Easy Marinated Herring image

Store-bought marinated herring gets a fresh makeover in this easy recipe that replicates the traditional Scandinavian favorite.

1 jar (8-ounce herring)
3 tablespoons white wine vinegar
3 tablespoons granulated sugar
1 teaspoon aquavit (see recipe notes)
6 allspice berries (see recipe notes)
3 juniper berries (see recipe notes)
1/2 medium red onion (sliced paper thin)
2 tablespoons fresh dill (chopped)

Steps:

  • In a glass measure, combine the vinegar and sugar until the sugar is completely dissolved. Add the aquavit, allspice and juniper berries.
  • Drain the jarred herring in a colander and rinse in cold water. Remove the herring pieces, pat dry with paper towels and cut into uniform bite-sized pieces. Place half of the herring in a single layer in a glass bowl. Top with half of the onions and dill, repeat with the remaining ingredients and pour the marinade over the fish.
  • Cover and refrigerate for at least 4 to 6 hours. To serve, drain the excess liquid and discard the berries. Garnish with additional fresh dill if desired.

1 cup distilled white vinegar
1 cup sugar
1 cup water
12 whole cloves, coarsely crushed
2 bay leaves
1 tsp whole black peppercorns
2 12-oz jars wine snack herring fillets such Lasco drained
1 lg red onion thinly sliced
chopped fresh parsley (optional)

Steps:

  • Combine first 6 ingredients in medium saucepan over medium-high heat. Bring to boil, stirring to dissolve sugar. Reduce heat and simmer 5 minutes. Remove marinade from heat; cool completely. Alternate layers of herring and onion slices in medium bowl. Pour marinade over. Cover and refrigerate at least 1 day and up to 1 week. Sprinkle chopped parsley over top if desired and serve.

MATJES HERRING WITH RED ONION AND DILL



Matjes Herring with Red Onion and Dill image

Can be prepared in 45 minutes or less, but requires additional unattended time.

Yield Makes 10 to 12 Servings

Number Of Ingredients 7

10 pickled matjes herring fillets (about 1 1/2 pounds)
2 medium red onions, chopped fine
1 cup finely chopped fresh dill sprigs
1/4 cup red-wine vinegar
freshly ground black pepper to taste
1/2 cup vegetable oil
Accompaniment: boiled small potatoes (preferably new)

Steps:

  • Rinse herring under cold water and pat dry with paper towels. Cut fillets crosswise into 3/4-inch pieces.
  • In a 1-quart glass or ceramic crock or bowl arrange some herring in one layer. Top herring with a layer of some onions and sprinkle with some dill. Layer remaining herring, onions, and dill in same manner.
  • In a small bowl whisk together vinegar, pepper, and salt to taste and add oil in a stream, whisking until emulsified. Pour dressing over herring mixture. Chill herring mixture, covered, stirring occasionally, at least 8 hours and up to 2 days.
  • Serve herring with potatoes.
