I remember these spiced apple rings as a child, with my parents using 1 slice placed on top of a little lettuce as garnish for entrees at their restaurants. They are spicy, sweet and so delicious. These apple rings are great as a colorful addition to your Holiday table. For those of you who are a little aprehensive about using red food dye, see NOTE at end of recipe. 3 firm apples
2 cups pure cranberry juice
1/2 cup sugar, or honey
1/4 cup apple cider vinegar
Juice and grated rind of 1 lemon
1 teaspoon cinnamon
1/2 teaspoon each ginger and allspice
10 drops liquid red food coloring

Steps:

  • 1 Slice apples into 1/4­-inch thick slices, leaving peel intact. Core and set aside. 2 Bring the remainder of ingredients to a bowl in a large skillet over high heat. Add apple slices and bring back up to a boil, cooking apples for 1 minute. 3 Remove pan from heat and let sit for a few minutes before transferring apples to a bowl with a tight-fitting lid 4 Strain liquid into container and make sure all apples are covered with liquid and cover tightly. 5 Allow to sit for at least 3 hours at room temperature before transferring to refrigerator to completely cool. 6 Continue to store apple rings in a covered container in refrigerator until ready to serve.
  • 1 The easiest way to core a sliced apple is to find a plastic, twist top from a soda bottle and firmly press it around the core of each slice.
  • 1 If desired, omit the red food coloring and add 1/2 cup red hot cinnamon candies to the liquid when beginning the recipe. Make sure they are completely melted before adding apples. Heck, throw a handful in the above recipe for a little more spice.

This is enough for a cookie sheet or jellyroll pan. Use ten cups sliced, peeled apples. Drizzle with a confectioners' glaze if you like.

2 teaspoons salt
4 cups all-purpose flour
1 ⅓ cups shortening
2 egg yolks, beaten
½ cup milk
10 apples - peeled, cored and sliced
2 tablespoons all-purpose flour
3 cups white sugar
1 tablespoon ground cinnamon
1 egg white

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 10x15 inch jellyroll pan or cookie sheet.
  • In a large bowl, stir together the salt and 4 cups flour. Cut in the shortening until the mixture resembles coarse crumbs. Use a fork to stir in the egg yolks and milk just until dough comes together. On a lightly floured surface, roll out half of the dough to 1/8 inch thickness or until big enough to cover the bottom of the jellyroll pan with a little hanging over the sides.
  • Arrange the slices of apple to evenly cover the bottom crust. In a small bowl, stir together the 2 tablespoons of flour with the sugar and cinnamon. Sprinkle the sugar mixture over the apple slices. Roll out the remaining dough to cover the apple layer and pinch to seal to the bottom crust. Trim off excess crust and brush with egg white.
  • Bake for 40 to 45 minutes in the preheated oven, until apples are tender and crust is brown. If the crust begins to brown too much before the apples are done, cover with foil and continue baking. Cool before cutting into squares.

8 Granny Smith apples
2 tablespoons white sugar
1 teaspoon lemon juice
¼ cup cinnamon red hot candies

Steps:

  • Peel, core, and slice apples.
  • Place all ingredients in microwave-safe bowl. Microwave on high for 15 minutes, stirring each 5 minutes.
  • Cover with plastic wrap and let cool or serve warm.

1 large baking apple, cored, peeled and thinly sliced (Granny Smith works well)
2 tablespoons butter or 2 tablespoons margarine, melted
1 teaspoon all-purpose flour
1 1/2 tablespoons brown sugar
1/4 teaspoon ground cinnamon
1 tablespoon lemon juice

Steps:

  • Arrange apple slices in a lightly greased 1-quart baking dish.
  • Combine remaining ingredients; pour over apple slices. Bake at 350 degrees for 20 minutes. Serve warm.

Spicy, Tart, and Sweet Oven Dried Apples. I like Granny Smiths but use what firm apples you prefer. I made this with candies ginger just pulse in the grinder along with the cardamom. I like the uneven amounts of spices on each slice. This way those that like it can pick the more spiced ones.

4 granny smith apples, sliced with the pampered chief apple peeler corer slicer then cut in half so you have thin slice
1/4-1/2 teaspoon cardamom seed (I just love cardamon but you can skip or cut it down to 1/4 teaspoon)
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
1/2 fresh nutmeg, ground
5 teaspoons sugar

Steps:

  • Put cardamon in a coffee grinder (Used for spices not coffee. Grind till fine add rest of the sugar and spices give a couple of whirls to mix into a fine powder).
  • Lay parchment paper on 2 cookie sheet pans.
  • In a storage bag add spices and apples toss gently to coat, shaking excess spices off place on parchment in a single layer. You can sprinkle a little extra sugar on the slices this is optional.
  • Dry in a 250 degree oven 1 to 3 hours depending on how juicy the apples are. Turning after 1 hour.
  • They come out crisp,sweet and tart.
  • Store in an air tight container if for some reason there is any left over.

1 teaspoon salt
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1 boneless rolled pork loin roast (4 to 5 pounds)
SPICED APPLES:
1/4 cup honey
1/2 cup water
1 tablespoon lemon juice
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
2 medium apples, peeled and sliced

Steps:

  • Combine salt, ginger, nutmeg and cinnamon; rub over roast. Place roast, fat side up, on a rack in a shallow roasting pan. Insert a thermometer. Bake, uncovered, at 325° for 2-1/2 hours or until thermometer registers 160°. Cover and let stand 15 minutes before slicing. , In a medium skillet, combine the first six spiced apples ingredients; bring to a boil. Reduce heat and simmer, uncovered, until slightly thickened. Add apples; simmer, uncovered, until apples are just tender, stirring gently. Serve with sliced pork roast.
