8 cups quick-cooking oats
1-1/2 cups chopped mixed dried fruit
1/2 cup sugar
1/2 cup packed brown sugar
2-1/2 teaspoons ground cinnamon
1 teaspoon salt
1/2 teaspoon ground nutmeg

Steps:

  • In a large bowl, combine all of the ingredients. Store in an airtight container for up to 1 month. , To prepare oatmeal: Contents of mix may settle during storage. When preparing recipe, spoon mix into measuring cup. In a deep microwave-safe bowl, combine 1/2 cup oatmeal mix and 1 cup water. Microwave, uncovered, on high for 1-2 minutes or until bubbly, stirring every 30 seconds. Let stand for 1-2 minutes before serving.

1/2 cup powdered nondairy creamer
1/2 cup confectioners' sugar
1/3 cup packed brown sugar
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon pumpkin pie spice
1/4 teaspoon ground nutmeg
ADDITIONAL INGREDIENTS (for each batch):
2/3 cup quick-cooking oats
1/3 to 1/2 cup boiling water

1/2 cup granulated sugar
1/2 cup brown sugar, packed

1 cup water

Steps:

  • Combine all ingredients for the dry mix and store in an airtight container for up to 1 month.
  • If you like, you can store individual portions in small ziptop plastic baggies, 1/2 cup mix per baggie).
  • To prepare oatmeal to eat, simply measure out 1/2 cup of the dry mix and comine with 1 cup cold water in a deep microwave safe bowl.
