6 cups fresh baby spinach
1 head radicchio, torn
2 cups fresh raspberries
1/2 cup raisins
1/4 cup pine nuts, toasted
1/4 cup thinly sliced red onion
1/4 cup minced fresh mint
3 tablespoons lime juice
2 tablespoons olive oil
2 teaspoons honey
1-1/2 to 3 teaspoons chopped chipotle pepper in adobo sauce
1/4 teaspoon salt
1/2 cup crumbled feta cheese

Steps:

  • In a large salad bowl, combine the first 7 ingredients. In a small saucepan, combine the lime juice, oil, honey, chipotle pepper and salt. Cook and stir until blended and heated through. Immediately pour over salad; toss to coat. Sprinkle with cheese.

1 pint fresh strawberries, halved
1/2 cup slivered almonds, toasted
DRESSING:
1/4 cup vegetable oil
2 tablespoons sugar
2 tablespoons cider vinegar
1 tablespoon chopped onion
1 teaspoon poppy seeds
1 teaspoon sesame seeds
1/4 teaspoon paprika
1/8 teaspoon Worcestershire sauce

Steps:

  • In a large bowl, combine the spinach, strawberries and almonds. Place dressing ingredients in a blender; cover and process until combined. Pour over salad and toss to coat. Serve immediately.

4 slices bacon, fried and crumbled
1 (4 ounce) bag candied walnuts or 1 (4 ounce) bag pecans
1 red pepper, diced
1/3 cup dried cranberries
1 (11 ounce) can mandarin oranges, drained
1 (4 ounce) container of crumbled blue cheese
1/3 cup raspberry-walnut vinaigrette (or to taste)

Steps:
