FRESH CRANBERRY SPICED TEA
A lovely clear red, hot beverage for holiday parties, an afternoon break, for dinner or bedtime as it contains no caffeine. I have been making this for decades and keep it in the fridge all winter. One of my most requested recipes!

Steps:
- Place the cranberries and water into a large pot. Bring to a boil and cook just until the berries pop, about 5 minutes. Remove from the heat and let stand at room temperature until cold, several hours.
- Strain out the cranberries and stir the orange juice, pineapple juice, lemon juice and sugar into the liquid. Add the cinnamon stick, whole cloves and allspice berries. Bring to a low boil. It is ready to serve at this point, but it is even better if you allow it to sit overnight.

Steps:
- In a saucepan, combine cranberry juice, orange juice, cinnamon, cloves, and allspice; bring to a boil.
- Reduce heat to medium, and simmer for 5 minutes.
- Remove cinnamon and cloves, and discard.
- Add hot tea to cranberry juice mixture; mix.
- Serve hot or cold, garnished with lemon (store any leftovers in refrigerator).

- In a large pot, combine water and cranberries.
- Bring to a boil, reduce heat, and simmer for 30 minutes.
- Next add the sugar, orange juice, lemon juice, cloves, allspice berries and cinnamon sticks.
- Cover and steep for 1 hour.
- Strain the mixture, pour into a large pitcher and allow to cool to room temperature on counter.
- Once cooled place in refrigerator, until chilled.
- When ready, add the pineapple juice, ginger ale, lemon and orange slices to the cranberry mixture in the pitcher and serve in tall glasses with lots of ice.

SPICED CRANBERRY RUM TEA
Steps:
- In a saucepan submerge the tea bags in the boiling water and remove the pan from the heat. let the tea bags steep for 5 minutes and discard them. To the tea add the sugar, the cranberry juice, the star anise and the zests and simmer the mixture, covered, stirring occasionally, for 10 minutes. Stir in the orange juice and the rum and heat the mixture over moderate heat until it is hot. Discard the zests, divide the tea among heated mugs, and garnish each drink with 1 of the star anise and a lemon slice.

Steps:
- 1. Combine water and cranberries in a large pot. Bring to a boil. Reduce heat and simmer for 45 minutes.
- 2. Stir in freshly squeezed orange and lemon juice. Add remaining ingredients, stir. Cover and allow to steep for 1 hour.
- 3. Strain tea and reheat to serve. Serve hot.
- 4. Garnish with cinnamon sticks and orange slices if desired.
SPICED-TEA CRANBERRY SAUCE
Steps:
- Combine water and spices in a large pot; bring to a boil. Cover, reduce heat, and simmer 10 minutes. Add tea bags and simmer EXACTLY 2 minutes. Remove tea bags and spices with a slotted spoon and add cranberries. Increase heat to medium high and simmer, stirring often, until cranberries soften and split their skins and sauce thickens, about 12 minutes. Remove from heat and let cool to room temp before serving (with thicken as it cools). Or cover and refrigerate up to 4 days.
SPICED CRANBERRY TEA
Yield 10 cups syrup

- Boil cranberries in water until berries pop. Strain berries, reserving juice. To reserved juice, add remaining ingredients and bring to a boil. Remove from heat and cool. Keep syrup refrigerated. When ready to serve, add 1-1/2 cups water to one cup syrup and heat through. Fill a milk bottle almost to the top with a yummy cocoa mix, then layer on mini marshmallows to fill the jar. Secure a square of wax paper over the top with kitchen string...a sweet gift for guests to take home with them.
