Delicious fresh fruit is hard to come by around Christmas. So this recipe calling for dried and canned fruits is fantastic.

Number Of Ingredients 10

2 packages (8 ounces each) mixed dried fruit
1 can (15 ounces) fruit cocktail, undrained
1 cup raisins
1 cup apple cider or juice
1/2 cup brandy or additional apple cider or juice
4-1/2 teaspoons chopped crystallized ginger
1-1/2 teaspoons ground cardamom
1-1/2 teaspoons ground allspice
2 medium apples, chopped
1 cup fresh or frozen cranberries

Steps:

  • In a 3-qt. baking dish, combine the first eight ingredients. Cover and bake at 350° for 35-40 minutes or until fruit is softened. , Stir in apples and cranberries. Bake, uncovered, for 15-20 minutes or until apples are tender. Serve warm or at room temperature.

2 pkg mixed dried fruit (8 oz) cranberries, cherries, plums ( i use the sunsweet packaged individual), peaches, apricots etc...
1 can(s) 15 oz fruit cocktail (undrained)
1 c raisins ( small amount of water and heat to moisten)
1 c apple cider or juice
1/2 c brandy or apricot brandy or apple cider or juice
4 1/2 tsp ginger- candied, chopped
1 1/2 tsp cardamon, ground
1 1/2 tsp allspice, ground
2 medium apples, chopped
1 c cranberries, frozen or fresh

Steps:

  • 1. In a 3 Qt baking dish, combine the first eight ingredients. Cover and bake 35-40 minutes 350*, fruit will soften.
  • 2. Stir in apples and cranberries, Bake uncovered for 15-20 minutes apples are tender. Serve warm or at room temperature.

LIGHTLY SPICED MIXED STONE FRUIT



Lightly Spiced Mixed Stone Fruit image

Combine tasty stone fruits and a bit of unusual spice for a mixed fruit treat.

12 cups chopped mixed fruit (I used nectarines, cherries, plums, and apricots)
2 ¼ cups sugar
5 ¼ cups water
½ tsp ground mace

Steps:

  • In a large pot, combine sugar, water, and mace. Bring to a boil, stirring until well combined.
  • Reduce heat to a simmer.
  • Drain fruit and add ½ of it to syrup mixture. Continue simmering until fruit is heated through.
  • Spoon fruit into clean pint jars.
  • Fill each jar with the hot syrup leaving ½ inch head space.
  • Repeat with remaining fruit.
  • Remove the bubbles (I use a chop stick but there is an actual tool for this process).
  • Wipe the tops of the jars with a damp paper towel, and cover with two-piece caps. Process in a water bath for 20 minutes.
  • Makes 6 pints with some syrup left over (use it for another batch or to make sorbet or to sweeten iced tea).

200 gram(s) (7oz) plain (all-purpose) flour
1 teaspoon(s) baking powder
1/4 teaspoon(s) salt
200 gram(s) (7oz) unsalted butter, softened
250 gram(s) (9oz) light brown sugar
120 gram(s) (4oz) rolled oats
300 gram(s) (10½oz) apples
4 tablespoon(s) cornflour (cornstarch)
3 teaspoon(s) ground cinnamon
1 teaspoon(s) ground nutmeg
1 teaspoon(s) ground ginger
175 gram(s) (6oz) mixed fruits (or substitute with whatever fruit you like. e.g. apple and cranberries would be awesome too!)

Steps:

  • Preheat the oven to 170℃/325℉/Gas Mark 3, and line a 22 x 31cm (9 x 12½in) tray with baking parchment. Sift the flour, baking powder and salt into a large bowl, add the butter and rub together until the consistency of breadcrumbs, then stir in the sugar and rolled oats. If you prefer, you can mix together the dry ingredients with the butter in a stand mixer with the paddle attachment, then stir in the sugar and oats by hand. After mixing, press half the mixture into the prepared tray, set aside.
  • Peel and core the apples, then cut into thin slices and mix together with the cornflour (cornstarch) and ground spices. Place the spice-coated apple slices in lines on the top of the oat mixture in the base of the tray, then sprinkle over the mixed fruit. Spoon the remaining mix over the apples and mixed fruits and press down gently.
  • Place in the oven and bake for 30-40 minutes or until the mixture is golden brown. Allow to cool completely in the baking tray before cutting into slices to serve.
