1 can (14-1/2 ounces) whole tomatoes, drained
1/4 cup chopped red onion
1/4 cup chopped onion
1 jalapeno pepper, seeded
1 tablespoon cider vinegar
1 tablespoon minced fresh cilantro
1 garlic clove, peeled
1 teaspoon ground cumin
1/4 teaspoon salt

Steps:

  • In a food processor, combine all ingredients; cover and process until chunky. Transfer to a small bowl.

1/2 cup salsa
2 tablespoons Miracle Whip
1/2 teaspoon chili powder
8 (6 inch) flour tortillas
3/4 lb cooked boneless skinless chicken breast half, sliced (about 3 small)
1 cup four-cheese Mexican blend cheese, shredded

Steps:

  • Combine salsa, dressing and chili powder; spread evenly onto bottom halves of tortillas.
  • Top with chicken and cheese.
  • Fold tortillas in half to enclose filling.
  • Cook in skillet sprayed with cooking spray on medium heat 4 to 5 minutes on each side or until both sides are golden brown and cheese is melted.
  • Cut each quesadilla into 3 wedges to serve.
  • Makes 4 servings, 6 wedges each.

I love fresh cilantro, so I created this salsa recipe and it has been a big hit. This recipe was also published in the Taste of Home Holiday & Celebrations Cookbook 2008. Enjoy!

4 can(s) petite diced tomatoes, 14 1/2 ounces each
2 medium onions, chopped
1/2 c fresh cilantro, minced
2 jalapeno peppers, seeded and minced
2 Tbsp sugar
1 tsp salt

Steps:

  • 1. In a large bowl, combine tomatoes, onions, cilantro, peppers, sugar and salt. Serve immediately or cover and refrigerate until ready to serve.
  • 2. Serve with tortilla chips. NOTE: Disposable gloves are recommended when cutting hot peppers. Avoid touching your face.
