HOLIDAY BEEF BOURGUIGNON

When we married four decades ago, I found this bourguignon recipe in a French cookbook. My husband and I still serve it for very special occasions. -Lyn Robitaille, East Hartland, Connecticut

2/3 cup all-purpose flour
1-1/2 teaspoons salt, divided
1 boneless beef chuck roast (about 4 pounds), cut into 1-inch cubes
4 tablespoons olive oil, divided
2 garlic cloves, minced
2-1/2 cups Burgundy wine or beef broth
3 cups beef broth
1/4 cup minced fresh parsley or 4 teaspoons dried parsley flakes
2 bay leaves
1 package (14.4 ounces) frozen pearl onions
3 bacon strips, chopped
8 fresh thyme sprigs
2 tablespoons tomato paste
1/2 teaspoon pepper
3 tablespoons butter
1 pound medium fresh mushrooms, stems removed
Hot cooked egg noodles

Steps:

  • Preheat oven to 325°. In a shallow bowl, mix flour and 1 teaspoon salt. Add beef, a few pieces at a time, and toss to coat; shake off excess., In an ovenproof Dutch oven, heat 2 tablespoons oil over medium heat. Brown beef in batches, adding additional oil as necessary. Remove with a slotted spoon., Add garlic; cook 1 minute longer. Add wine, stirring to loosen browned bits from pan. Stir in broth, parsley, bay leaves and remaining salt. Return beef to pan. Bring to a boil. Bake, covered, 2 hours., Meanwhile, in a large skillet, cook onions and bacon over medium-high heat 10-12 minutes or until bacon is crisp, stirring occasionally., Remove stew from oven. Using a slotted spoon, transfer onion mixture to stew; stir in thyme, tomato paste and pepper. Return to oven; bake, covered, 30-45 minutes longer or until beef and onions are tender., In a large skillet, heat butter over medium-high heat. Add mushrooms; cook and stir 6-8 minutes or until tender., Remove bay leaves and thyme sprigs from stew. Stir in mushrooms. Serve stew with egg noodles.

4 bacon strips, chopped
1-1/2 pounds beef stew meat
1 large onion, sliced
1/2 cup sliced fresh carrot
2 tablespoons all-purpose flour
1-1/4 cups dry red wine
1 cup beef broth
2 bay leaves
1 teaspoon tomato paste
1/2 teaspoon dried thyme
1/8 teaspoon pepper
12 fresh pearl onions, trimmed
1/2 pound small fresh mushrooms, halved
1 ounce bittersweet chocolate
Mashed potatoes

Steps:

  • In a Dutch oven, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, reserving drippings. Brown stew meat in drippings in batches. Remove and keep warm., In the same pan, saute onion and carrot until crisp-tender. Stir in flour until blended. Gradually add wine and broth; stir in bay leaves, tomato paste, thyme, pepper, bacon and beef. Bring to a boil. Reduce heat; cover and simmer for 2 hours., In a large saucepan, bring 4 cups water to a boil. Add pearl onions; boil for 3 minutes. Drain and rinse in cold water; peel and set aside. Stir into stew; cook 30 minutes longer., Add mushrooms; cook 30-40 minutes or until beef is tender. Skim fat and discard bay leaves. Stir in chocolate until melted. Serve with mashed potatoes.

1 beef sirloin tip roast (2 pounds), cut into 1-1/2-inch cubes and patted dry
1/4 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon canola oil
2 medium onions, chopped
2 medium carrots, coarsely chopped
1/2 pound medium fresh mushrooms, quartered
4 garlic cloves, minced
1 tablespoon tomato paste
2 cups dry red wine
1 cup beef stock
2 bay leaves
1/2 teaspoon dried thyme
8 ounces uncooked egg noodles
Minced fresh parsley

Steps:

  • Preheat oven to 325°. In a Dutch oven, cook bacon over medium-low heat until crisp, stirring occasionally. Remove with a slotted spoon, reserving drippings; drain on paper towels., In batches, brown beef in drippings over medium-high heat; remove from pan. Toss with flour, salt and pepper., In same pan, heat 1 tablespoon oil over medium heat; saute onions, carrots and mushrooms until onions are tender, 4-5 minutes. Add garlic and tomato paste; cook and stir 1 minute. Add wine and stock, stirring to loosen browned bits from pan. Add herbs, bacon and beef; bring to a boil., Transfer to oven; bake, covered, until meat is tender, 2 to 2-1/4 hours. Remove bay leaves., To serve, cook noodles according to package directions; drain. Serve stew with noodles; sprinkle with parsley. Freeze option: Freeze cooled stew in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little stock or broth if necessary.

This is the speedy, easy version of boeuf Bourguignon, the classic French slow-cooked beef dish. Delicious over cooked egg noodles or mashed potatoes. Leftovers taste great as well - just reheat on the stove.

2 pounds boneless beef chuck roast, trimmed and cut into 1-inch cubes
2 teaspoons kosher salt
1 teaspoon ground black pepper
4 slices thick-cut hickory smoked bacon, cut into small cubes
1 medium white onion, cut into 1/2-inch dice
2 cloves garlic, minced
1 (8 ounce) package sliced baby portobello mushrooms
2 tablespoons tomato paste
2 cups reduced-sodium beef broth
1 cup dry red wine
1 pound carrots, cut diagonally into 1/2-inch slices
2 tablespoons all-purpose flour
½ cup chopped fresh flat-leaf parsley

Steps:

  • Toss together beef pieces, salt, and pepper in a medium bowl; set aside.
  • Cook bacon in a Dutch oven over medium-high heat until fat is rendered and bacon is beginning to brown, 7 to 8 minutes. Add seasoned beef to bacon and cook, stirring often, until well browned, 7 to 8 minutes. Add onion and cook, stirring often, until beginning to soften, 2 to 3 minutes. Add garlic and cook, stirring constantly, for 1 minute.
  • Add mushrooms and tomato paste to mixture and cook, stirring occasionally, for 4 minutes. Stir in broth, wine, and carrots and bring mixture to a boil. Reduce heat to low. Cover and cook for 40 to 45 minutes or until beef is fork-tender.
  • Uncover and remove 1/2 cup broth to a 1-cup glass measuring cup. Whisk in flour until completely combined and smooth. Stir flour mixture back into beef mixture and stir constantly until thickened slightly, 4 to 5 minutes. Sprinkle with chopped parsley and serve immediately.
