BROWN SUGAR-SPICED GRAPEFRUIT

1/4 cup lightly packed light brown muscovado sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
2 large pink grapefruits, halved and segmented

Steps:

  • Mix together the sugar, cinnamon and ginger in a small bowl.
  • Position an oven rack so that it sits 4 inches below the broiler. Preheat the oven to broil.
  • Put the grapefruit cut-side up on a baking sheet. Divide the sugar mixture over the top of each and place under the broiler. Broil until lightly golden brown, about 3 minutes.

Steps:

  • Preheat broiler.
  • Arrange grapefruit halves on broiler pan. Combine sugar and grill seasoning and top grapefruits. Broil until sugar melts and becomes bubbly, about 4 minutes. Serve immediately.

1 grapefruit, cut in half
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ teaspoon coconut sugar, or more to taste

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Cut around the edges where the fruit meets the peel of each grapefruit half to loosen the fruit. Sprinkle cinnamon and nutmeg over each half and top with coconut sugar. Place grapefruit halves on a baking sheet or in a loaf pan.
  • Broil in preheated oven until sugar is browned, about 7 minutes. Allow to cool at least a few minutes.

1 grapefruit
1 tablespoon agave nectar (or to taste) or 1 tablespoon honey (or to taste)
1 dash pumpkin pie spice or 1 dash cinnamon

Steps:

  • Cut your grapefruit in half and place each half in a small bowl.
  • Drizzle agave nectar or honey over each half.
  • Sprinkle with pumpkin pie spice or cinnamon to taste. Eat with a spoon.

HONEY SPICED POACHED GRAPEFRUIT

2 grapefruits, large (ruby red or pink)
1 1/2 cups water
1 cup honey
1 cup sugar
1 grapefruit, zest of, grated
2 -3 inches fresh ginger, peeled and sliced into coins (2 to 3 inches long)
2 cinnamon sticks
2 star anise, whole

Steps:

  • Cut a thin slice off the top and bottom of grapefruits with a small serrated knife. Working from the top of the fruit to the bottom, follow the curve of the fruit to cut away peel and white pith.
  • With a paring knife, slice along one side of a segment, separating it from the thin membrane. Slice down the other side to remove the whole segment. Repeat with remaining segments. Work over a bowl to catch juices. Set aside.
  • In a large saucepan combine water, honey, sugar, grapefruit zest, ginger, cinnamon sticks and star anise.
  • Bring to a boil, stirring to dissolve honey and sugar, then reduce heat and simmer, uncovered, 10 minutes.
  • Add grapefruit segments and juice and cook at a very gentle simmer for 2 to 3 minutes. Remove fruit with slotted spoon and set aside.
  • Bring poaching liquid back to a boil and boil until mixture is reduced to about a cup of syrup.
  • Spoon syrup over grapefruit segments and chill for a least an hour before serving.
