Steps:

  • 1. Trim fat from round of beef. Don't remove bone. Mix brown sugar with seasonings and rub into meat, coating thoroughly. Cover and refrigerate overnight in large glass, porcelain or enamel container.
  • 2. Step 2: Remove round from refrigerator and allow juices to drain from it back into container. Mix spices and rub firmly into round. Return meat to container and refrigerate.Turn round in spiced marinade once a day for 2 weeks. Keep refrigerated.
  • 3. Step 3: Remove round from marinade. Discard marinade. Grind beef suet with salt and spices. Make deep holes with sharp paring knife in both sides of round and stuff seasoned suet into holes. Tie spiced round in heavy pudding bag or cheesecloth. (Tradition would require an old pillowcase, linen or cotton, no synthetics.) Cover round with water and boil in large covered pot 15 minutes per pound. Cool and refrigerate another day before serving. Thinly slice spiced round horizontally. Keep bone in round as it helps in carving. Serve on nut bread with horseradish sauce and catsup. Note: Keeps in refrigerator for 1 week. Freezes well. Serves 40 Ellen Dixon

SPICED ROAST BEEF

1 tbsp juniper berries
1 tbsp coriander seeds
1 tbsp black peppercorns
1 tbsp allspice berries
2 tbsp olive oil
2kg-3kg (4lb 8oz-6lb 8oz) topside joint of beef - depending on the amount of leftovers you want

Steps:

  • Combine all the spices and ½ tbsp salt together in a pestle and mortar. Give everything a good grind, keeping a little of its coarseness. Rub the oil and then the ground spices all over the beef and massage in well. Cover and chill overnight to marinate.
  • Next day, heat oven to 190C/170C fan/gas 5. Weigh your joint and roast for 10 mins per 450g for rare meat and 15 mins per 450g for medium, plus an extra 20 mins. Cover and rest for 20 mins while you finish the salads, then slice and serve. Alternatively, roast the beef in the morning and serve at room temperature for dinner.

½ (12 fluid ounce) can or bottle dark beer
1 tablespoon dry mustard
1 pinch salt and ground black pepper to taste
3 cloves garlic, cut into slivers
3 whole cloves, or to taste
1 (3 pound) round-cut corned beef roast with spice packet
1 (16 ounce) package carrots, cut into 2-inch pieces
1 (16 ounce) package small red potatoes
1 head green cabbage, cored and cut into wedges
1 tablespoon butter, or to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Pour beer into a roasting pan and add contents of corned beef seasoning packet, dry mustard, salt, and black pepper to the beer. Stir to combine. Use a sharp knife to pierce corned beef all over; insert garlic slivers into holes. Push whole cloves into meat. Lay the corned beef into the roasting pan.
  • Bake in the preheated oven for 1 hour; scatter carrots around corned beef and roast for about 1 1/2 hour more. Distribute red potatoes around the meat and roast until corned beef and vegetables are tender, about 40 minutes more.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cabbage wedges, cover, and steam until tender, about 10 minutes. Transfer to a platter and season with salt and black pepper. Let butter melt over the hot cabbage. Cut visible fat from corned beef and serve with cabbage, carrots, and potatoes.

1 medium onion, thinly sliced
1 cup white vinegar
1/2 cup beef broth
1/2 cup packed brown sugar
1 bay leaf
1 teaspoon ground ginger

1/2 teaspoon pepper
1/8 teaspoon cayenne pepper
1 beef sirloin tip roast or 1 beef bottom round roast (2 pounds)
3/4 cup each chopped dried plums and apricots
1/4 cup golden raisins
1 teaspoon cornstarch
2 tablespoons cold water

Steps:

  • For marinade, combine the onion, vinegar, broth, brown sugar, bay leaf and seasonings in a small saucepan. Cook and stir over medium heat until sugar is dissolved. Cool to room temperature., Pierce roast several times with a meat fork; place in a large resealable plastic bag. Add cooled marinade. Seal bag and turn to coat; refrigerate for 8 hours or overnight., Place meat and marinade in an ungreased 11x7-in. baking dish. Bake, uncovered, at 325° for 1-1/2 hours. Stir in dried fruit and raisins. Bake 45-55 minutes longer or until meat and fruit are tender. Discard bay leaf. Remove roast to a platter; let stand for 10 minutes before slicing. , For gravy, combine cornstarch and water until smooth. Pour pan juices into a saucepan; gradually stir in cornstarch mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with beef.

1 teaspoon cumin seeds
1 teaspoon coriander seeds
1/2 teaspoon whole black peppercorns
3/4 teaspoon salt
1/2 teaspoon ground ginger
1/8 teaspoon cayenne pepper
2 1/2 pounds russet potatoes, peeled, cut into 1-inch chunks
8 medium carrots, peeled, cut diagonally into 2-inch lengths
4 tablespoons extra-virgin olive oil
1 3- to 3 1/4-pound beef eye of round roast
1 garlic clove, thinly sliced
2 tablespoons chopped fresh cilantro

Steps:

  • Preheat oven to 350°F. Place first 3 ingredients in heavy small plastic bag. Using meat mallet or rolling pin, crush spices. Transfer crushed spices to small bowl; mix in salt, ginger and cayenne.
  • Toss potatoes, carrots and 3 tablespoons oil in large bowl. Sprinkle with salt and pepper. Spread vegetables in large roasting pan. Roast 30 minutes.
  • Meanwhile, using tip of knife, make several slits in roast; insert garlic into slits. Brush roast with remaining 1 tablespoon oil. Rub spice mixture over roast.
  • Push vegetables to sides of pan, leaving space in center. Place roast in center of pan. Roast until meat thermometer inserted into center of meat registers 125°F for medium-rare, about 1 hour. Transfer roast to platter. Tent with foil. Increase oven temperature to 450°F. Spread vegetables in pan; continue roasting until vegetables are tender and brown, about 10 minutes. Sprinkle with cilantro.
  • Surround roast with vegetables. Cut roast into thin slices and serve.
