1 tablespoon olive oil
1 clove garlic, minced
¼ cup chopped pine nuts
1 pound fresh green beans, trimmed and snapped
salt and pepper to taste

Steps:

  • Heat the olive oil in a skillet over medium heat. Stir in the garlic and pine nuts, and saute until lightly browned.
  • Place the green beans in a medium saucepan with enough water to cover, and bring to a boil. Season with salt and pepper. Cook 5 minutes, or until tender. Drain, and toss with the garlic and pine nuts to serve.

I learned this seasoning trick from a restaurant chef. It really improves the flavor but keeps the green beans healthier than adding a lot of butter to them. I have never liked green beans but I love them prepared this way. My kids do too!

3/4-1 lb fresh green beans
1 teaspoon extra virgin olive oil
1 teaspoon brown sugar
pepper, to taste

Steps:

  • Wash and snap the green beans. Place in a steamer basket and steam for about 18 minutes or until desired tenderness.
  • Place beans in serving bowl and drizzle with olive oil, stirring to coat. Sprinkle half the brown sugar on, toss to coat. Sprinkle on remaining brown sugar and pepper, tossing again.

1/4 teaspoon pepper

Steps:

Marilyn's Special Green Beans image

My dear friend Marilyn shared this recipe with me. It is a holiday favorite at her house. I did find two recipes on Zaar that were similar but omitted the mayo which is a yummy "must have ingredient" in this recipe. This recipe doubles very well.

1/4 cup sugar
1/4 cup white vinegar
1/2 cup mayonnaise (not salad dressing)
2 tablespoons onions (finely chopped)
2 (16 ounce) cans green beans, drained (French Cut)
1/2 lb bacon, fried crisp, drained, crumbled (or diced prior to frying)

Steps:

  • Combine 1st 4 ingredients in a medium mixing bowl.
  • Add drained green beans and mix well.
  • Add crumbled bacon, mix.
  • Pour into a 2 quart casserole.
  • Bake in a 350 degrees oven for about 30 minutes, until heated thru, or microwave about 10 minutes until hot.
